About the only good thing about day light savings is that it’s light out when I leave for the gym. And although the clock says 7:42, it’s actually 6:42 – I haven’t gotten the manual out to change the clock yet.
I had my customary English muffin with peanut butter for my pre workout fuel.
The arm strength workout that was on tap for yesterday? Holy shizz, it took me 40 minutes to complete – look at how many exercises there were!
I mean, it started out with 60 pushups! I finished up the workout with 30 minutes on the treadmill – 4.0 mph at 8.0 incline.
I decided to bring my smoothie blender to work to have a Green Monster for breakfast. Only one tiny problem – since I packed my bag the night before, I put the frozen banana in my bag – by the time I got around to using it for my smoothie – it nearly defrosted, so I didn’t get the thickness I usually like with this smoothie.
I scored on this giant 24 ounce Starbuck’s cup at Dominick’s – normally sells for $18 but I got it for $7!
After having my wine over the weekend, I knew I had to get my game face back on. I found this on google images and I love the message. How many times have I started and stopped my weight loss journey these last five years. I get all gung ho, then the motivation dies and I go right back to where I was when I started.
I actually love hitting the pool at lunch after a tough morning workout. It’s so relaxing. I really don’t push it too hard – just slow and steady laps for 30 minutes. Guess who painted their piggies?!
I had the last of my African Peanut Stew for lunch, with cucumbers, cut up banana, black berries and a small piece of schiaccata I made over the weekend.
And then comes the doom of the drive home in the dark. Although it didn’t get pitch black until 5:15. The clouds were at least pretty for a few minutes when I left!
Last week I hit up the discount bin at Dominick’s (soon to be out of business – no!!) and picked up two steaks – with the discount it ended up being $3.69 cents for both steaks – each one was about 1/2 a pound. So really that is $1.84 per steak and only .92 cents a serving since we split one steak.
Guess what else was on sale? Bay scallops! I decided to do a quick and easy surf and turf dinner for a weeknight.
Bay Scallop Gratin for Two
- 266 calories, 10 fat, 17 carbs, .9 fiber and 21 protein
Ingredients:
- 1/2 pound bay scallops
- 1 tablespoon butter, softened
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning (totally forgot!)
- 1 tablespoon lemon juice
- zest of one lemon
- 1 teaspoon olive oil
- 1/3 cup panko bread crumbs
- 3 tablespoons of wine
- salt and pepper to taste
Heat oven to 425. Mix the butter, garlic, Italian seasoning, lemon juice, lemon zest, olive oil and bread crumbs together. In the bottom of your baking dish, put the 3 tablespoons of wine. Drain the scallops on a paper towel, then sprinkle over the wine. Salt and pepper the scallops. Top with the bread crumb mixture and bake for 10 minutes, and then put under the broiler for a few minutes to brown the bread crumb mixture.
While that was baking, I seared the steak in a cast iron skillet – still very rare which is how we love our meat. I steamed up some asparagus and served it up with 1/2 cup of cooked brown rice. This dinner literally took me about 20 minutes to put together.
Holy yum, this was delicious! The bread crumbs on top of the scallops were crispy, the lemon zest was awesome – and the best part is that both plates came in at just under $6 – you couldn’t even get an appetizer portion of scallops for $6 in a restaurant! And the original Ina Garten recipe calls for 6 tablespoons of butter and 6 tablespoons of olive oil! I think mine is just as good with the reduced amount of fat.

We sometimes do an impromptu surf and turf also – and we rarely order it out because we think the one we make at home is better!
You must not have to be at work until 8:30 or 9? Saying that because you were working out at 7 am. By that time, I’m packing my bag up and heading to my car to go to work. Every once in a while when the alarm goes off at 4 I wish I could go to work later but then when I’m leaving work at 4 p.m. I’m glad I don’t LOL!
Yep, I have to be at work at 8:45. I get to the gym between 7:00 and 7:15 – and the gym is literally a one minute drive to the office, so I can work out until 8:25 and still have time to shower, dress and get to my desk – helps that I am low maintenance! 😀 I work until 5:00, and since I take the back roads home, I usually am home by 5:35.
I don’t know how I’m going to get thru these next 2 weeks after reading your blog each morning. Thankfully I had my protein drink so I am not as hungry as I was when I woke up. Everything looks so great!!

Absolutely Kym – there isn’t enough wine to make a difference – only 3 tablespoons, I think chicken broth would work just as well.

I never used to like asparagus growing up, because I think my Mom had canned asparagus? Or maybe she overcooked fresh asparagus? Or maybe because it was green I just stuck my nose up to it? I love it now!

I’ve stopped for years at a time, but for some reason I’ve yet to figure out, I just keep going back to it! It’s very frustrating because I live such an otherwise healthy lifestyle. Arrgh!!! Tony and I both smoked for years. He stopped using Zyban – http://www.drugs.com/zyban.html. Basically you could still smoke while taking the drug, and Tony said after a couple weeks, he had to remind himself to smoke, and then just stopped – he then gave the rest of his prescription to his then brother-in-law, and he quit smoking in two weeks. It’s been 15+ years and they are still both smoke free.
Me? I did the patch. But after 24 hours, I had an allergic reaction to it, but I stopped and thought – hey, I just went 24 hours without smoking! I even smoked while my Dad was dying of cancer because of smoking – so crazy!
