Hannah was working yesterday so I stopped by the coffee shop she works at and picked up one of their Greek yogurt parfaits. I kept telling her that I love the Greek yogurt that is in the parfait, and I was convinced it was Chobani. Hannah checked it out and guess what? It’s Sam’s Club Kirkland brand Greek yogurt!
I chose mixed berry for my fruit. It was a bit frozen so Hannah put that in a separate cup from the yogurt and granola, and when I got to work I just nuked it for about 30 seconds and it became almost like a mixed fruit sauce – so good! I love the “My Bizzy Kitchen” mouse pad my Aunt Martha gave me!
The day before yesterday Jacob and Hannah had my Rogue and filled it with gas, washed it AND cleaned the inside – so nice! It looks so good – can’t believe my car is almost three years old already though!
I ended up walking 2.25 miles at lunch on an 8% incline. I ended up watching a Street Food episode on the travel channel and now have added a new destination to my bucket list: PRAGUE! I know, kind of crazy, but they kept showing all these amazing food markets and food stalls and it all looked amazing! Have you or do you know anyone who has been there?
Lunch was leftover chili mac – so good.
I had to do a grocery store run in the afternoon because our bottled water (Ice Mountain) is all gone and our next delivery isn’t until tomorrow. Mariano’s sells 35 bottles of water for only $4! I walked by the gelato station while walking to the back of the store and stopped in my tracks when I saw this:
OMG. Ferrero Rocher gelato?! Every year for my step-sons birthday and Christmas we always bought him Ferrero Rocher. Um, I may have gotten the $1.25 mini cup – insulin worthy!
After work I did my strength workout:
I upped the weights and ended up doing a 40 pound barbell for the dead lifts – boy could I feel that in my back! I know I am only on week two of my strength training but I feel stronger. Then finished off on an elliptical for 40 minutes while watching Fixer Upper on HGTV.
I pinned Damn Delicious’s quinoa enchilada casserole a couple weeks ago, and never ended up making it. I wasn’t actually sure though if it was meant to be a meatless entrée, or a side dish. I knew Hannah would eat it as an entrée with homemade chips, but I made steaks on the side for Jacob and me.
Nice and bubbly out of the oven – after I let it sit for a few minutes, topped it with diced tomato and cilantro. The avocados looked like ass at the store this week, Hannah said she’d definitely have avocado on hers next time.
This is definitely a keeper. I will say that it is a bit. . .soupy in the beginning, but we noticed the longer it sat the more it stuck together – maybe the quinoa just needs to take a while to soak up all the liquid?! And it was the first time Jacob had ever had quinoa and he loved it.

So it’s weigh in Wednesday:
So I am not going to win any awards for fastest weight loss, but to tell you the truth, I just don’t care. When I look at some people who eat a macro diet and have 7 days of poached chicken, sweet potato and broccoli for every meal, I kind of want to throw up. I like food too much!
That being said, I know there is plenty of room to tweak my meal plan and, ahem, put away the wine now and again. But I am proud of myself. I could have easily put on 25 pounds now since Tony died and I am happy that I haven’t eaten a whole deep dish pizza by myself every night – so that is my non-scale victory!
Alright, time to get this show on the road – make it a great day!

If I had to eat the same thing over and over again to lose weight, I would chose to be overweight. Eating the same every day –> BORING!
I haven’t been to Prague yet but it’s on my wishlist. It’s not really close to the Netherlands but a plane ticket isn’t too expensive so if you go there I will do everything in my power to meet you there and we can explore the city together.
My Fitbit app and computer don’t always sync properly either. No idea why that is.

It’s a FitBit app for my phone, tracks my steps through the day and then I sync with my computer at night 😀
Maybe we should have a Bizzy kitchen meetup in Prague. I would be up for it 🙂 The casserole looks quite yummy. I have never cooked quinoa but have had it in some cold salads. I too love food too much. I know someone who eats only to sustain her body not for the taste. I can not imagine. She says it gives her more time to focus on other things and not food. She says it also gives her a clearer mind and more energy,
OMG, that would be so fun!! I think we should do it!! That’s all I focus on is food – ha!
I probably know a half-dozen people who’ve been to Prague, including my daughter, and all have given it rave reviews. Plus, my friends said it was really inexpensive. It’s on my wish list sof places to visit, for sure.
Your casserole looks amazing but for some reason quinoa does not like me. I know it’s supposed to be a complete protein & all, but it upsets my stomach. Odd, right?

I finally found quinoa that is cheaper – I could only find Bob’s Red Mill before and it was like $9 a bag!

You’re doing awesome. You work out a shit ton, I’m surprised you havent lost double the amount. You also dont eat dessert( my total weakness). I seriously can’t get into greek yogurt, unless its in a smoothie and then I dont drink smoothies that often because I’d rather eat food.
I can’t regulate my blood sugar drinking smoothies – it takes me so long to drink them and I’ll test a couple hours later and my blood sugars will be in the 300s!

I eat salad for lunch every single day. Macros work! But the key for me is to allow cheats. I may or may not have had a glass of red wine in a plastic cup last night (klassy, I know). Husband took me on a DATE to a concert. An actual DATE. Hired a babysitter and everything.
Yes Marcia, you are correct about that – I have to remind myself that I am almost 47! Hooray for a date night with the hubs!
I think Kirkland is Costco’s brand. I will not whine about us not having a Costco around here…but if it happens, I’ll drop my Sam’s Club membership like a hot potato and gleefully join Costco.
Fixer Upper! Love that show. I wish I could get Chip and Joanna to come do their magic on my house. Why not – they’re only 90 minutes away! Oh yeah, I guess I’d have to come up with the money to pay for the renovations. 🙁
Oh, and I am in complete agreement with you on those bland boring macro meals. And how gross would everything be tasting by the end of the week, when they cook it all on Sunday? Blech.

Your yogurt story reminds me of a balsamic salad dressing that I LOVED from a local pizza place. I finally asked them if it was house made and they said, “No, it’s Ken Steak House brand.” LOL!
I am not really a fan of quinoa, but I may give this a try, it looks delicious. That lunch of chicken, broccoli, and sweet potato doesn’t look half bad, but not every damn day. I’d be chocking down the broccoli. Have a great day!
