My brother loves peanut butter and  I thought of him the whole time I made this spicy peanut noodles with shrimp. 

If you were to ask my brother what his favorite food is, it wouldn’t be tacos or pizza.  It would be peanut butter!  

Not sure he would eat it with the shrimp, or sugar snap peas for that matter, but hey, I thought about you Charlie!

Fisher Nuts is a company that manufactures nuts literally 20 minutes from my house.  I had no idea they had their own brand of peanut butter, but check out those crunchy nuts.  You guys know how much I love not only balls in my mouth, but nuts too!  😂

To describe this sauce – perfect blend of salty, creamy, acidic.  If I could put it on my breakfast eggs I probably would.

First, what makes this recipe even easier and quick is that I used store bought cooked shrimp.  Mariano’s sells lemon pepper shrimp that is a great base for a lot of recipes.  It is citrusy, peppery, and can go in so many directions.  A whole container sells for $10, which is easily four servings for me.

Spicy Peanut Noodles With Shrimp

Yield: 1 serving
Prep Time: 5 minutes
Cook Time: 7 minutes
Total Time: 12 minutes

This recipe utilizes store bought cooked shrimp and ramen noodles to make a quick and delicious meal.

Ingredients

  • 1 package ramen noodles, cooked according to package instructions
  • 1 teaspoon peanut butter
  • 1 teaspoon soy sauce
  • 1 teaspoon sambal oelek (thai chili sauce)
  • 1 teaspoon minced garlic
  • juice of 1 lime
  • zest of 1 lime
  • 1/2 teaspoon fresh ginger, chopped
  • 1 teaspoon sesame oil
  • 1 teaspoon rice wine vinegar
  • 3-4 ounces cooked shrimp
  • 1/3 cup sugar snap peas, chopped
  • 1 carrot chopped

Instructions

  1. Cook ramen according to package instructions. Set aside.
  2. Mix the peanut butter, soy sauce, sambal oelek, garlic, lime, lime zest, chopped ginger and sesame oil. Set aside.
  3. In a skillet, spray avocado oil spray. Cook the sugar snap peas and carrots for 5 minutes over medium high heat.
  4. Add in the shrimp and cook to reheat for 2 minutes. Add in the ramen and sauce and cook for 30 more seconds, tossing to coat.
  5. Garnish with cilantro or parsley.

Where do you find ramen noodles?

Secondly, the ramen noodles are Ocean Halo brand that I found at Walmart.  They cook up in three minutes.  I hope my brother try this spicy peanut noodles with shrimp!
