These cottage cheese biscuits are so good.
Don’t you hate it when you think you want to make something and then realize you are missing an ingredient? I started to make biscuits yesterday morning and had no milk of any kind. No almond milk, skim, etc. You know what I had? Hazelnut Nutpods! Cottage cheese is healthy!
As soon as I grabbed the nutpods out of the fridge, I saw the cottage cheese and thought, what the hell – why not see if this works!
First step is to cream the cottage cheese. I added a cup to a tall mason jar and used my stick blender to blend it until it was creamy.
Can you taste the cottage cheese?
Nope!
Believe it or not, there is only ONE tablespoon of butter in these biscuits – simply grate with a box cheese grater into the flour mixture and give it a mix to coat. Once the dough is incorporated I just put on lightly floured counter and rolled it into a rectangle to cut my biscuits into six.
Then brush with nutpods and bake at 450 for 10 minutes.
That bottom crust tho!
I made cottage cheese biscuits and gravy for breakfast yesterday. I had every intention of using Jimmy Dean gravy packet, but realized that it expired in 2016 – lovely! My recipe for sausage gravy for one is below.
Cottage Cheese Biscuits
Who knew that creamed cottage cheese would make a moist biscuit?! No matter which WW plan you are on, each biscuit is 4 points.
Ingredients
- 1 3/4 cup self-rising flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon cold butter, shredded in a box grater
- 1/2 cup creamed cottage cheese (fat free)
- 4 tablespoons nutpods
- 1 tablespoon vinegar
Instructions
In.a large bowl mix the flour, baking powder, baking soda and salt. Add the grated butter and toss to coat. In a separate bowl, mix the cottage cheese, nutpods and vinegar and add that to the flour and mix just until combined.
Put on your floured surface, shape into a rectangle and cut six biscuits. Brush the top with a bit of nutpods and bake at 450 for 10 minutes.
Turns out my sausage gravy pack expired in 2016 🤣
So I made sausage gravy for one: 1 ounce sausage, 1 teaspoon flour, 1 teaspoon butter and 2/3 cup skim milk. Cook the sausage, add the flour and butter and slowly stir in the milk until thickened. Salt and pepper to taste.
With my sausage gravy, brunch came in at 9 points – so delicious! Let me know if you make these biscuits! If you love biscuits – try this almost butterless biscuit!
