I still have so much Easter ham leftover – I think I’ll need to make some ham macaroni and cheese soon – that’s one of Hannah’s favorites, although she still likes Kraft mac n cheese – although she feels that the shaped pasta tastes better for some reason.
After my 30 minute stretch I put my food together for the day. I have to tell you, but since I’ve done that stretch program every day, my heel pain is non-existent – I could not be happier!
Breakfast was 1/2 cup egg beaters, 3/4 cup baby spinach, 2 ounces Easter ham, 1/2 ounce of cheese, baby bagel with laughing cow cheese and a sliced apple.
It was a gorgeous day and I got my 50 minute walk in at lunch. I love seeing all the green.
I didn’t think there would be enough leftovers from my Chinese take out the other day, so I bulked it up with more broccoli, baby spinach, carrots, peppers and yam cake. WTF is a yam cake?
Instead of noodles, its one giant piece of rubber stuff. When I first took it out of the package I called Hannah into the kitchen to touch it – it was pretty weird. But I chopped half of the block up (20 calories) and added it to my chopped veggies and sautéed them in a packet of hot mustard.
The base is 1/2 cup of leftover beef and broccoli, 1/2 cup fried rice and the rest of the veggies and yam cake I brought from home – just nuked it all together.
I was kind of afraid of the texture of the yam cake, but I actually liked it – it was nice and spicy from the mustard sauce.
I know I am going to get flack for this, but long time readers know Tony and I hate onions, yet we love onion rings. I mean, deep fat fry anything and I am in! I decided to make a light beer batter for dipping. Not only did I make onion rings but I also made asparagus fries – check out my deal on all this asparagus!
Beer Batter
- 12 ounce beer
- 1.5 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
It’s hard to figure out the calories for this, because even after dipping 1 whole onion and a dozen asparagus spears, I still had at least half of the batter leftover.
But the star of the show?? Bang Bang dipping sauce. My friend Jacky linked to a recipe yesterday for Bang Bang Cauliflower. Doesn’t that look amazing??
Have you ever had Bang Bang shrimp from Bonefish grill? I could just eat a plate of those and be a happy camper.
She linked to a recipe for the Bang Bang dipping sauce, which originally called for mayo and sugar. I tweaked it a bit, but the flavor is spot on.
Bang Bang Dipping Sauce
(four servings – 1 heaping tablespoon each: 50 calories, 0 fat, 11 carbs, .5 fiber and 1.5 protein)
- 1/4 cup plain Greek yogurt
- 1/4 cup Frank’s Red Hot Sweet Chili Sauce
- 1 tablespoon rice vinegar
Mix well and serve. Next time I will add a touch of sriracha to my serving to kick it up a notch. This was so good! Yep, my kitchen is usually a complete mess when I cook.
The burgers got overcooked, but the onion rings and asparagus fries were amazing. Since I made them in batches, I had a paper towel lined tray in my oven set at 225. I just kept them in there until it was ready to serve.
Stats for Day 11 of 30 Operation Bad Ass
- 1487 calories, 58 fat, 157 carbs, 18 fiber, 84 protein
- 43% of calories from carbs, 35% from fat and 22% from protein
- 30 minute stretch before work
- 50 minute walk at lunch
My brother started chemo yesterday. They put in a port yesterday – my SIL posted this picture of him on Facebook – after the port was put in, he was rewarded with popsicles!
He’s retaining a bit of fluid and he wears those leg things to prevent DVT. They will monitor him for the next few days in the hospital and then will figure out when he’ll be released. Not sure yet how his treatment schedule will be. My Mom made it down safely!
Thanks for your continued well wishes. Make it a great day!
TONS of positive thoughts to your brother!
Anything deep-fried = amazing. By the way, I’m having too much fun saying the word “bang bang” aloud.
I have to make that sauce because it has Frank’s in it!!!! 🙂
Love that you used Greek yogurt, brilliant. Your brother is rockin’ the hospital gown. 🙂 Great that your mom could get out there to help! Stay positive and on track! Kudos to you, I would of eaten the hell out of that pizza 9few day old reference).
you know, my kids think the same thing about those shapes in kraft mac and cheese…lol
I have some frozen battered green beans I think that sauce would be awesome with!
Continued best wishes to Charlie! Those leg things are a PITA…I had them after my hyster and they are noisy and inflate and deflate in intervals…hard to sleep with them on…I was bad and took them OFF! lol ( but then again, I’m a nurse and I do what I want…defiant! lol )
That bang bang sauce sounds so good – I must admit this is the 3rd time I have seen it – on Michelle’s blog ,then Jacky, and now you! I must try it – but I can’t find the chili sauce, booo! Sending good thoughts to your brother!
