Even though the sun was shining bright yesterday morning when I woke up, the fact that it was 23 degrees, but felt like 15 degrees and the fact that there was snow on MY chair, was a bit depressing.
But we got up in the 40s, so most of it is already melted, so I got that going for me. I am dreaming of our temps next week – every day in the 60s!
When I was putting my breakfast together, I realized I had an avocado that needed to be used up. I just threw it in my bag with the rest of my food for the day. I’ve seen avocado deviled eggs on Pinterest, but for some reason never made them before. What was I waiting for? I used 1 yolk, 1/2 an avocado and some sriracha, mixed that up and stuffed the hard boiled egg. I had half an apple and another one of my Nature Valley copycat granola bars.
Right before I was going to the gym, my step-son sent me a snapchat – a new record for him! He said the last minute he did 30 seconds at 7.0 mph and the last 30 seconds at 8.0 mph – at a 15% incline!!
I sent him a text showing him I was at the gym – I loved his response! Actually Carla made a delicious looking sandwich on The Chew – a grilled tuna steak sandwich with a slaw – check it out!
I used the new Cybex treadmill and did a workout called “speed bump.” Imagine it was like running in rolling hills, except you never knew when you going to be on flat ground or on a hill. I slept funny the night before and my neck was hurting, so I walked it.
Lunch was nearly a repeat of yesterday’s carrot potato soup, only this time I added two ounces of andouille sausage to it – so good! This sausage is 120 calories for 2 ounces and it has a hint of smokiness to it.
I bought these tortillas over the weekend. I’ve never seen this brand before.
I had chicken quesadillas on the menu and I walked into the living room with this package and a package of regular flour tortillas. I asked Tony “which would you prefer? These are regular flour tortillas, but these are low carb, and are made with quinoa, amaranth, and spelt!” His answer? What do you think? I’ve tried to have Tony eat things like I do – like the time he asked what was for dinner one time and I said “red quinoa meatballs with spaghetti squash.” He laughed. Until I brought him dinner and it was in fact red quinoa meatballs over spaghetti squash!
My quesadilla: 2 low carb wraps, 3 ounces of chicken taco breast meat, one ounce of Cabot chipotle cheese and a cup of arugula and hot sauce. I “pam” fried these too with butter pam spray.

Best part? That whole quesadilla comes in at 373 calories, 37 grams of protein and a whopping 14 grams of fiber!
I had no problem getting my steps in yesterday, even without my morning walk.
Stats for the Day:
- 1548 calories, 154 carbs, 87 protein, 74 fat and 33 fiber
- 40% of calories from fat, 20% from protein and 37% from carbs
- average blood sugar 139
- got my 10,000 steps in!
Question of the Day: Would you eat completely different from your spouse if given the chance? I think I would try more ethnic and spicy dishes if it were just me. Although I am going to try to get Tony to make his famous fried rice for dinner tonight. I have chicken to use up, and leftover cold rice – perfect!

I am very lucky that Brad is a VERY adventurous eater, so he will gladly eat whatever I am. He just isn’t into me getting overboard with vegetarian dishes 7 nights a week. Man loves him a chunk of meat in each meal.
I often make 3 completely separate meals with the same base ingredients. Tacos, pressed hot sandwiches, and pasta dishes are all good examples of that, because I can spin base ingredients in several different ways. Spaghetti and meatballs for example, I dislike pasta so I use spaghetti squash, but I cook up actual pasta for MAK and B. But! MAK can’t do red sauce because of his GERD, so I make him chicken alfredo but save some of the chicken for me and B so I can make chicken meatballs. It’s exhausting but sometimes the extra effort is worth the lack of complaint at the table!
Julie eats like a kid, she takes a PB&J for lunch every day. She loves pizza and the only fish she will eat is fish sticks( sometimes tuna sandwiches). When we go out to eat, she’ll order a hamburger( no cheese) or a BLT. She hates mushrooms, sour cream, most cheese and cream cheese. She wont try new things at all. Its very frustrating. I often make 2 meals at dinner time.
Ha, I had to laugh about Julie eating like a kid – one of the attorneys I work with can’t eat dairy, and when we had a pizza party he brought a PB&J and a bag of popped popcorn in a baggie!
Ugh, I do not envy you for the snow, but your food looks amazing, as always! In terms of eating differently than your spouse, I think Andrew and I are preeetty much on the same page, but there are little things we’d do differently. When cooking soup, for example, he always wants to add 40 different spices, and I prefer a simpler flavor profile, so I always find myself monitoring the pot saying, “Please don’t put Italian seasoning in that.” Also, with him not being able to eat gluten or dairy (and really, I shouldn’t eat dairy either, but I do sometimes), there are nights that I’d really like to just have a huge plate of fettuccine alfredo with no protein and no vegetables. Hah! It’s probably for the best that I can’t do that 😀

Love those quesadillas! They’re a staple at my house, but yours look really great. Adding arugula is genius…just a bit more bite than plain lettuce.

