Turns out Mother Nature isn’t letting go of its winter grip anytime soon.  Yesterday I woke up, it was raining – no big.  I jump in the shower and come out only to see giant flakes of snow falling from the sky.  It snowed the whole way into work – um, it shouldn’t be snowy and 33 degrees in May.  Just sayin. It’s just weird to see green grass and snow together.

Before work I made another batch of my copycat Nature Valley granola bars.   I’ve made these so many times I don’t even need to look at my recipe anymore.  This time I used 1 cup of whole pecans and 1/2 a cup of peanuts.  You may be wondering how I am able to make these before work – I put a box in the back seat of my car and put my pan of granola bars in the box, then open the window half way on that side of the car.  They cool down in the 35 minute drive to work.

I made another Strawberry Peanut Butter Crunch Parfait – this time using my granola instead of Kashi.  This is so flipping good.  I think I may make a sugar free strawberry sauce with the rest of the strawberries Tony got me for parfaits next week.  Just that little drizzle of caramel sauce puts this parfait over the top.

I had a plan.  A couple weeks ago I ordered Chinese food from across the street, and made my own stir fry – I bought chicken on a stick, beef on a stick, brown rice and szechuan green beans.  I chopped up one of the chicken sticks, one of the beef sticks, used 1/2 the brown rice and chopped up half the green beans and tossed that mixture with some sriracha and one packet of sweet and sour sauce.  Half was for lunch and my plan was to eat half of it at the restaurant at some point for dinner.

The plan was a good one, except that I got my first table at 5:15 and my last table at 9:30 – there wasn’t even time to barely go to the bathroom let alone eat anything.  We had a wedding reception in the back room.  The GM makes most of our desserts and made this wedding cake – the picture doesn’t do it justice, but it was gorgeous.

And we had a new caramel sea salt cake that looked amazeballs too – definitely insulin worthy!

My last table left at 10:20, then I had FORTY minutes of side work to do before I could check out.  I left the restaurant at 11:00 and got home at 11:35.  Long day!   Now normally my brain would be telling me “you haven’t had anything to eat since 1:00 p.m. – it’s okay to pick up a pizza or pizza bread on the way home!”  Nope.  I ended up having a glass of wine, 2 tablespoons of hummus, 8 Ritz crackers and an ounce of peanuts and at 12:15 we called it a night.  I think I was asleep within 30 seconds of my head hitting the pillow!

So I was hangry when I woke up.  A sign that Tony is feeling better?  He made me breakfast!  He shredded 1/2 of a baked potato, and made a hash with that, 2 eggs, lots of hot sauce and Cabot’s Everything Bagel cheese

Holy yum, this hit the spot.  Crunchy potatoes, creamy eggs and glorious cheese.  And those strawberries from Sam’s Club have been so sweet.  I just did a quick search of that Everything Bagel cheese to see if it’s sold near me – turns out it is available at Jewel, Trader Joe’s, Walmart and Sam’s Club – nice!  But it was nice to get it directly from Cabot cheese – thank you!

We actually have to go to a wake this afternoon – one of Tony’s childhood friends passed away last week.  Too young!  But I guess that’s what happens when you start to get older.   We’ll probably get a late afternoon bite to eat out before I work in the bar tonight.
