While I am sure Tony wishes he was already busted out of the hospital by now, he is doing really well, and his surgeon is very happy with his progress. No one has made mention of when he is coming home, but Tony and I have been down this road before. As I’ve said time just stands still at a hospital, so we go in with low expectations on when he’s going to get sprung!
I wish I could be there with him all the time. As his sister says, I have a calming effect on Tony. If he knows I am in the room, he can let his guard down, and within a few minutes of my being there, gently touching his forehead, he is peacefully asleep. 😀
I spent all day Sunday there, and didn’t get home until 9:30 p.m. I still haven’t gone grocery shopping yet, and the more I thought about it, I knew I could come up with something using my freezer and pantry.
I had forgotten that I bought 10 zucchini’s for a dollar almost a week and a half ago and was really surprised that they were still good! I meant to add sausage to this zucchini quiche but completely forgot to add it and am happy that I did. It is light, delicate and delicious. There is enough protein with the eggs. 😀
Crustless Zucchini Quiche (printer friendly version here)
1/4 of pie is a serving: 204 calories, 9.8 fat, 6.6 carbs, .9 fiber and 16 protein = 6 WW Points
Ingredients:
- 1 large zucchini, sliced in rounds
- 1 clove garlic, minced
- 2 large eggs
- 1 cup egg whites
- 1/2 cup fat free half and half
- 3 ounces cheddar cheese
- 1 teaspoon dried parsley
- 1/2 teaspoon sea salt
- 1/2 teaspoon cracked black pepper
- 1/2 teaspoon crushed red pepper
Directions:
- Heat oven to 350.
- Spray a pie pan with Pam. Layer the sliced zucchini on the bottom of the pie pan.
- Mix garlic, eggs, egg whites, half n half, parsley, salt, pepper, crushed red pepper.
- Pour over zucchini.
- Sprinkle the shredded cheese over the top – and bake for 35 to 40 minutes, or until the eggs are set and slightly browned.
- Cool for at least 10 minutes before slicing.
I forgot both my cameras at home yesterday – so this picture was taken with a leftover at night, in my wonderfully fluorescent kitchen lighting. 😀 I had this slice with 1/2 an everything bagel with a schmear of fat free veggie cream cheese – breakfast was 9 points.
I went to visit Tony at lunch. He still is a touch queasy, so I ate lunch at my office – I had a cup of my cauliflower cheese soup and a side salad – no pics! 🙁 Lunch came in at 9 points.
Since Hannah has most of her college classes today, I had to come home and let our dog out before going to the hospital. Our dog misses Tony so much – they are usually home together all the time. Whenever I walk in the door, he looks behind me to see if Tony’s behind me. He mostly sleeps in his cage, which he never does, and toggles between sleeping with me and Hannah at night. Poor puppy.
As I was driving home, I was trying to think of what I had in the freezer that would make a quick dinner. I remember I bought some Morning Star farm patties and started there.
Back in 8th grade, I remember it being a big deal to walk to Burger King on Friday’s with a big group of people. I think back in the day $2 was all you needed for a sandwich (burger) fries and a drink – maybe not even that much. One of my favorite things to get there was the breaded Parmesan chicken sandwich – at the time I didn’t even like pasta sauce, so this was quite a culinary leap for me!
My sammie: 1 chik’n patty, 1.75 ounce sesame bread, 3/4 oz. mozzarella cheese, 1/3 cup sliced zucchini (that I nuked for 30 seconds), 1/4 cup marinara sauce, sprinkled with dried oregano. I cooked the chik’n patty in the microwave, then heated the pasta sauce. I built the sammie and then put it in the toaster oven to melt the cheese.
Before microwaving the patty – not sure it looks “fresh off the grill” considering there were only “grill” marks on one side. Um, and it may be a tad bit freezer burned.
The verdict? It was really good – but if I didn’t know that “chik’n” patty was on the sandwich, I never would have tasted it. However, this was a filling sandwich. I ate this at 5:45 and it kept me full the whole night – not bad!
