I’ve tried this recipe with other varieties, but Fuji wins every time in my kitchen!
Simple Method—Mix & Bake!
I know many recipes have you separate the wet and dry ingredients, but I like to keep things easy. For this cake, there’s no need to dirty extra bowls. Just toss everything into one large bowl, and mix gently until combined. The key is to not overmix—just stir enough so the ingredients come together.
Simple Apple Walnut Cake
When the first day of fall hits (that's today!) I can't wait to make fall recipes and this simple apple walnut cake is a perfect way to kick off the season.
Ingredients
- 2 cups flour
- 1/4 cup sugar
- 1/2 cup monk fruit sweetener (or your favorite no-calorie sweetener)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 eggs
- 2 tablespoons avocado oil
- 1 cup unsweetened almond milk
- 3 Fuji apples, diced (about 2 cups)
- 1/2 cup walnuts, chopped
- 1 tablespoon powdered sugar
Instructions
- Preheat your oven to 350°F.
- Grease a 9-inch cake pan or line it with parchment paper.
- In a large mixing bowl, add all of the ingredients—yes, all at once! Mix until everything is just combined. Don’t worry if the batter looks a little lumpy; that’s the secret to keeping the cake tender and light.
- Pour the batter into the prepared pan and bake for about 30 minutes, or until a toothpick inserted into the center comes out clean. Once cooled, sprinkle with powdered sugar.
