I loved these skinny pork BBQ sandwiches.

Hannah makes fun of the fact that I more times than not defrost pork and then never do anything with it and a week later when we clean the fridge, I end up throwing it out.

Not this time!  I had Butcher Box pork chops and I wasn’t about to waste those.  I cooked two pork chops and made four meals out of them.  I love pork chops!

The first night I had sliced pork and I made macaroni and cheese balls.  Um, best decision ever!  The macaroni and cheese recipe I just posted last week?  I took a melon ball and crushed up some Safe + Fair Jalapeno pea chips and used that as a coating, sprayed it with avocado oil and air fried for 7 minutes at 360.  They were delicate once I took them out of the air fryer, but after a couple minutes firmed up.  So good.  Don’t forget you can use my discount Biz20 to save 20% off your order.  If you spend over $20 after my discount, you get free shipping too!

How to make a skinny pork bbq sandwich.

I recently discovered G. Hughes sugar free sauces.  The first one I bought was a spicy BBQ sauce – you can have up to 3 tablespoons for zero points on any WW Plan.

This is so good.  I made three pork bbq sandwiches last week.  Just chopped up 3 ounces of leftover pork and heated it up in the BBQ sauce, then made a quick cabbage and apple slaw (1/3 cup sliced apple, 1/3 cup sliced red cabbage, 1 tablespoon Marzetti’s lemon vinaigrette and a splash of red wine vinegar) and made leftover baked potato fries.  The pork is 3 points and the bun is 3 points – so that’s a generous sandwich for 6 points!

The slaw got better the next day.

This weekend weather was perfect.  Mid 70s both days.  Jacob’s Mom and I tagged along Hannah and Jacob’s house hunting and we were so excited when they found a townhouse they love and they put an offer on it and it got accepted!  They have a home inspection on Wednesday, so fingers crossed that all goes well.
