Me of all people didn’t realize that tonights season finale was THREE HOURS LONG! So in order to bank some time on the dvr, I ended up taking Ed for a 30 minute walk and then mopped the kitchen floor – then I couldn’t stand it anymore! So in between fast forwarding the show I am squeezing in this post!
I had a ton of this dry rub leftover from my Chicago-Style BBQ ribs and this morning before leaving for work I rubbed this rub on our pork tenderloin.
I didn’t calculate my calories for dinner because I had 700 to spend, and know I didn’t come close. My side dish turned out really good, but I learned a few things! First, don’t leave the skins on when you try to use a potato ricer, and don’t try to put cooked broccoli in a potato ricer either because that didn’t work too well either! But it still came together.
I don’t have a steamer, so as I cooked the potatoes in water on the bottom, I ended up putting the broccoli to steam in a colinder and put a lid on it while the potatoes cooked.
Cheesy Broccoli-Potato Mash (adapted from EatingWell.com)
- 1 pound of potatoes (I used red potatoes because that’s that I had on hand)
- 5 ounces of broccoli
- 3/4 cup of fontina cheese (I used smoked fontina)
- 1/4 to 1/2 cup of buttermilk
- 1/2 tsp. salt
- cracked pepper to taste
Cook potatoes in water and steam broccoli. I would suggest using a potato masher instead of a potato ricer – but mix potato and broccoli together and add cheese, buttermilk, salt and pepper. Each 2/3 cup serving comes in at 135 calories, 4 grams of fat, 17 grams of carbs, 7 grams of protein and 2 grams of carbs.

Helen is scary skinny -she is only 1 lb away from being “underweight” on the BMI scale. Horrible.
