Okay, I like romantic movies, but Nights in Rodanthe is just too syrupy sweet even for my taste! Not to say this isn’t a good $1 movie rental from the grocery store (that you would have to be a girls night in kind of night!) but definitely not worth the cost of a movie theater ticket.
Although I did see a preview for a movie called the Curious Case of Benjamin Button with Brad Pitt, who is born old and gets younger as he ages. Seems quirky, but I think it could be interesting – it opens in November I think.
That being said, had fun catching up with my Mom and lunch was good. I had looked at the menu before we left and had decided to get a grilled chicken salad. Until the soup special today was BEER CHEESE SOUP! I can never turn that down! I evened it out by getting a side salad with dressing on the side.
With my side salad – only used about a tablespoon of the dressing. I am guessing my whole lunch was around 500 calories.

Really? My mom enjoyed Nights at Rondanthe, but she had also read the book and that probably amped her appreciation for the movie. I didn’t read the book, so thanks for the heads up!

Here is a recipe I have used. The original recipe calls for the addition of chopped onion (yuk!) so you can add that in the saute of the celery and carrots if you like:
2 tablespoons butter
8 ounces sharp cheddar cheese, shredded
3 cups diced celeray
12 ounces beer (I prefer a pale ale, but anything would do)
1 teaspoon garlic salt
1 cup grated carrots
salt and pepper to taste
6 tablespoons flour
6 cups chicken stock
Saute celery (onions) and carrots in butter.
Add salt and pepper
Blend in flour
Add chicken stock and cheese
Heat gently until cheese melts
Add beer
Adjust spices to taste.
Makes about eight 1 cup servings for about 300 calories, 20 fat, 22 carbs, 1.5 fiber and 15 protein.
