I had such a fun day yesterday. I spent nearly all day in the kitchen and it made me very happy. The kadults were around in the morning, then headed to work, so I had the house to myself from about 11:00 – 6:30 p.m. Don’t get me wrong, I love having them here, but it is nice to have a quiet house, blaring my music while I am cooking, and basically just be me.
With this new #LiveFully mantra I have going on for 2017, I forgot to tell you that last Friday night as I was on the train coming home, Hannah texted me and asked “how about ice skating tonight?!” I immediately responded “absolutely!” Mind you, neither of us have skated in over 10 years. Hannah actually used to be a very good ice skater – she took to it really well. Me? Not so much. I am the person hugging the side rails pretty much the whole time. Note to self – try looking into the camera
I was a bit nervous, but I thought “this is fun!” And it was. Until we had to take three rest breaks within the first 15 minutes. We both were like “our feet really hurt!” My left foot especially – I thought maybe my sock slipped down and was rubbing against my skate. Nope, I forgot – since my left foot is smaller than my right foot, I should have worn two pairs of socks on the smaller foot because I got a blister the size of a quarter just after 15 minutes of skating. Oh well! We basically paid $1 a minute to skate. We then walked around Wal-mart and I finished getting my 10k steps in at the store. 😀
My meal prep is on fleek guys. I made my blueberry pancakes for the week, and some to put in the freezer for next week. I made another loaf of my muesli Starbuck’s copy cat bread, and I baked some eggs. I think it was on Martha Stewart where I first saw her bake eggs to make hard boiled eggs. I’ve tried making them in the past, and while I’ve made them perfect on the stove before, it’s like one out of every 10 times I try to make they turn out right. Either they are underdone in the middle, or the shell is impossible to get off and I lose most of the egg white.
I even made a video on my iPhone!
I am making my version of a Starbuck’s protein box. I tried to make smaller “loaves” of the bread that are like the ones in the Starbuck’s box, but they didn’t turn out very well.
That actually made me laugh out loud when I took it out of the oven! It tasted good, just doesn’t look real pretty. In any event, I figured out the points, and it’s 3 points for 1.5 ounces of bread. That looks much better, doesn’t it?!
It was an unusual eats day because I was home. I made breakfast wontons for 6 points.
I went on a Sam’s Club run for egg whites – six containers for only $5.98! I also found this:
You can have 4 tablespoons for 1 point – when I came back home, I dipped some carrots and cucumbers in it as a snack. Then I ate the burger portion out of a leftover burger I had last week for 5 points while I was cleaning out the fridge. Then I started cleaning out the pantry, and before I knew it, I’d eaten 2 Oreo cookies, 1/2 cup of Chex mix and a cheese stick – which added another 11 points to my day. Gah. It was mindless eating too – I wasn’t that hungry, but the good part about this story? I tracked it all. And I am done beating myself about it because I still have 22 weekly points left and it’s all good.
Chicken wings were on sale for .69 cents a pound, and I am a sucker for chicken wings. 5 ounces is 12 smart points, (I may have fried a couple pickled jalapeno slices on the side for 2 points) so dinner comes in at 14 points.
That’s I think the highest point dinner I have on my menu this week, so I wanted to have it earlier in the week before weigh in. I chose yesterday to be my rest day. I got a lot done around the house, did laundry, took an hour nap with the dogs. It was a good day.
Today is my first “official” day at the law firm I am working as, as they have hired me full time. I am sure I’ve mentioned it, but maybe not, and I am too lazy at this point to go back and look. I have orientation today – which I think will actually be beneficial since I’ve been there for two months – I never understood having orientation on your first day of work, because they may as well be speaking Japanese. My boss doesn’t get back into the office until Thursday, but even with him gone, I’m still busy.
Today is a new day – my food is all packed. If I don’t hit the gym up at lunch I plan on going tomorrow night after dinner. I am feeling good!

I watched the egg video from your phone and thought what… no way… Love that Lori thought your little breads were snowmen., I could see you doing that. I don’t know how this post slipped past me yesterday. I was crazy busy at work kept telling myself not to get distracted and stay on task. I want to know how the fryer keeps making its way to the kitchen from the basement ? 🙂 Owie on the blister. Sorry it cut the fun short. But hey, you gave it a go.
I made the baked “hard boiled” eggs last night after seeing your FB post and they were AMAZINGLY easy. This, coming from the person who can’t shell aa HB egg to save her life. I always get impatient and dig too deep so banging them around in the pan was super fun, though my dog didn’t think so. He got spooked and ran from the kitchen to hide under the Christmas tree. Oops? 🙂

I was thinking about roasting jalapenos last night with dinner! I have a bunch in the fridge that will go bad soon and one of my goals this year is to waste less. don’t stress too much about the mindless eating, you identified it and you’re correcting it. that’s all you can do!

I’ve had several flavors of those mezze dips from Chobani – they really are good and sometimes you just want something to dip your veggies in. Although I have thought “I could make this myself” many times.
I think mindless eating is easy to get into and hard to get out of, especially after the holidays. While my meals were on point yesterday, I snacked way more than I wanted to.
I didn’t comment on your last post because I just read it this morning, but I think it’s great that you and the kadults are doing separate meal plans. I ultimately think it will help you reach your eating goals easier.
I really like the Chobani dip too – I plan on using it for a topping on tacos instead of sour cream ?
