The night before last as I was scrolling through Instagram before calling it a night, I saw Jennifer from The Lemon Apron post these everything bacon apple breakfast biscuits, and I was pissed that I didn’t see the recipe earlier because I had everything to make them.  Look at how gorgeous they look!!

Flakey, crunchy crust, tender on the inside, salty, sweet from the apple.  Swoon.  It didn’t matter that I didn’t get home until 7:45 last night.  I literally walked in the door and turned the oven to 425, didn’t even change my clothes, and got to making biscuits.

I did tweak her recipe a bit – and this will be a work in process for me – I am not ready to post my recipe just yet, because I want to change-up a couple of things that I did.  I thought I’d reduce the amount of butter in her original recipe, but only 4 tablespoons of butter for 12 biscuits – nice!

If you belong to Sam’s Club (I’m sure Costco has it too) buy this giant bag of real bacon bits.  Not sure how it lasts so long in the fridge, but it’s 1 point per tablespoon – about the equivalent of one slice of bacon – great to add to quiches, scrambled eggs, and these biscuits.

I also used Trader Joe’s lite mozzarella cheese for the cheese – I am going to switch this up – use 2 ounces of this cheese and 2 ounces of extra sharp cheddar – the cheese kind of got lost in these biscuits.

I tried to follow her instructions (I’ll have to see if she has a saved story on her Instagram for this step).  She said to roll out into a rectangle, fold it towards you, roll out gently, turn and fold again – I did that 3 times.  Here is where I will make a change next time, because there will be a next time.  During this process I think my butter softened, so after I roll them out and cut the biscuits, I will put the biscuits in the fridge for 20 minutes for the butter to get cold again.  I will also bake them closer together so it helps them raise taller.

Lastly, I used a mason jar as a cutter, which kind of “rounded” the top edges which I think prevented them from rising so much.  I know I have biscuit cutters somewhere, but I think that was a kitchen gadget that Hannah decided I didn’t use very often, and I’m sure it’s in a box in my basement with other stuff she’s determined is not necessary in MY kitchen. 😀  

I will also dice the apple smaller, or maybe even shred it??

With all that being said, these were delicious!  Hannah ate one and declared them “perfect!” although I didn’t tell her there was apple in them until after she tried it.  But she loved the combo.  I forgot I took my Trader Joe’s EBTB seasoning to work, so I had to make my own version, and you’ll be very proud of me that I added minced onion.  You’re welcome.  

I put this into the recipe builder and they are 4 points each.  I think if I added regular cheese that might bump it up to 5 points, but with eggs and fruit, it’s still a 5 point breakfast.

Yesterday’s breakfast was so good – I haven’t had apple/cheese bread in a long time.  I used to make it at my old office all the time because we had a toaster oven.  It’s two small slices of sourdough bread toasted (3) topped with spinach, thinly sliced honey crisp apple, scrambled egg whites and TJ’s lite cheese (1).  

One of my friends from work (hey Vanessa!) took me out to lunch yesterday.  We went to Early Society and they have one of the best single patty burgers in Chicago.  It’s flavorful and delicious.  Luckily I didn’t finish my breakfast until 10:30 so I wasn’t all that hungry, so I only ate half and a few fries.  I still called lunch 15 points to be on the safe side.  

We sat outside and it was lovely!

She got the turkey club which looked delicious with Parmesan fries on the side.

I finally ate my dinner at around 9:00 – Hannah had cooked up some chicken tenders, so I took half of a tender (2) and broiled it with lite mozzarella (1) and had it in a biscuit with spicy pickles and hot sauce.  Delish!  For the record, I also ate a slice of apple pie that I made last weekend.  Totally worth the 7 points, even though I really didn’t have the points to spend.  It’s not very often that I make pie, so I am enjoying it while it’s there. 

Before I went to bed I saw that Jennifer gave me a shout out on her story – so sweet!  She has like 65,000 followers on Instagram 😀  Thanks Jenn!

I am going to possibly get a record amount of steps today.  I am doing a 5k after work (walking!) with my office.  It’s an annual event, and should be fun.  They changed the location, so I may walk to the venue (2 miles – I have an hour to get there) and then walk the 5k, and then possibly walk 2 miles back to the train station.  We’ll see how that goes!
