I chose not to do a full weeks grocery shop because I still have plenty of food in my house. Hannah is just happy that a) I am using up the meat I already have (even though I am going through meat bin withdrawals) and b) that I am using up can goods – to make this spicy three bean soup, which takes literally 5 minutes to put together.
The best part about this soup is that you can use any combo of beans that you like – unless you use chili beans in sauce, you will have to count points for that one.

I can’t wait to post the recipe for these french toast sticks. I put in the hashtag #wwfreestylerecipes and I found this girl who made these using the 2 ingredient dough – she added banana and blueberries to hers, I added yeast and grapes to mine. When I tasted them not long after they came out of the oven, they tasted kind of like a sweet bread stick, but I sliced them thin and toasted them at work and I loved them way more toasted. I’ll be posting that recipe tomorrow – each stick is 2 points. I added two points of goat cheese to my spinach omelette, so breakfast came in at 6 points.
I didn’t have a chance to walk with my sister yesterday – month end work stuff and it was just too busy. I felt a little under the weather anyway. I was so busy though I didn’t eat my bean soup until 3:15! With the cheese and tortilla chips not shown, lunch was 4 points.
I had no idea what I was going to make for dinner, other than I had defrosted some chicken sausage. As I was on the train home (which was a 90 minute commute thanks to a car getting stuck on the tracks) I remembered I had prepared mashed potatoes, and well, bangers and mash came to mind, even though I’ve never had that dish and I don’t know if it’s remotely close to that dish – I just liked saying it. “I’m having bangers and mash!”
I cooked the sausage for 10 minutes and removed from the pan. I added the mushrooms and a pat of butter and cooked the mushrooms until golden brown, then added the sprouts and cooked for one minute. Removed that from the pan and made a quick pan sauce with a teaspoon of butter, teaspoon of flour, teaspoon of mustard, 2 teaspoons of garlic and 2 cups beef broth.
Simply melt the butter, flour, mustard and garlic and cook for 1 minute. Slowly add in the beef broth, and stir over high heat until thickened. So simple, so delicious. The chicken sausage was 2 points, the mashed potatoes 3, the pan sauce was 1 and the butter used to saute was 2 points.
I never used to like Brussels sprouts but turns out I like them almost raw – just a bit of wilt to them and they are delicious.
Now if you’ll excuse me, I am going to nap on the remainder of my train ride in. I didn’t sleep well – I definitely think I have a head cold, and kept waking up to sneeze.

I love how the green of the Brussel sprouts make the dish look so bright and fresh. I like the extra flavor they bring too. Not sure I will be able to make those sticks, like ever. I just keep hearing Hannah say how they look like big D>*s. You guys are such a hoot!
I am actually going to tweak the recipe because after the second day, even in a ziplock bag, they became hard as rocks. Back to the drawing board! 😀
