Cheesecake Jars

These cheesecake jars are almost no bake.  The fruit filling is my very berry sauce (recipe below) that can be made with any combination of fresh or frozen fruit.  Blueberries are my favorite, so we used blueberries in this recipe.  While these come in at 10 Weight Watchers points, each one is only 244 calories, 15 fat, 24 carbs, 2 fiber and 6 protein.

Ingredients

  • graham cracker crumbs (you can also grind up graham crackers)
  • whipped cream cheese
  • nonfat greek yogurt
  • fruit of choice
  • powdered sugar
  • cornstarch
  • whipped cream 
  • sprinkles

What is whipped cream cheese?

Whipped cream cheese is regular cream cheese that’s been aerated to create a lighter, fluffier texture. Because it’s whipped with air, it spreads more easily and typically has fewer calories per tablespoon, though it’s less dense, so you might use more without realizing it. Regular cream cheese is thicker and richer, making it ideal for baking, dips, or recipes that rely on structure. Whipped cream cheese is great for spreading on bagels or adding to light recipes where texture matters more than firmness.

These cheesecake jars are the perfect sweet treat for your summer BBQ's.

Ingredients

  • 1 tablespoon butter, melted
  • 1/2 cup graham cracker crumbs
  • 1/2 cup nonfat Greek yogurt
  • 4 ounces whipped cream cheese
  • 2 tablespoons powdered sugar
  • 1 cup fruit of choice (we used blueberries)
  • 1/4 cup water
  • 1 teaspoon cornstarch
  • 2 packets Stevia (optional - or other non-calorie sweetener)
  • 8 tablespoons whipped cream
  • 4 teaspoons sprinkles (optional)

Instructions

Make the Very Berry Sauce:
In a small saucepan, combine 1 cup blueberries (or fruit of choice), 1/4 cup water, 1 teaspoon cornstarch, and 2 packets of Stevia (or your preferred sweetener). Cook over medium heat for about 5 minutes, stirring often, until the mixture thickens and the fruit begins to break down. Remove from heat and let cool completely.

Prepare the Graham Cracker Crust:
In a small bowl, mix 1 tablespoon melted butter with 1/2 cup graham cracker crumbs until evenly combined. Divide the mixture evenly among 4 small jars or containers, pressing lightly into the bottom.

Make the Cheesecake Filling:
In a medium bowl, whisk together 1/2 cup nonfat Greek yogurt, 4 ounces whipped cream cheese, and 2 tablespoons powdered sugar until smooth and fluffy. Divide the filling evenly among the jars on top of the graham cracker layer.

Assemble the Jars:
Top each jar with a spoonful of the cooled berry sauce. Finish with 2 tablespoons of whipped cream and 1 teaspoon of sprinkles per jar, if desired.

Chill & Serve:
Cover and refrigerate for at least 1 hour before serving. These jars will keep in the fridge for up to 5 days. Perfect for grab-and-go treats or your next summer gathering!

Notes

These blueberry cheesecake jars are the ultimate make-ahead treat.  Perfect for meal prep when you want something sweet on hand, easy to pack for your next BBQ, and cute enough to give as a thoughtful hostess gift. Layered with creamy cheesecake filling, fresh blueberries, and a graham cracker crumble, they store beautifully in the fridge for days and are portioned just right. Plus, who doesn’t love dessert in a jar? Just screw on the lid and go!  One caveat: add the whipped cream right before eating and or/serving.
