I love making Jimmy Dean’s sausage breakfast casserole – its so easy and delicious. I don’t let mine sit overnight, but you certainly can. It was funny because Hannah’s bedroom is right off the kitchen. She said she could hear me start to brown the sausage and had a thought to get up and help me, but then decided if she fell back asleep when she woke up again it would be done and ready to eat!
Jimmy Dean’s Sausage Casserole
- 1 tube of Sage Jimmy Dean sausage
- 6 cups mixed bread, cut into chunks (I had some stale bread that was perfect)
- 6 eggs
- 2 cups milk
- salt and pepper
- 1 cup cheddar cheese
Brown the sausage. In a large bowl, mix the eggs and milk together. Toss in the bread and press down to make sure all the bread gets the egg mixture. Toss in the cooked sausage and mix well. Place in a large casserole dish. Top with shredded cheese and bake for 45 minutes at 350.

The weather wasn’t too bad for Chicago – it was in the low 40’s, the sun was shining and there wasn’t a whole lot of wind. Hannah and I ended up going on a 45 minute walk – so refreshing! This is us trying to say “Merry Christmas!”
Tony felt like he might be up for eating something more substantial for Christmas dinner. Hannah and I went to the Fresh Market and I was walking back and forth trying to decide what to make. I didn’t want to do any type of red meat, I thought it might be too heavy for Tony after eating such bland food.
I ended up buying a roasting chicken and decided to grill it. I made baked potatoes on the side and it was perfect. I brined my chicken the day before and then just put a dry rub on the chicken – it had a bit too much spice for Tony – lots of peppercorns!
The chicken turned out perfect – super juicy and tender. And its going to make a mean chicken noodle soup today!
Hope everyone had a wonderful Christmas! Hannah and I are going to hit up the gym this afternoon when she gets home from work. And we may end up in the hot tub! 😀

I made the same casserole [for the first time] but added apple, cinnamon and sugar. Pooldad said that he loved it and if didn’t have the apples and sugar he would be putting hot sauce on it too. I love that Hannah gifted you those hot sauces. Those are the perfect gift for you!
I am glad that Tony tried something a bit more. Your chicken looks delicious. Did you cut it up the back before putting it on the grill – and what kind of chips – and for how long did you smoke it. [See YOU created a couple of monsters over here! Pooldad wants to do chicken next too. YUM]

Yes, I cut the back out before putting it on the grill. I didn’t use any chips this time, just natural charcoal – coals on one side and the chicken on the other, leaving the top off about 1/2 an inch to let more air in to keep the coals stoked – this wasn’t done in our smoker, just on our good old Weber. 😀

Love your apron; looks like it was a beautiful day to grill!! 🙂 We lost power for 3 hours and I was expecting 25 people for dinner! It came back on 2 hours before dinner started, talk about a rush to get things on the table! Damn wind and rain, but it all turned out good!

I made an emeril recipe with leftover turkey and mashed potatoes last night (thanksgiving leftovers shepherds pie) and my family thought it was one of the greatest things ever. I imagine it’d be great with leftover shredded chicken as well!
I make a similar breakfast casserole, only mine has *whispers* onions in it. And red bell peppers. This year Jeff made it while I was at work – came out pretty good!

WOW – Great looking chicken. Have you posted in the past how you roast your chicken?
I don’t really have a written down recipe for grilled chicken – although I now always cut the back out of the chicken and butterfly cook it on top of a cast iron skillet – it allows the juices to drip so you get a crispy skin. I put my coals on one side of the grill and the chicken on the other side – it cooks with indirect heat – this was a 3.75 pound chicken, and it took about an hour and 15 minutes to cook. 😀
Mmm…roast chicken sounds just perfect to me after so much heavy food the past few days!
