I was going to post the recipe for my cream cheese scones I brought to work for treats day – but every single one got eaten before I was able to take a picture.  Promise to post it on Monday because they were so good!

Yep, it’s nearly the middle of April and we are back to winter weather.  While usually 39 degrees isn’t too bad, it was so windy and felt like it was in the 20s.

There was a work breakfast so I took advantage – this was a spinach tortilla sammie and it was delicious.  I need to find spinach wraps to make this for my lunch next week.  It had red pepper, spinach, ham, eggs and cheese – I counted it as 8 points because I didn’t make it.

Jenn and I walked to Mariano’s – I didn’t bring a lunch and she was picking up stuff for her dinner.  I always check out the discount rack at Mariano’s – duh.  Look at that honey bun!  It’s only 700+ calories 😛

Jenn’s son is vegan and/or vegetarian – I can’t remember, but I think its vegan.  I saw this product – apparently two tablespoons of this makes a fake egg?  But $9 – holy balls!

I got stuff to make a chicken finger salad – I prepared mediteranean salad with couscous, then I bought a chicken finger from the hot bar and I had Annie’s light goddess dressing at my office.

For those playing along, after my grocery purchase yesterday, I’ve spent $26.84 on food this week.  Nice!

Yes – my beloved chicken finger salad.  It was born in all the hospital cafeterias when Tony was hospitalized.  It always appauled me how gross hospital food was – that doctors and nurses relied on during their long shifts.  I could usually put together a decent salad from the salad bar, and I would buy one or two chicken fingers and cut it up and put it on top of my salad.  Mariano’s had raspberries on sale, so I added that to the mix.  So good!  This salad is 6 points too!  Three for the chicken finger, 1 for the cheese and 2 for the salad dressing.  So.fricken.good.

I knew I was going to make something with shrimp for dinner last night.  I wasn’t all that hungry because I didn’t eat my salad until nearly 3 p.m.

I decided to make salt and pepper shrimp in my air fryer – I am close to greatness on this – promise to post the recipe soon after I tweak it.

The shrimp is only 4 points with the flour/panko bread crumb coating and the 2 teaspoons of oil I used.

I didn’t even take a decent picture when it was done – ha!  But I need to work out the timing in the air fryer – the shrimp were slightly overdone but crunchy!  And not bad for a 4 point dinner.

I’ve got a busy weekend – my sister-in-law and niece are in town this weekend, so after WW I’ll be heading to my Mom’s to hang out with them.  My Mom’s got a concert on Sunday and we’ll be going to that with my sister and then probably dinner out afterwards.

It’s the last weekend of my Diet Bet, and according to my scale at home, I still have 2.2 pounds to lose before the 16th.  Not sure that’s going to happen, but it’s the first time in a long time where I haven’t gained weight my birthday month and after, so that’s a victory in my book!
