I still have so much Easter ham leftover – I think I’ll need to make some ham macaroni and cheese soon – that’s one of Hannah’s favorites, although she still likes Kraft mac n cheese – although she feels that the shaped pasta tastes better for some reason.

After my 30 minute stretch I put my food together for the day.  I have to tell you, but since I’ve done that stretch program every day, my heel pain is non-existent – I could not be happier!

Breakfast was 1/2 cup egg beaters, 3/4 cup baby spinach, 2 ounces Easter ham, 1/2 ounce of cheese, baby bagel with laughing cow cheese and a sliced apple.

I didn’t think there would be enough leftovers from my Chinese take out the other day, so I bulked it up with more broccoli, baby spinach, carrots, peppers and yam cake.  WTF is a yam cake?

Instead of noodles, its one giant piece of rubber stuff.  When I first took it out of the package I called Hannah into the kitchen to touch it – it was pretty weird.  But I chopped half of the block up (20 calories) and added it to my chopped veggies and sautéed them in a packet of hot mustard.

The base is 1/2 cup of leftover beef and broccoli, 1/2 cup fried rice and the rest of the veggies and yam cake I brought from home – just nuked it all together.

I was kind of afraid of the texture of the yam cake, but I actually liked it – it was nice and spicy from the mustard sauce.

I know I am going to get flack for this, but long time readers know Tony and I hate onions, yet we love onion rings.  I mean, deep fat fry anything and I am in!  I decided to make a light beer batter for dipping.  Not only did I make onion rings but I also made asparagus fries – check out my deal on all this asparagus!

Beer Batter

  • 12 ounce beer
  • 1.5 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper

It’s hard to figure out the calories for this, because even after dipping 1 whole onion and a dozen asparagus spears, I still had at least half of the batter leftover.

But the star of the show??  Bang Bang dipping sauce.  My friend Jacky linked to a recipe yesterday for Bang Bang Cauliflower.   Doesn’t that look amazing??

Have you ever had Bang Bang shrimp from Bonefish grill?  I could just eat a plate of those and be a happy camper.

She linked to a recipe for the Bang Bang dipping sauce, which originally called for mayo and sugar.  I tweaked it a bit, but the flavor is spot on.

Bang Bang Dipping Sauce

(four servings – 1 heaping tablespoon each: 50 calories, 0 fat, 11 carbs, .5 fiber and 1.5 protein)

  • 1/4 cup plain Greek yogurt
  • 1/4 cup Frank’s Red Hot Sweet Chili Sauce
  • 1 tablespoon rice vinegar

Mix well and serve.  Next time I will add a touch of sriracha to my serving to kick it up a notch.  This was so good!  Yep, my kitchen is usually a complete mess when I cook. Embarrassed smile

The burgers got overcooked, but the onion rings and asparagus fries were amazing.  Since I made them in batches, I had a paper towel lined tray in my oven set at 225.  I just kept them in there until it was ready to serve.

My brother started chemo yesterday.  They put in a port yesterday – my SIL posted this picture of him on Facebook – after the port was put in, he was rewarded with popsicles!

He’s retaining a bit of fluid and he wears those leg things to prevent DVT.  They will monitor him for the next few days in the hospital and then will figure out when he’ll be released.  Not sure yet how his treatment schedule will be.  My Mom made it down safely!  Airplane
