Cold Brew Coffee Cookies
The moment I tried the Caramel Cold Brew M&M’s, I knew I had to turn that flavor into a cookie. The rich caramel notes paired with the bold coffee taste instantly reminded me of my favorite iced coffee, and I wanted to capture that balance in a soft, chewy cookie. Yes, these cookies are 9 Weight Watchers points each, but around 190 calories.
These Cold Brew Coffee Cookies have deep espresso undertones, a hint of caramel sweetness, and just the right amount of chocolate to round everything out—just like those M&M’s. It’s the perfect treat for coffee lovers who want their caffeine fix in dessert form!
Ingredients:
- flour
- baking soda
- salt
- butter (I like using salted butter, but feel free to use unsalted)
- sugar
- brown sugar
- eggs
- M&Ms
- coffee grounds (sounds weird, but I just used used coffee grounds from my morning coffee pot)
- walnuts (optional)
- semi-sweet chocolate chips
How do you get perfectly round cookies?
If you’ve ever wondered how to get perfectly round cookies every time, the secret is in the cookie swirl trick! As soon as the cookies come out of the oven, take a larger glass, bowl, or round cookie cutter and gently swirl it around each cookie while they’re still hot. This helps even out the edges and creates a perfectly uniform shape.
Using a cookie scoop before baking also ensures that each dough ball is the same size, so all your cookies bake evenly. With these two simple tricks, you’ll have bakery-style, picture-perfect cookies every time.
Cold Brew Coffee Cookies
Whenever I want to make cookies, I start with the Tollhouse cookie recipe, and go from there. Cold Brew M&M's, walnuts and coffee grounds are an amazing addition to that cookie recipe. Crisp on the outside, tender on the inside.
Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 4 ounces cold brew M&M’s, pulsed in a mini food processor
- 2 tablespoons coffee grounds (just used grounds from my coffee pot)
- 1/2 cup chopped walnuts
- 2 cups (12-ounce package) semi-sweet chocolate chips
Instructions
Preheat your oven to 375°F (190°C).
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large mixing bowl, beat the softened butter, granulated sugar, brown sugar, and vanilla extract until creamy.
Add the eggs one at a time, beating well after each addition.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the processed cold brew M&M’s, coffee grounds, walnuts, and chocolate chips until evenly distributed.
Using a tablespoon or small cookie scoop, drop rounded dough portions onto an ungreased baking sheet, leaving about 2 inches of space between cookies. Bake in the preheated oven for 9–11 minutes, or until the edges are golden brown and the centers look just set. I baked these cookies in three batches, hence the 30 minute total cooking time.
Allow the cookies to cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
