Nutter Butter Granola
I’ve been on a granola kick lately and I am not mad about it! If you have a peanut butter lover in your family or friend group, they will love this Nutter Butter Granola. There is no low Weight Watchers point granola out there that tastes good, but 1/4 cup of this is 5 points and 149 calories.

If you have a peanut butter lover in your life, they will love this nutter butter granola!
Ingredients
- 3 cups oats (we used quick oats)
- 16 nutter butter cookies, broken in half
- 1 cup honey roasted peanuts
- 1 cup peanut butter chips (we used Reese's)
- 2 tablespoons brown sugar
- 6 tablespoons coconut oil
- 2/3 cup maple syrup
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
Instructions
- Preheat the oven to 325. Line a large baking sheet with parchment paper.
- Combine the dry ingredients in a large bowl. Stir well so everything is evenly distributed.
- In a small saucepan over medium-low heat, melt the coconut oil, syrup, salt and brown sugar together. Stir continuously until the brown sugar is fully dissolved and the mixture looks glossy. Remove from heat and stir in vanilla.
- Pour the warm syrup over the dry ingredients. Using a sturdy spatula, mix very thoroughly until all the oats are evenly coated and fully saturated. Take your time here as this helps create those crunchy clusters.
- Let the granola sit for 10 minutes.
- Transfer the granola mixture to a prepared baking sheet. Spread it out evenly, and then press it down firmly into a thin, compact layer.
- Bake for 20 minutes. Rotate the pan and cook and additional 5 minutes, or until lightly golden around the edges.
- Remove from the oven and allow the granola to cool completely on the pan without stirring. This is crucial, do not break it up while warm if you want big clusters.
- Once fully cooled, break into your desired chunk size and store in an airtight container.
Notes
1/4 cup is 5 WW points, but I typically add 1/8 cup to my yogurt bowls. If you count calories or macros, each 1/4 cup is 149 calories, 7 fat, 16 carbs, 2 fiber and 4 protein.

Is this crispy or chewy?
This granola is the best of both worlds. Typically I love an all crunchy granola, but because of the thickness of the cookies, the outer portion of the granola is crunchy, and the middle is chewy, yet it still holds together. Unbeknownst to me, my strength trainer and strength partner are both peanut butter fanatics and both gave this granola two giant thumbs up. Winning!
The key to getting an even layer is using the back of a measuring cup or wetting your hands and pressing the granola down before it gets in the oven. Also, most granola recipes will tell you to mix every ten minutes, but I bake mine in a sheet so that I get granola clusters.
