I was beginning to think it was just me yesterday, because my post wouldn’t publish, I had a hard time going on an WordPress blog, and when I tried to comment, it wouldn’t recognize my Open I.D. Luckily Veronica e-mailed me and was having the same trouble – hopefully today will go a bit smoother!
Two pictures I wanted to post yesterday and couldn’t – my skinny pesto chicken meatball subs – this whole sammie was 10 points and so worth it – I hollowed out a 3 ounce whole wheat roll, so each half was only 1 ounce of bread. Stuffed it with baby spinach – 5 meatballs between the two sandwiches, marinara sauce, then topped with 1/8 cup shaved Parmesan cheese and put it in my office toaster oven for about 10 minutes – I will definitely be making these again. 😀
Then Wednesday night, someone was home for dinner – Hannah! She and I are like passing ships in the night – with me working during the day, her going to school, working and babysitting – she loves skinny burgers and my fries so that’s what we had!
I baked up refrigerator biscuits – 3 biscuits is 4 points, then portioned out 1 ounce of raw beef for each slider – I topped mine with 1 ounce of 50% reduced fat Cabot cheese and sauerkraut – this plate was 13 points.
So now we are all caught up – whew! 😀
Yesterday’s breakfast was egg tacos – 3 tortillas, 3/4 cup egg beaters split between the tortillas, sauteed red peppers, salsa and cheese – 9 points.
I carefully packed my gym bag, made sure I had everything and headed over there. I normally would go between 11:30 and 12:00, but because of my work schedule, didn’t get there until 1:00. When I walked in, the girl at the front desk looked at her watch and said “your late!” and then she said “Hey, wait a second, where have you been?” I don’t know anyone on a first name basis at this gym, so it was nice that she noticed I hadn’t been there in a while!
I ended up doing 40 minutes on the treadmill, and was actually able to run 25 minutes without stopping at 4.8 mph – which I didn’t think was too bad considering how long it had been since I ran.
For lunch I put together another what I call “pantry soup.”
Pumpkin Apple soup with Chipotle Pepper
- Makes 4, two cup servings: 171 calories, 2.5 fat, 26 carbs, 5.1 fiber and 12 protein or 4 PointsPlus
- 1 large apple, peeled, cored and diced
- 48 ounce container of chicken broth
- 1 can (2 cups) canned pumpkin
- 1 teaspoon cumin
- 1 chipotle pepper (either halve or seed this – its pretty spicy!)
- 2 cups skim milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- garnish with Greek yogurt and pumpkins seeds
Put everything (except garnish) in a stock pot and simmer over medium heat for 30 – 40 minutes, until the apples are tender. Using a stick blender puree until smooth. Garnish with Greek yogurt and pumpkin seeds.
My lunch was 8 points which included a slice of my simple white bread with a schmear of butter.
Hannah went out for dinner with friends last night, and Tony didn’t have much of an appetite, so it was just me! I love stir fry, so that’s what I did – zucchini, broccoli, red and orange peppers, carrots , 3 ounces of firm tofu and 3 ounces of shrimp. For the shrimp and tofu, I tossed them in about a tablespoon of corn starch – it gives the outside a nice crunchy texture. I cooked the tofu first, then set aside, then the shrimp, then set aside, then the veggies last with the wok lid on.
The last two minutes I toss everything together with 1/4 cup water and 2 tablespoons of House of Tsang Szechuan spicy stir fry sauce.
Here is how the shrimp look after being fried – so delicious!
My big dish – 10 points which includes the 3/4 cup of whole grain rice at the bottom and the oil I used to stir fry. I love how you can see the steam in the bowl. 😀
- 34 points, which included wine 😀
- 40 minutes on treadmill
- average blood sugar 109

i just made a similar stir-fry with shrimp and veggies, i need to post it soon. o wait it was prawns..but i mean shrimp and prawns are pretty much the same..same looking lol.

Oh yum, I’m glad we got to see that meatball sub! And I love the sound of that soup. I may be addicted to my roasted butternut squash soup that I cooked for the PFB2010 contest. I’ve made it like 5 or 6 times since Oct.!

WordPress WAS out of whack for a while yesterday – glad it seems to be sorted today. I’m glad someone else has occasional technical difficulties. Sometimes just booting up leaves my head spinning:( Your food from yesterday looks great – the pesto meatball subs – what a great idea. The pumpkin soup comes at a perfect time because I have about 3/4 of a large can of pumpkin in the fridge and was pondering what to do with it – the answer is lying on my printer tray.
Hannah is so adorable – and definitely looks like her mama. I’m surprised she doesn’t have a steady flow of friends in to sample mama’s cookin’! Hope Tony is feeling more like himself and stronger each day.
