When I got on the train platform, I realized I forgot my coffee in the car. Dangit! And I forgot to refill my train water bottle. Then . . .I got my period. On the way to work. I know, TMI, but I wasn’t prepared at all. I thought, no worries, I’ll just fix it when I get off the train in the train station bathroom. But then my train was running 15 minutes late – really?!
When I got off the train, I waddled to the bathroom, only to find closed for repairs. Awesome sauce. I was starting to think “well this is a shitty way to start my day!” And as I was crossing the street, I assumed him to be a homeless man, was trying to push himself in a wheelchair, had one let cut off at the knee, the other leg was cut off at the ankle, and he was carrying what was probably all his belongings in a large garbage bag on his lap – and had part of the bag in his mouth so that it wouldn’t fall off.
How about a slap in the face that while it was an unfortunate start to the day, I could walk into any store, buy new clothes (and underwear!) and pour myself a hot cup of coffee and a large glass of ice water and sit at a comfortable desk all day.
My breakfast was super easy – I made a zoodle omelette – 2 eggs, 1/2 cup egg whites, a mix of zucchini and yellow squash zoodles, 1/2 ounce of cheese with fruit on the side.
I met my sister at Target, because you know, underwear 😛 and we walked around for a bit. It was gorgeous – 75 degrees, sunny and zero humidity.
I made turkey/beef burgers for meal prep this week. I am not the hugest fan of all turkey burgers, unless it’s all ground turkey breast. If you are looking for the best turkey burger recipe though, I’ve got it here – my secret? A tiny pat of butter in the middle of the patty.
My bun got a little smooshed in my lunch bag, so while the food photography is awful, this was delicious. I seasoned my burgers with Code 3 Spices Rescue Rub so it was super flavorful. This is their all purpose rub and they say its good on everything from meat, to veggies, even flavoring soup! Lunch came in at 10 points.
I added some basil to my burger that my sister gave me out of her garden, and suddenly saw an inchworm! It looked like the stem of the basil leaf at first. Thank God it moved when I was taking the picture otherwise I am not sure I would have seen it.
If you have a Sam’s Club Membership, or know someone who does, buy this shrimp. It’s a 2 pound bag, it costs $17 and is worth every penny. They are large – and a minimum of 40 shrimp in the bag and I usually have 5 shrimp per serving, so it’s a little over $2 a serving. I don’t even think you can buy a coffee at McDonald’s for $2! They defrost in a matter of minutes too.
I had a taste for pasta, and as I was coming home from work, I decided that a spicy Cajun shrimp pasta dish would be delicious. My twin sister and I are opposites when it comes to beef and pasta. Jenn probably has at least two pasta dishes a week, and beef maybe four times a year. I have beef a minimum of two meals a week, and don’t make pasta very often.
I decided to add some zoodles to this dish to bulk up the measly 2 ounces of cooked pasta – I don’t like mushy veggies, so I put the zoodles in my strainer and then poured the hot pasta over the zoodles, and they steamed perfectly.

I love all my new stuff from Hobby Lobby – the tray was $5.24, the silverware was $9 for a set of 4, my new favorite blue plate was $2.72 and the napkin was $1.10.
This dinner was delicious – tasted decadent, but it was light, cheesy, spicy and delicious. I could see this as a first course for a dinner party.
It’s funny but I keep having a recurring dream where I do “farm to table” dinners at my house. In my dream I have this gorgeous tent in the back yard, with all these cool lights and big stones as a walking path leading to the tent.
I have staff – one bartender and one server, and I charge $100 per person with drink for a 5 course meal. Hey, dreams can come true, right?!
I am killing it on the steps – my goal is a minimum of 10k a day. Since my office is closing early, I am going to hit up the gym this afternoon.
What are your plans for the 4th? My Mom is coming over, and not sure who on Jacob’s family is coming over. But I am in control of the food, so I am not too worried about it. Depending on how many people, I may do a reverse seared cowboy ribeye. Yum!
That was a crappy morning but you turned the mood around. It is all about perspective. I have to work on that as sometimes I need to look at things from a different point of view. I have tried to make those zoodles & they always turned out mushy. Thanks for sharing the idea on how to cook them. I don’t have pasta due to having to eat gluten free. Most GF noodles sucks so I gave up. But now with your cooking method I might add zoodles into the mix. Love the blue plate! I just bought a set of blue plates. Have a great 4th.

Beth you NEED to do you dinner idea! Seriously…the stuff you come up with is amazing and for $100 I would buy in without hesitation. I am sure many others would do the same.