I often eat differently from R. On weekdays we eat the same except for veggies, I often make 2 different kinds because he doesn’t eat alle veggies. At the weekend he has ‘basic needs’: fast food on Friday, bread on Saturday, soup on Sunday (yes I know exciting 🙂 ) and that’s my chance to make dishes I like and he doesn’t. I sometimes do eat soup on Sunday too and in that case we eat the same again.
That’s too funny – he’s got his routine!
omg . . . . the screen shot of your phone showing 815 emails just gave me a panic attack. How does that happen?! I can’t let my email go past 30 messages before I have to sort through them. 🙂 Looking forward to the 60’s next week, too!
Ha – a lot of them are spam. I get lots of emails from readers who are diabetic wondering how I can control my diabetes eating all the good food I eat – I wish I had more knowledge to help them out – but I steer them to a diabetic nutritionist – you can still eat good food and be diabetic. I miss your blog!

My fiance and I eat pretty much the same things…the only think I would do different would probably be to eat more broccoli (he hates it, and I hate preparing two different veggies, so I usually skip it!)
John and I often eat differently. Sometimes I am just focused on what I want to eat and if he wants some of it, fine, but he cooks for himself if we are eating differently – especially when he wants something like fried shrimp. We eat together, but not always the same stuff. Even when we eat the same thing, we have different sides. We might have made a pot of chili, but I will have broccoli on the side and John will have chips.

Michael and I have different tastes when it comes to food, but he pretty much will try anything that I make, so I don’t have trouble trying new things.

Those quesadillas look amazing! I was drooling when I saw them on instagram. You have a lot of emails ;). I do eat very differently from Josh. I don’t really eat much meat and he eats a good amount of eat. Our meal usually have similar ingredients but are prepared in slightly different ways 🙂
I get a shit ton of emails a week – and by the weekend I’ll usually go through them all.
I eat a plant based vegan diet and my husband still occasionally eats meat. He loves the food I make and has no complaints about eating mostly vegetarian at home. Until recently I cooked meat for him, but he has asked me to stop because he doesn’t enjoy it as much. He still eats it if we are out. It’s funny to me to think that I had just started eating vegetables when I met him in my 20s. He has been incredibly supportive of my dietary changes thankfully.
Your quesadillas look so delicious. I don’t really miss dairy except when I see your cheese and yogurt photos!!
I didn’t try any veggies other than raw carrots and cucumbers until my 30s! Sorry, I will always be a cheese whore! 😀
The hubby and I like much of the same things. There are a few things he likes that I don’t and vice versa. Often I will incorporate new things such as coconut oil into my coffee, and the hubby usually follows along.
Chris and I have very similar eating habits (except I eat way more!).

Yummy crispy goodness on those quesadillas. My husband prefers simple and basic. With that being said he almost always tries whatever I decide to make. He says if I take the time and trouble to cook it he will eat it.

my boyfriend is a very picky eater. he’s diabetic (not on insulin, only meds) , so obviously he can’t eat just anything. but he’s a meat and potatoes or “cooked meats or fish on salads” kind of guy. i am definitely the more adventurous eater, and it does cause problems at times.
That’s why mostly my breakfasts and lunches are my time to experiment with new foods I know Tony wouldn’t eat 😀
My Jeff is so happy whenever I cook that he’ll eat anything…and he is willing to try things that I’m not (seafood, for example), so I never worry about his eating.
One of these days you’ll learn to enjoy to cook! Although now that your weather is getting nicer, I hope you plan on making your huge ass summer salads again!
I adore quesadillas. You think that has something to do with the cheese? 😉 Yes, if it wasn’t a PITA to cook separately from my husband, I would make more chicken and fish, definitely. And also use ingredients that he isn’t fond of or “thinks” he doesn’t like. I sometimes complain because it’s tough to work around so many allergies. But truth be told, I just need to be grateful that *I* don’t have to deal with those allergies!

I don’t give Husband Jeff options for other foods, I generally take his preferences into account, but I make what I think we should eat for dinner. 🙂 Luckily we usually agree on food or we customize our stuff a tiny bit, like he’ll eat more carbs or put green olives on his salad. But he’s usually pretty cool with whatever I make, from quinoa to tempeh. I wouldn’t be able to stand it if he was a “meat and potatoes” sort of person.
I think my husband would throw up if I tried to make him eat tempeh! 😀
I do eat completely differently from my spouse about 80% of the time. Pretty much we eat the same protein and SOMETIMES he’ll eat the same side dishes as me, but in general, our plates look completely different. His body processing foods, especially carbohydrates, differently than mine. I just cannot eat the same way he does or I’d be big as a house!
I am pretty sure if your husband and I lived together we’d talk each other into having pizza every other night!
