Yesterday I went to Orange Theory, and while tough, it’s a great 60 minute workout.  What I also love is that it’s a mile away from Meijer Grocery store, which is the only store that sells Certified Angus Beef ® brand.  

If you are on a budget, seek out this cut of beef.  It’s called the poor man’s ribeye, because it usually costs less than half the price of ribeye, and truth be told if I did a blind taste test of a chuck eye and a ribeye, not sure I’d be able to tell the difference.

It has a bit of marbling, but that is flavor.  I cook it whole, and then trim it right before eating.  I used Dak’s steakhouse seasoning on my steaks, and let them marinate on the counter for an hour until they got to room temperature.

Now I usually tell you to cook your meat to temperature, but I don’t usually do that with steak because it cooks for such a short amount of time – well, for Jacob and I who love medium rare beef.  If you don’t have a chimney to start your charcoal grill, get one.  They are cheap, around $10 and you don’t have to use lighter fluid.

I put my coals on one side of the grill.  I like having the option of having a hot side and a cold side – which is called indirect grilling.  However, last night, I grilled right over the coals.  But if I felt the coals were too hot, I’d have the option to pull them over to the cold side.  And yes, I know I need to clean my grill 😀

Based on the thickness of these steaks – a little over an inch thick, I decided to grill just 5 minutes a side.

I let the beef rest for about 20 minutes before slicing.

Um, that looks pretty good to me!  Once I trimmed some of the fat off, it’s a really lean cut of beef.  And look at those delicious mustard seeds!  You still have time to save 10% off your order of Dak’s steakhouse seasoning – just use my code Bizzy10.

I served mine with 1/2 a twice baked potato (5) four ounces of beef (5) and leftover carrots from lunch with my boss on Friday.  And Hannah cooked up some portabella mushrooms.  #swoon – Sunday dinner at it’s finest!

I had an amazing day on Saturday – which will be a whole post by itself because it was so powerful.  My instagram daughter, Christina, has endometriosis and has been trying to start a family for years.  To support her, I attended the first InfertileAF summit that my friend Tia and her friend Lindsay put together.  They literally put this all together in 87 days.  87 DAYS!  From getting the venue together, to speakers, sponsors, swag bags – it was amazing!

Tia and Lindsay are an amazing team, and their future is so bright. I see them traveling the country sharing their stories – no matter what your infertility story is – that you keep trying IVF, you use an egg donor, surrogate, or just walk away from motherhood.

I am so proud of the work they put into it.  I put stories of my day on my Instagram page, and got at least a dozen comments asking why I attended – I already had a child.  I was there to support my friend Tia and my friend Christina – Tia is embracing the non-mom life and Christina is still actively pursuing starting a family – I support them exactly the same, so that’s why I spent my Saturday with them.

I missed going to my WW meeting because of the timing of the event and I was driving in a completely different direction.

I was so sad that I missed my friend Jeana reach lifetime!  She’s lost over 35 pounds, and was trending on WW over the weekend.  So proud of her dedication and persistence, not perfection.  GO JEANA!!

And we are back to Monday.  I love Monday’s because it’s a new start to the week, I have my food and workouts planned, and appreciate each day that I am alive.
