When my husband was alive, our Friday night conversations went like this:
Me: “Hey honey, I am meal planning. What do you feel like having this week?”
Hubs: “I don’t care.”
Me: “Really? You don’t have a taste for anything?”
Hubs: “Nope, whatever you make is fine.”
While I loved that conversation because that meant I could fix whatever I wanted, when it came time for dinner, my husband would yell from the living room “what’s for dinner?” Every.Single.Night. It didn’t matter that I had the menu on a board in our kitchen.
One night I yelled “We are having salad!”
Hubs: “Is there going to be meat on it or on the side?!”
I think he would agree that my buffalo beef burger salad is not only a complete dinner, but utterly delicious because the star of this salad is Marzetti® Tastefully Dressed™ Buttermilk Romano Ranch Dressing. It is so bold and flavorful, and is the perfect partner to these buffalo burger “croutons.”
Buffalo Burger Salad with Marzetti® Tastefully Dressed™ Buttermilk Romano Ranch Dressing
Ingredients
- 12 ounces lean ground beef
- 2 tbsp buffalo sauce
- 6 cups romaine lettuce chopped
- 2 large carrots peeled
- 1/2 tsp grapeseed oil
- 1 medium tomato diced
- 4 large radishes chopped
- 2 stalks celery chopped
- 8 tbsp Marzetti® Tastefully Dressed™ Buttermilk Romano Ranch Dressing
Instructions
- In a skillet, char the corn in oil over medium high heat, just until you get some char marks. Remove from the pan.
- Divide the ground beef into 24 tiny patties (or 12 if you want bigger croutons). Salt and pepper the patties and cook one minute per side. Add 1 tablespoon of the buffalo sauce to the patties.
- Let's build the salad! Start with chopped romaine on the bottom, then load up on veggies: carrots, celery, tomatoes and radishes - use your favorite veggies! Divide the burger croutons on top of the salad. Drizzle with two tablespoons of Marzetti® Tastefully Dressed™ Buttermilk Romano Ranch Dressing and the remaining buffalo sauce.
