Breakfast was a non-Biz one! I give you apple ice cream!
Once I took that pic, I just mixed it all together – I loved the peanut butter chips – they melted pretty quickly!
Breakfast comes in at 297 calories, 7.8 fat, 11 protein, 45 carbs and 4.6 fiber.
I woke up kind of early this morning, so I decided to make a batch of red quinoa – the box said it cooks in 15 minutes, but I used my rice maker and it took about 30 minutes – but it came out perfect!
I also had 1/2 cooked spaghetti squash in my fridge, and then found turkey meatballs in the freezer to make an Italian mess for lunch!
Lunch comes in at 466 calories, 15 fat, 19 protein and 49 carbs and 9.2 fiber.
Since my game is canceled I am not sure what is on tap for dinner – we still have Cornish hens that need to be cooked – maybe in the oven instead of the grill?
Lunch break is over – come back tonight to see what’s for dinner! 😀
I bought some of that red quinoa also, but I think quinoa is quinoa, no matter what color it is!
Thank you for posting the nutritional info of your meals. Really helpful as I’m more concerned about that type of info these days. I like the oatmeal ice cream recipe, and the calories are really reasonable even with all those toppings..

Our weather here was really bad last night. In fact, it woke me up periodically throughout the evening. Today the weather wasn’t so bad, other than the 90 DEGREE WEATHER AND 100 PERCENT HUMIDTY!!! Ugh, Ohio in the summer, not so pretty.
I must try some of that spaghetti squash–and if you make your own marinara and salsa with fresh tomatoes, mmmmm.

I love the apple ice cream, and now I know what to do with the abundance of greek yogurt I have on hand! Love your site, especially since my father is a diabetic, and it gives me great ideas when he comes for dinner 🙂
