Last I left you on our Beef tour, we had just finished cutting up our beef when we were asked to take one portion of our cut up meat and make any dish we want. Cook in the Cattleman’s Association Culinary Kitchen? Um, yes please! I didn’t hesitate! It was kind of like I was on Chopped, but I had an awesome pantry and fridge to work with.
I decided to make a salt, rosemary and pepper crusted filet mignon with a crispy potato summer hash and blue cheese mushrooms. I immediately took 4 baby potatoes in the microwave and one of the girls looked at me like I was crazy, but it was a quick way to cook the potatoes so I could pan fry them.
So delicious! My friend Karli recreated the dish when she got home – here is the rest of the recipe for you Karli! She didn’t realize I used butter. It was so fun to use their test kitchens and to get to know the other bloggers better while cooking in the kitchen. Um, taste testing all the other dishes didn’t suck either!

My eats yesterday were an hour later than usual so that I’d have enough energy to get through my running club. It worked great!
I ended up having a banana and my protein bar at around 5:45 – the running club started at 6:30 and it worked out great. I was able to run my last half mile at an 11:04 minute pace!
The weather was perfect too – overcast and around 70 degrees. We met back at Dick Pond and I ended up buying some stuff to help me on my walks if my blood sugar starts to tank. I like that these gummies below have 24 grams of carbs for 3 and just 50 calories. I also bought nuun, goo and some other stuff and I’ll find out what works and probably buy it offline a lot cheaper!
With my AM walk, lunch walk and running club, I got my steps in!
AND A HUGH SHOUT OUT TO JACOB who put my new Weber grill together. Isn’t she pretty! I’ve had many many amazing meals off of our old one (that actually came with the house when we bought it 14 years ago) so I have no idea how old it is. The new one is a pretty copper color, and has a catch on the bottom for the coals (unlike my old one where they just fall on the ground!) and it also has a temperature gauge. Cannot wait to try this out! Thanks Jacob!
Alright, I am all of a sudden running really late. I am in the process of making pancakes for Meal #2, I still need to shower and I have to leave in 15 minutes – totally doable! Make it a great day!

Awesome number of steps! I haven’t worn my fitbit in a looong time. I have been hiking and walking a lot since I have been back. It’s time to charge the fitbit to hold myself accountable!
Have you seen that pizza thing that goes over the weber? I want, but oh so expensive and I dont have a weber. We have a gas grill( soon to be outlawed by our HOA).

It’s funny because toward the end of my runs I feel great but wonder to myself “I wonder how it will feel when I am 30 pounds lighter?!” 😀

I enjoyed reading about how you microwaved the potatoes before pan frying them. We do that, too. It works great.
On the fly it’s great, but I still love my trusty bake 4 potatoes over the weekend and stick them in the fridge – always cooked and ready for any meal. 😀

I’ve been channeling biz a bit this week. I’m totally out of my exercise mojo – haven’t worked out since I got back from vacation, but that was first due to lack of sleep, and now due to a nasty head cold.
But earlier this week I whipped up a dish with “whatever I had” for dinner. I haven’t done that in so long. Sure it was just pasta with broccoli, green onion (sorry), and cheese, but hey!
WWBD? What Would Biz Do?! Love it! Sending my exercise mojo your way – but then again, I wouldn’t have the energy if I had kids as young as yours – they keep you moving!
Clif Shot Bloks are one of the only premade things I can use if i need some extra energy. Gu and things of that nature just upset my stomach. I tend to do a combo of Shot Bloks and Nuun – grape is my favorite there. Try your Nuun ice cold. It has a bit of fizz to it so it tastes yummy.
Your beef dish is great. The hash sure does make a nice change from baked potato or rice!
Thanks for the tips – already had to use the Shot Blocks today – my blood sugar was 300 before my walk – 48 minutes later it was 74 😛 I am going to start taking less insulin with each meal because I think it must linger in my body and since I am eating closer together – we’ll see!
Oh Kym, you should see me in the morning I am like that Tasmanian devil! I was up at 6:30 so I had 90 minutes to get my shit done, and then all of a sudden I look up and shit – I have to get somewhere!
I am low maintenance, so I put some makeup on in the car when I was at a stop light and still had time to stop by Hannah’s work to pick up a coffee 😀
The grill was only $149 which I thought wasn’t bad! I am still eyeing another gas grill because of the convenience during the week – hoping my sale papers will be good to me this weekend 😀
How??? How is it humanly possible to make pancakes, eat pancakes, clean up the dishes, take a shower, dry off and get dressed in 15 minutes? Do you have some special time machine or something? I really want that skill. I love the new grill. I would pick out a copper color if given a choice. I can’t say I have seen any other colors except silver and black.
That’s a fancy looking grill. We do not own a grill. I love grilled veggies. You are really rocking your workouts. I have used the shot blocks before during races and I love Nuun. Which flavor did you get?
The shot blocks felt like gummies to me, so I got strawberry – the nuun I got watermelon and the Gu’s were all citrusy flavors – I saw there were chocolate and coffee ones but those seemed a bit icky – like eating chocolate frosting!
I’ve had so much fun reading about your “beef adventure!” The new grill is a beauty–must be nice to have such a handy guy around