Stats for Monday:
- 29 points
- 30 minutes of walking the dog (15 minutes in the morning and 15 minutes at night)
- average blood sugar 102
Here’s hoping Tony’s day is better than yesterday! On my way to visit him before work – have a great day! 😀
UPDATE: Holly of the Balanced Broad is hosting BSI this week
– she chose . . . . CUMIN! Remember, you can link to any old post – it doesn’t have to be a new recipe you’ve made this week. 😀
I’m just catching up with some blogs and just read the good news about Tony’s NO-CHEMO, Biz!!! Woo hoo!!!! So delighted!!! I hope he gets to go home soon…but at least he’s in the best possible place right now, surrounded by doctors 24/7. But obviously, you are the best doctor for him too! 😉
So glad to hear that he is getting better 🙂 And as for this quiche – it looks GORGEOUS!!!
Great looking meals! I am so happy for you, that your loved one’s condition is looking up. Miriam@Meatless Meals For Meat Eaters
so sweet to hear about how much tony relies on your presence to soothe him to sleep. what a loving relationship you two have. i hope he’s home much sooner then later. i think about you guys a lot.
love the quiche, the layers are so pretty!
I’m glad that Tony is doing better and hopefully he will get to come home very soon! Your zucchini quiche looks so pretty and sounds super delicious!
I bet Tony misses eating at home! Is he on a liquid diet?
I hope he gets to come home soon!
P.S. You are doing so well with your eating lately. If Andy was in the hospital, I’d be pounding cake and carne asada. I am such an emotional eater. I think you are awesome.
Glad to hear Tony is getting better everyday! The zucchini looks so pretty in that quiche!
Fingers crossed that Tony continues to improve and can go home soon! I know you both will be happier when that happens.
That quiche looks great – I showed the picture to my mom and she thought so, too, so I’ll make it for her for a “recovery” meal.
Been thinking about you…hope you are doing ok throughout all of this.
I can sense from your posts, that you would have a calming effect on almost anyone! Hang in there Biz! That quiche looks divine by the way 🙂
Thanks for stopping by and leaving a comment on my blog
so nice that you have such a calming effect on Tony. I just rile up my husband.
I would never have known that BK would have a chicken parm. sandwich.
I am so happy to hear that Tony is doing better.
Good job making do with what you have on hand. Every once in a while I decide to inventory my freezer, pantry and frig, making a list of all I find and dreaming up meals to use up all the stuff I have on hand. I am always amazed at what I find!
Continued prayers and good thoughts coming your way from CA.
I totally forgot about walking to BK at lunch but as soon as you said it I remember the group of like 10 of us walking down there and getting the parm sammy!
Yours looks super gourmet.
Hang in there Tony – hope you are home soon
Glad each day is getting better- but I’m sure the waiting game is very frustrating. You are a fabulous wifey ;). The quiche looks super tasty. I don’t think I’ve ever made a quiche- I need to give it a go. And I love how you turned that frozen burger into something super tasty. <3
So glad Tony’s feeling better and better. It’s funny – they say nothing about discharge until all of a sudden they won’t be able to get rid of him fast enough! I chuckled when you said you had your cauliflower soup at work since Tony’s still a bit queasy…you know my youngest son always says cauliflower (and brussels and broccoli) make the whole house smell like “ASS”, so that was a benevolent gesture to spare Tony of that smell! The food looks great as always, and I endlessly appreciate you including the points plus stats! I’m taking a blog vacation, but I’ll be reading my favorites of which you are definitely one. Even without wanting to follow T’s progress, I love your blog, your humor, and your food!
oo i must buy that chikn patty!
Continued good thoughts and wishes for Tony’s recovery!!!! Love the ongoing good news!!!! Hang on puppy, Daddy will be home soon!!!!
Keep taking care of yourself too Biz!!! You are being amazing!
Awww……..you and Tony are so cute together! What a couple. 🙂
AW, pooor puppy pants. He will be so happy when his daddy comes home. I used to get the breaded chik’n patties when I was vegan–they are my favorite fake meat product to this day. I serve them like a McChicken sandwich with a smear of miracle whip (I prefer it over mayo but that works too) and lettuce on white bread. So good!
