Banana and Granola Pancakes

I think these are my new favorite pancakes.  They are light, fluffy, slightly sweet, crunchy.  Thanks Jenn for the idea of these!  And if I ever find myself in Seattle – we are definitely getting together! :D

I kinda just made these up with what I had on hand.  I had buttermilk, so I decided to make banana, granola buttermilk pancakes.  Each pancake is 3 points, unless you have three like me and then they are 10 points – totally filling and totally worth the points!

Banana Granola Buttermilk Pancakes

  • 1 egg
  • 1 cup flour
  • 1 cup buttermilk
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1-2 bananas, sliced
  • 1/2 cup store bought granola

Mix everything together except for the banana and granola.  If possible let the batter sit for 15 – 30 minutes – the baking powder has time to do its magic and you’ll have fluffy pancakes every time.

I used a 1/4 cup measuring cup and got 8 pancakes with this recipe.  See how bubbly the batter is?

Once the batter had set up on one side, I pressed in the bananas and granola – the granola stayed nice and crunchy. :D

At work I added 1/4 cup of sugar free syrup, so breakfast comes in at 11 points.

The weather was absolutely gorgeous yesterday.  When I left for my bike ride it was 78 degrees and sunny.  I decided to do my 8 mile trail ride in reverse – holy shizz was that hard!  A lot more hills and the head wind was amazing – at times it was so windy I could barely hear by iPod!  It took me 55 minutes to do 8 miles.

I was hangry when I got back – I ended up having a chicken taco salad – 4 ounces of chicken, 1/4 cup corn, 1/4 cup black beans, light ranch and lots of hot sauce – lunch comes in at 10 points.

I ended up working almost an hour of overtime yesterday, and without a meal plan and short on time, I stopped at a local beef stand to pick up dinner.  You know Tony and I hate onions, but we can do onion rings! :D   I had a grilled chicken pita, added some BBW spicy hot sauce, and fries and a couple rings – dinner comes in at 14 points.

Who’s watching MasterChef?  I really hope Jennifer wins!  It’s been BizTV lately – right now on my DVR I have Chopped, MasterChef, Hell’s Kitchen and America’s Test Kitchen.  I know Tony can’t wait for football season to begin! :D

  • 35 points
  • 55 minute bike ride – 8 miles
  • average blood sugar 112 :D (I remembered my insulin!)

I am off to do some exercise on Demand – maybe some yoga?

    You eat onion rings??!??!?!?! Dave can’t eat onions because they do something funky to his stomach but every now and then he’ll suffer the consequences so he can have onion rings. I’m beginning to think they are breaded with some secret ingredient that gets onion haters to eat them LOL!

    OMG those pancakes look awesome…I will have to ignore them while I am detoxing!

    I don’t know about hot bananas – but they sure do look good. And you are so right about allowing the batter standing for a few minutes. So much fluffier.

    I want onion rings. Darn those look nummy.

    Granola and pancakes looks so good. I actually have a bag of granola that I am not sure what to do with. Totally going to use it for pancakes. Like you I am not sure if I can have just one.

    oh…I think I have my entire family hooked on Masterchef! LOVE it! I am hoping for Jennifer to win too….Suzy bakes me because she is kind of nasty in an underhanded way…wonder if those ppl who hug her are aware of the things she says on her camera interviews? And Christian! Yikes….but he can cook…I will give him that much. Adrian…he’s ok…I’d be ok with him winning. I am really hoping Christian or Suzy are packing their bags next week!!

    Those pancakes look absolutely perfect! The granola is such a fun touch. My husband is the same way with onions- the only form he’ll really eat them in is a ring (unless they’re chopped up super tiny in a dish and you can’t find them!)

    That bike ride looks totally BRUTAL!! I have a 10 mile ride to work. It takes me 45 mins to get to work, and 55 mins to get home. Bigger hills on the way home – so usually I only ride to work! (I make the hubby ride home.)

    I want granola pancakes! :) I wonder if the points would change if you used greek yogurt instead of buttermilk – it would be 1/3 c milk & 2/3 c plain greek as a conversion.

      I just put in 1/3 cup skim milk and 2/3 cup greek yogurt, and they still come out to the same points – use the buttermilk! :D

    This pancake recipe looks delicious! I’m always looking for new pancake recipes and this one may take the cake (no half-pun intended). I don’t know what points mean but I’m guessing it has something to do with these being healthy? maybe? hehe. Lovely post.

    I can’t find any buttermilk in the UK is there anything else I could use instead?
