Today was a steady busy day at work, not crazy busy, so it was a great way to start the week! I decided to make an egg white sammie for breakfast. I haven’t gotten liquid egg whites in the longest time, because they were $3.99 for a small carton! My local Target recently added onto their grocery department, and while it isn’t a full fledged Super Target, their egg whites were only $2.39! Score! Breakfast was 1/2 cup egg whites, 1.5 ounce seven grain bread, 1/2 ounce cheddar cheese, shredded zucchini, 1 piece of cooked bacon and 1/2 Fuji apple.
For lunch I decided to make zucchini boats. One zucchini that I nuked in the microwave, then I browned 3 ounces of ground sirloin and mixed it with my homemade pasta sauce, and added some crushed red pepper for an extra kick. I added mozzarella cheese and then heated up some Yaki-Soba noodles on the side – love that 5.5 ounces of this pasta is only 150 calories!
So I saw on www.foododelmundo.com that they made Salisbury Steak Burgers with a “Belmont” sauce. I thought the sauce reminded me of a sauce that Tony gets at a local bar that has the best burgers – a sherry mushroom sauce. Sadly, the sauce didn’t turn out for me, it just tasted like ketchup, but I loved how flavorful the burger was! I made some changes, as we don’t like onions or raw peppers in dishes!
Salisbury Steak Burger
- 2 pounds ground sirloin
- chopped parsley
- 1 tsp. salt
- 1/2 tsp. Tabasco 😀
- ground pepper
This made six burgers – mine weighed in at 5 ounces. I had 1 ounce of pepper jack cheese on mine, with LOTS of mustard, and then cucumbers with a tablespoon of Annie’s goddess dressing on the side. These were some juicy burgers!
When I got home, I picked up the mail and totally forgot about these coupons that K from K’s Good Eats was going to give me! 😀

I tried popchips a few weeks ago. They reminded me of a tortilla chip (I just got sea salt flavor) and a rice cake combined!

I love getting good deals myself. Sometimes I get the best grocery deals at Target and Walmart. Love those stores, cheaper than most major grocery stores.

Yep. I just use a grater, but you have to squeeze out the liquid before adding to the eggs, otherwise the eggs are too runny.
