It was seafood night tonight, although to be fair, I did wrap the shrimp in bacon! I got the marinated ahi tuna from trader joe’s and grilled it on my indoor grill. I did a quick marinade on the shrimp – a touch of olive oil, minced garlic, italian seasoning, and a splash of lemon juice.
I cut 1 strip of bacon for me, and wrapped 4 shrimp and put them under the broiler while the tuna was cooking. I also bought trader joe’s frozen green beans – so good! I did a quick boil, then when they were almost done, drained the water and pan fried in 1 pat of butter with minced garlic.
Dinner:
- 3 ounces tuna
- 3 ounces shrimp
- 1 piece of bacon
- 3 ounces green beans
- 1/3 cup cooked white rice
- 1 pat of butter
