It still seems like slim pickins at the CSA, but with all the cool weather, I guess I can’t complain too much – I just hope I get boat loads of tomatoes and zucchini in August!

Tony loves strawberry rhubarb pie, but I am going to try to create a sugar free strawberry rhubarb crisp – in my mind it comes out terrific – you’ll have to come back and see!

Hannah left for work, I started the laundry and decided it was time to work out.  I ended up doing both Level 1 and Level 3 of Jillian’s shred!  It was a really good workout, and maybe I’ll be crazy and do all three at one time some day! 

After my workout my blood sugar was 80 😀 and I hadn’t had lunch.  I ended up fixing me and Tony “snack” plates.  Hannah would have loved it if she were home, she loves eating like this!

My plate:

  • 18 All-Bran Garlic Herb crackers
  • 1.2 ounces pepper jack cheese
  • 1 hard boiled egg, salt and peppered
  • 4 ounces sliced Fuji apple (best apple ever made!)
  • 5 cherries (that didn’t make it into the photo!)

Lunch comes in at 410 calories, 22 fat, 18 protein, 41 carbs, 8.5 fiber.

Have any of you cooked with rhubarb before – do you even like it?  I am off to do some research!   Come on back for dinner: Grilled New York strips with a Broccoli Quinoa side dish (not sure what that’s going to be yet!) 😀