Glad to hear that the stretching is helping your heel pain! That sauce looks amazing, and I can think of a million things I could do with it.
The onion rings and the bang bang dipping sauce sound awesome. I’m thinking that sauce for lots of things to be dipped in…like some wings! Your brother is stil in my prayers Biz!
I love Bonefish Grill and the Bang Bang shrimp! Your incarnation looks great, per usual! I hope your brother has a short hospital stay and tolerates chemo as well as possible. He’ll feel like sh*t for a bir – but hopefully the end result will be REMISSION!
Sending good wishes and popcicles down to Charlie!!! And for the record, I love the NAME “bang bang” dip!!! Hey…you could refer to the veggies “Pebbles” and the sauce “Bang, bang”. I did NOT make that Flintstone reference….omg…that’s soooo bad!!! Hugs to you and the whole family Vat.
Not even sure that you have Bonefish in Canada? I’ll have to find a copy cat for the bang bang shrimp – so good!
Continued thoughts and prayers for your brother. Moms provide such comfort no matter how old we get. I’m sure your brother and his family are glad to have her there.
You’re doing so great Biz! I am really inspired by your dedication.
Sending lots of positive vibes to your family!
Okay, reason 1,232,343 why I love blogs. I’m having people over for food and stuff on Sunday and didn’t know what to make. I love reading a post like this and thinking “that’s it!!” The beer battered veggies and bang-bang sauce sounds AWESOME!!
I love when that happens too! Definitely add some sriracha to kick it up!
I had to wear those pretty little leggings for my surgery, too! Tell him that I’m thinking of him. And dang, I love onion rings…
Sending positive thoughts your way, Biz!
That’s awesome about the heel pain. I’m glad it’s working for you!
I love onions. So it makes me happy that you like onion rings. They’re so good.
Popsicles are a good reward. The port insertion sounds miserable so it’s nice to have something positive come from it! Glad your mom is there now.
They had to take him to the ER to put it in. When he got back to the room when he woke up he needed to go to the bathroom and was like “who took my underwear?”
Yea for the onion rings, makes me laugh tho that you guys will eat them!
Good pic of your brother, your sense of humor will help you through this. Very nice that your mom is able to be there for him and his family.
I could not try a yam cake, it just sounds wrong! I saw blood cakes at our Asian store and they looked disgusting!
Tell your brother we’re all cheering him on!! I want that sauce- love the use of Greek yogurt. I’m not sure I could do the texture of that yam either….Have a great day!
I’m sending you and your brother lots of positive and healing thoughts.
As far as counting calories for homemade things that are difficult to tell – I will typically weigh the item and then enter it in as, say, 3 ounces onion rings. You might have to get more creative with deep fried asparagus, but could probably find some sort of deep fried green veggie (or tempura) to use to get a general idea. May not be exact, but better than nothing.
That’s a good idea – thanks Sara! 😀
Best wishes to Charlie, and hurray for moms, right?!?
That Bang Bang sauce looks good. Would be fun to dip a lot of things into!
dipping sauce looks awesome!!
Sending good wishes to your brother.
OMG I have to try that sauce – bang bang shrimp is my favorite! Continued prayers for your bro!
Thanks AM! I still can’t comment on your blog – boo! Love that you got a date night with the hubs!
1. Hannah is right; the shape mac ‘n cheese DOES taste better!
2. Your rings, fries, and dipping sauce look SOOOOOO good!
3. Best wishes on your brother’s journey. My aunt has done this 3 times, so I know what’s in store, but I’m hoping for remission as you all are. Good luck.
I’ll have to tell Hannah that someone agrees with her about the shaped pasta!
I just don’t get how you can eat onion rings and still not like onions in other things! Glad your mom made it safely to Charlie – everyone needs their mom when they don’t feel good.
So he’s starting a new diet again, huh. The popsicle diet! I feel confident that the popsicles will make him completely better in no time. 🙂
It’s always strange to see any form of onion on your blog. That dipping sauce sounds awesome. I’m so trying that. I’ve never had Franks Chili Sauce, I gotta pick me up some of that too!
Glad your mom made it ok to Charlie’s. Praying for him! I hope these treatments knock out that cancer for good. Onion rings- you are too funny, but yeah frying does make everything better! Have a good Friday’s eve!
Praying for your brother, Biz!
Thanks Marisa – I miss your blog! 🙁
Best wishes for your brother!
I wonder how buffalo sauce would be with the yogurt? Hmmm….
Hope your brother responds well to treatment.
I can’t get enough of onions, I love them in everything, especially onion rings which I rarely ever eat. I have no idea what a yam cake is but it sounds good.
