Debbi from Debbi Does Dinner Healthy and I have been friends for at least 4+ years now. She’s a stay at home Mom, runs a day care and is an all around busy Mom. She is also a great freezer prep cook – just check out all she made with twenty pounds of ground turkey!
This is what I made
Saucy Veggie Meatloaf – 3 lbs. = 2 loaves
Sicilian Meatloaf – 3 lbs. = 2 loaves
Tomato Basil Burgers – 1 1/2 lbs. = 6 burgers
Southwest Burgers – 1 1/2 lbs. = 6 burgers
BBQ Cola Meatballs – 1 1/2 lbs. = 40 meatballs
Taco Meat = 4 lbs. = Split into 3 containers for:
Tacos – 2 meals
Hearty Sloppy Joes – 3 lbs. = 2 meals
2 baggies with 1 lbs. each for chili and Asian Turkey Wraps
1/2 lb. for spaghetti sauce (the kids don’t like a lot of meat in their sauce so this works perfect.)
And you think I like Mexican food? Think again! Here are some of Debbi’s no fail Mexican dishes:
Most recently she made this Guacamole Slaw for tacos – she says that guacamole is the new sour cream!
Check out this Corn Bread Taco Casserole – I love corn bread as it is – top it with taco ingredients? #winning!
She makes Beef Burritos with slow cooked spice rubbed beef – perfect to make a big batch of burritos for later in the week!
I love the idea of these Beef and Bean Baked Chimichangas – you could use your favorite ground meat.
And this dish reminds me of a dish my Mom made growing up. Debbi calls it a Baked Mexican pasta, but my family called it Slumgulion – a mixture of ground beef, ONIONS, green peppers and elbow macaroni in a tomato sauce. My sister still makes that dish to this day. Me? I never liked it! But I think I’ll give Debbi’s spicy version a try. I am sure she won’t mind that I leave out all the icky onions!
I hope you have time to pop over to Debbi’s blog and check out her other recipes. She is a member of the Secret Recipe Club – where other food bloggers make dishes from each others blogs and post about it. I’ve thought about doing it for a while now, but with so much going on and I didn’t think I had the time to commit to it. You can find some details in this post about the Secret Recipe Club.