I smile a bit every time I read how well Tony is doing! 🙂 Keep the good news coming!
man, you are right…what a lovely quiche for so little points…and omg…that many zucchini this time of year for such a low price! Jackpot! glad you remembered them and they were still good! I am definitely making this one. Speaking of making one of your recipes, I made your tomato soup yesterday, it was so good, I changed it up quite a bit ( added onions, ya know…lol) but wanted to ask you if it would be ok if I posted it on my blog sometime…I wanted to email you, but couldn’t find an email address. let me know!
Can I tell you a story about those bk chicks? I used to work there when I was a teenager and I used to LOVE the chicken sandwiches…until one day I saw one that had not been cooked and was defrosted…it looked like sawdust on the inside. Never ate one since! haha So your version is not only healthier but I am sure soooo much better than the bk one!
Damn onion lovers! 😀 Post away – I have no problem with it.
What a wonderful way to use up zuccini. I love zuccinin season!
That Zucchini Quiche looks amazing… wonderful post. Waiting is the worst. Hope life gets to your new normal soon
Dave
Aww, I bet the puppy will be so excited to see Tony when he gets home. When Ray was deployed ours went crazy the day he came home, it was quite funny 🙂
I haven’t had Burger King in sooo long, but I liked their crispy chicken sandwich with the lettuce and mayo, yum!!
Even though the doc knows best and will let him go at the appropriate time, This hospital waiting is almost harder than the rest of it. I know you are looking forward to being able to just come home from work and stay home!
I love the way the zucchini looks in that quiche – another I’ll have to add to my list of “Biz” things to try.
I’m so glad to hear Tony’s doing well!! I’ll bet he’ll be glad to get home and eat some real food 🙂
He’s starting a clear liquid diet today – he asked the nurse if he could have a clear hot dog! 😀
Glad Tony is getting better each day! Still praying for you both!
I used to LOVE those BK breaded chicken sandwiches! So proud of you for sticking with healthy choices during this stressful time, Biz! You are amazing!!!
We used to skip lunch and walk to the mall to go to “Tippy’s Tacos” [sort of a Mom and Pop Taco Bell, but wayyyy better] and my Mom would give me a $1 for a school lunch and I could spend .99 cents for a mondo bean burrito and a Pepsi. SO Good! Those were the days [and man, I am old. :D] I was telling Wallene last evening how we could get a hamburger, small fry and a small drink at Mickey D’s for a buck. She was impressed. [again – me <—-OLD].
Okay, enough about me. heehee I am SO, SO, SO happy Tony is feeling better. It is frustrating being in the hospital, but it is better to be safe then sorry and he can get the best care possible there. [Not that I don't think you wouldn't spoil him rotten at home, ;D] He will be home soon, I just bet. I am glad that you are able to be there with him. That was always the best part when my family came to visit or Pooldad stayed the night with me.
Please give him my best love and hugs and tell him we can't wait to "see" him.
Hugs to you Bizzy.
So good to hear that Tony is doing well 🙂
Glad that everything is on the ‘up and up.’ The sandwich looks so yummy! I love how you beefed it up with veggies.
I’m glad each day is getting better and that Tony is well!
omg girl – I don’t know why i’ve never put zucchini in a quiche but you totally inspired me! =) It looks and sounds delsih!
xoxo
I bet puppy does miss him, aw. I can’t imagine. I hope you guys get some news on when he can come home so you can have that calming effect on him all the more 🙂 Have a great day, Biz.
Excellent. I am glad that Tony is healing and that you are able to be there as much as you can. I know it’s hard being pulled in so many directions so be sure you take care of yourself. I know you are with your foods. Your recipes are also so interesting.
Take care Biz and have a blessed day.
I’ll take your chicken sandwich over the other one anyday! Love the zucchini quiche too!
We used to walk to Burger King after school in middle and high school too. I would always get the grilled chicken sandwich because it was my grandma’s favorite and I wanted to be just like her 🙂
SO glad to hear Tony is doing well!!
Loved seeing the title of this post! 🙂
You made great food with what you had! I have to use the things in my pantry and freezer more…
