The Best Dairy Free Egg Free Pancakes

It always happens that when I think to make something, I am missing an ingredient.  Yesterday that ingredient was eggs.  But then I realized that there probably are many people who can’t eat eggs and I wanted to see if I could get fluffy, tender and delicious pancakes with no dairy and no eggs.  We have a winning recipe!  Be sure to share this recipe if someone you know is dairy free or egg free.

Baking Powder Magic

One of the most important steps for making amazing pancakes is letting the batter sit for at least 30 minutes before cooking. This gives the baking powder time to do its magic, creating bubbles that make the pancakes light, fluffy, and tender. Trust me, it’s worth the wait! At one point, I thought using more baking powder would make my pancakes even fluffier.  But spoiler alert: it doesn’t. In fact, using too much can leave you with a slightly metallic taste (ask me how I know 😂). Two teaspoons is plenty to get that perfect rise without any weird aftertaste. So mix up your batter, set a timer, and let science work in your favor!

The Best Dairy Free Egg Free Pancakes

These are hands down the best pancakes! Each one is 2 WW points. If you count calories or macros, each pancake is 89 calories, 0 fat, 16 carbs, 0 fiber and 4 protein.

Ingredients

  • 1.5 cups flour (I used all purpose)
  • 1 tablespoon non calorie sweetener
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 scoop FlavCity Vanilla Cream protein smoothie powder
  • 1.25 cups unsweetened almond milk
  • 1 tablespoon lemon juice
  • 1 banana, mashed

Instructions

    Mix the Dry Ingredients:
    In a large bowl, whisk together the flour, non-calorie sweetener, sugar, cinnamon, baking powder, salt, and protein powder until well combined.

    Prepare the Wet Ingredients:
    In a separate bowl, mash the banana. Add the unsweetened almond milk and lemon juice to the mashed banana and stir until smooth. Let the mixture sit for 5 minutes — this helps create a "buttermilk" effect for extra fluffy pancakes.

    Combine:
    Pour the wet ingredients into the dry ingredients. Gently mix until just combined. Be careful not to overmix — a few lumps are perfectly fine! The batter will be thick.

    Let the Batter Rest:
    Let the pancake batter sit for at least 30 minutes at room temperature. This step is key for the baking powder to activate fully and create light, fluffy pancakes.

    Cook the Pancakes:
    Heat a nonstick skillet or griddle over medium-low heat and lightly spray with avocado oil or your preferred nonstick spray. Scoop about 1/4 cup of batter per pancake onto the skillet. Cook for 2-3 minutes on the first side, or until bubbles start to form on the surface and the edges look set. Flip and cook for another 1-2 minutes, or until golden brown and cooked through.


    Serve:
    Serve warm with your favorite syrup, fresh fruit, or a sprinkle of powdered sugar.
