Did you know that my skinny pizza dough can also make naan bread? I just used two ounces of pizza dough, brushed a non-stick skillet with a bit of grape seed oil, then rolled out to about a 5 inch circle. Let it cook on one side until you see bubbles forming over the top, brush with a bit more oil, then flip and cook 2 minutes more. That’s it! It was the perfect base for my breakfast sammie. 2 points for the naan, one point for the ham, 2 points for the cheese – 5 point breakfast.
My sister and I walked to our happy place Mariano’s yesterday at lunch. We both had to pick up a few things – I just needed Kleenex and Clorox wipes for my desk. Even though I didn’t buy any, I did fondle all the packages for gummies. 😀 Touching all the food . . . always.
When I got back to my desk my blood sugar was 48 – dangit. I just basically threw this plate together, took one pic, and started eating. Oh, I did buy that orzo salad from Mariano’s off their salad bar – its an orzo salad with dried cranberries and it was delicious. I may make something similar for Thanksgiving.
I love how many people are making my skinny pizza dough – makes me so happy – especially when people do stories and have their kids yell “Party Pizza Wednesday!” or whatever day they are making it. Last night I took the chicken taco leftovers and turned it into this chicken enchilada pizza – the base of the pizza is just green enchilada sauce mixed with fat free refried beans, chicken, peppers, pickled jalapenos with mozzarella cheese. This pizza is 9 points. – 4 points for the dough and 5 points for the cheese.
When it came out of the oven, I chopped Bibb lettuce on top, plain Greek yogurt for the sour cream, and Tapatio hot sauce. So good!

And yesterday was my other niece Claire’s birthday – can’t believe she’s 17 years old! She’s the youngest grandchild, my Hannah is the oldest.
I am off work tomorrow – helping my Mom with her annual chili dinner at church. All I know is there will be a shit ton of onions, but I am a team player. While I do hate onions, I am an expert at cutting them thanks to The Chopping Block.
We may get some snow today, although it looks like it’s mostly south of Chicago. I feel like we really didn’t have a fall. But then it’s okay to start bringing out my snowmen, right?!
