My store had Chobani 5/$5 dollars, so get used to more yogurt parfaits! This one was strawberry banana with honey chobani – although I realized this flavor is 4 points instead of 3, but even with the 1/4 cup of granola, this giant glass is only 7 WW points.
One of the secretaries is out a few days this week, so my morning was pretty busy. The weather, while warm, called for scattered showers. Worse case scenario was if I couldn’t work out at lunch, I would have Tony fix dinner and I’d go to the gym. But I had my window and my blood sugar was cooperating – yeah!
As I was changing my clothes I noticed: I didn’t pack any socks, the only hat I had was my winter hat and I left my headphones at home after running yesterday outside. I could sometimes add all those obstacles together to convince myself it isn’t worth it. But I didn’t. š
I did my five minute warm up walk to my “starting point.” I stretched and waited until my watch hit 12:00 on the dot and told myself “just keep running.” It was windy at times, I was pissed because my hair was whipping around my face. You know, because I was going so fast. š When I got to the 1.5 mile marker, I looked down and had run it in 15:32! Sometimes it is mind over matter – my legs want to go faster, but my brain sometimes wants to say “slow down!” Sometimes you just have to push yourself a bit harder.
I was hangry when I got back to work. I had made myself a stuffed pepper for one over the weekend with leftovers. I used 1/2 an Italian sausage chopped up (3), mixed that with 1/2 cup cooked brown rice, added 1/2 cup of marinara and stuffed it. I brought it to work in one of my cute Staub pots. I nuked it for 3 minutes and had every intention of adding the 1/4 cup fat free mozzarella on the top and finishing it off in the toaster oven. Um, slight problem, it was too tall and didn’t fit! So I just nuked it for another minute. So filling and good – I did also mix in about 1/2 teaspoon crushed red pepper to the mix to kick it up a notch. š Lunch comes in at 10 points. (and check out Nicole’s blackbean and rice stuffed peppers – definitely going to try that next time).
So here’s a strange thing. Ever since Tony had colon cancer last year, he hates thick meat. This was a man who loved thick burgers, thick bone in pork chops. Now? Not so much. So here are “skinny” pork chops with creamed spinach. I adapted my previous recipe because with these thin chops, I couldn’t stuff them, but pureed the spinach mixture as a sauce. Worked for me! The chops and spinach are 7 points, on the side I made broccoli cheddar rice (yep, Rice a Roni to the rescue!), so my dinner comes in at 10 points. It doesn’t look that appetizing, but believe me, it was delicious.
It’s supposed to be 66 degrees today! I may have to bike today at lunch – it will be the first time I’ve ridden a bike since last November. š
Question of the Day: Thick or Thin Meat? Or No Meat at All? Make it a great day!
It’s touch and go with meat and me. The idea of a huge chicken breast or a thick steak really turns me off. But slice the chicken or steak and put it over a salad, and I”m fine with it. I mostly like meat mixed up with other stuff, but I love burgers, any kind, big or small! I really have weird rules with meat-lol. Love that happy picture of you. š

I prefer thin meat. We like meat but not big or thick pieces, just a small thin piece is enough for us.

I could live forever without meat, but I do eat it a couple times a week, just not a big fan. My husband is a big meant eater, he prefers thick! I do like some meat in a casserole though.

I’m not a thick meat person at all! I’d do completely without meat if my family would let me! Bacon is probably the only meat that I couldn’t do without. Bacon rocks! Ham is a close second. The rest I could do without.
I love your yogurt parfaits. Are you making your own granola or just buying it? I’m going to have to start making those!
I see you have 27 pts for the day. Do you ever snack? I am trying to do WW and I get it in my head that I have to have a snack. I have an autistic child and he gets a snack at 8:00 each evening. I am always in the mindset, if he can have one, then I can to. š

I like both types, but thin is easier to chew and digest for me so I will vote thin – and I don’t think those pork chops are too terribly thin. I thought you would have the ones that are quick pan fry, although I can see where you couldn’t stuff those. Dinner sounds yummy, but you are right about the pic’. heehee
Congrats on getting your workout done. Good luck riding your bike. I would love to go on a bike ride with Wallene. We have miles [and I mean MILES] of bike paths in our neighborhood. It is so gorgeous here right now. I can’t wait until Pooldad gets home to go out and enjoy it. Get here 2 o’clock. . .hurry!
I’m not a huge fan of meat (which seems silly because I’m in a family full of carnivores) but when I do order or fix it.. Thin chicken, thin burger patties, THICK filet mignon if i can ever fork out the money for it š

I can’t do thick meat unless it’s steak. Thick chicken absolutely disgusts me. I have some weird food hang-ups though. I refuse to eat meat off the bone! I wish I could get over it.

I’m not really a pork chop person – they are too tough! I like ground beef (80% is my favorite, but I’ll eat the other %’s). I don’t really like meat as the main thing, I like it in things, like really delicious juicy chicken in a burrito, or ground beef in a flavorful chili. Growing up I didn’t really eat much meat – I think my first hamburger (with beef and not turkey) must have been when I was in high school! I really like venison but rarely get a chance to eat it. I definitely feel like I’m missing something when I don’t have meat though.
I hope you get to ride your bike at lunch today. It’s supposed to be 73 here today, but rain at some point.
