Easter in October!

They had ham on sale, so I decided to go for it.  Again, I attempted scalloped potatoes, the bane of my existence!  Since Hannah was home I had her put the ham in at 1:00 and then put the scalloped potatoes in at 3:30.   Why I keep trying to make scalloped potatoes, I’ll never know! Well, just before 5:00, Hannah calls me and says that...

Stir fry and sprints

I have exactly 7 minutes left on my lunch break!  Type fast, type fast! Lunch 3 ounces raw shrimp 1 cup broccoli slaw 1 cup broccoli/cabbage/carrot mix 1 cup bean sprouts 1/2 package ramen noodles (just noodles, not packet) I had it with Pomegranate green tea – yum! Today’s workout I did sprints on the treadmill (while watching Rachael Ray make blue cheese stuffed meatballs!):...

Lunch and dinner and in between

Hannah and I went out and about so ended up having a late lunch – more homemade pizza!  See I told you I like eating the same things over and over! I decided not to make zucchini bread today, with temps in the 80’s, I didn’t want to have the oven on in the afternoon.  But, I decided to make a new soup!  My inspiration...

It’s raining leaves

On my short walk with Ed this morning, at one point, this one tree was dropping all its leaves at once!  I tried to capture it, but this is as close as I got: I saw about three boats go by – with temps around 80 today, I imagine the river will get pretty busy today. Hannah ran to the store this morning for eggs...

Summer weather, summer bbq!

I saw on www.zestycook.com his method for making ribs, and although I used my own rub and K.C. Masterpiece bbq sauce (sorry Zesty!), the results were great.  Please go to his site and check it out – slow and steady wins the race! BBQ rub before going in 250 degree oven for 90 minutes: Then after 90 minutes, I applied the bbq sauce and continued...

It was an emergency

So today I have been in cleaning mode, just running around vacuuming, laundry, etc.  My breakfast was pretty low carb, about 18, so I only took three units of insulin. But all of a sudden, as I am putting laundry in the dryer, my vision starts to fade to black and I start sweating.  Sure sign of low blood sugar!  I came upstairs, took a test,...

Summer day

It is SO NICE outside today!  They are saying that tomorrow for the Chicago marathon that temperatures could get into the mid 80s!  Not ideal marathon running temps (like I would know)! I just remember a couple years ago my sister ran the marathon.  She had her cell phone so she could call and let us know where she was.  We had missed her at...

Guest Post! My daughter Hannah!

I love cake. Scratch that. I love food. But lately (meaning all the time) I’ve been craving chocolate.  The craving had originated when my life would be changed forever…I would eat my first (and not last) piece of Portillo’s Chocolate Cake. It was my neighbor’s birthday and they just so happened to offer me a piece since they “didn’t want leftovers.” I like to think of it...

I ate the whole thing!

Yes, I am a creature of habit!  I don’t know what it is, but I don’t really mind eating the same things over and over while reading 30+ food blogs every day, and subscribing to 5 food magazines!  So tonight was again PIZZA PARTY FRIDAY!  I ended up making individual pizzas again.  Husband had margherita pizza (sliced tomatoes and basil).  Hannah had fresh garic, chopped...
