It was so nice to leave the house yesterday because it was already 48 degrees and sunny – it felt like a spring morning finally! As much as I have complained about our winter, I know come summer time when we have a string of 100 degree days, I’ll bitch about that too.
Breakfast was so delicious! I ended up making a potato/baby spinach/egg white/Cabot sharp cheddar frittata. I used my 6 inch non-stick skillet. I had 4 ounces of a baked potato that I diced up on the bottom, then added the baby spinach, egg whites and 3/4 ounce of cheddar cheese on top, but the heat on medium low, stuck a lid on it and walked away. It took about 8 minutes to cook through. On the side? Homemade breakfast sausage! I bought a pound of bulk pork sausage, mixed in one grated apple, some fennel seed and 1/2 a teaspoon Paul Prudhomme’s Meat Magic. Just mixed that all up and I got 9 sausage patties – each one comes in at 184 calories, 14 fat, 3.7 carbs, 9.9 fiber.
I could only eat 3/4 of the frittata, but ate the last 1/4 before I went on my walk – my blood sugar was only 120 so I needed to bump it up a bit. Since my gym is closed this week for renovations, and because it was 62 degrees out – I went on a 45 minute walk. Since my blood sugar wasn’t as high as I wanted to, I stuck close to my office and just walked around our office campus.
Sunday was a meal prep day. I decided to grill up some chicken for salads. I bought this seasoning at The Fresh Market – I was looking through my archives and I am not sure I’ve ever done anything with jerk seasoning, which just screams me – flavorful spicy!
I put about a teaspoon of this rub on each of my chicken breast halves, and grilled them up.
My huge ass salad – 6 ounces of chicken, mixed greens, carrots, cucumbers and light ranch dressing. So spicy good!
Work went by pretty quickly. My boss actually facetalked me from Italy! She’s on spring break with her family and they are at a villa on the Amalfi coast – she showed me their view and it was stunning!
When I got home I asked if Tony had fed the squirrels yet and he said “no!” I got my handful of nuts and threw them on the table. It was hilarious because Lyle was all the way across the street, and when he heard the nuts hit the table, he turned around and made a mad dash for the deck. As did two other squirrels. Lyle was on the table, one was in the corner and one was on the steps.
I ended up making abborio rice for dinner – I added carrots and asparagus to mine and chopped up 3 ounces of leftover steak.
After I took that shot, I looked down and Lyle was right at my feet – scared the shit out of me and I nearly screamed!
Lyle then jumped on the chair and I thought for sure he was looking at my dinner and asking “Is this for me?!”
I quickly grabbed my dinner and got in the house – all without the squirrel following me, which had I left the door open a second longer, he would have joined us!
I got my 10,000 steps in!
It’s gross outside today – overcast and 35, so I think I’ll be hitting up the pool today. Not sure I’ll get my steps in, but I may need to take a walk after dinner to get them in.

- 41% of calories from fat, 33% from protein and 25% from carbs
- average blood sugar 119
- 10,270 steps!

I am loving that fitbit thing! Kind of helps me estimate what I might be walking-which isn’t near enough! Now Kyle, on the other hand, might be walking more than me as he tries to get to your food! I wish I could just hire you to make my breakfast. On the weekends I make really nice ones, but during the week they are my weakest link!
I love breakfast – if I could have it for dinner I would but Tony wouldn’t hear of it! 😀

I’m like Helen – I never complain about heat but winter is awful. We were 78 yesterday and back under freezing today – ugh!!!
That’s the worst part about this time of year – the tease of warmer weather only for it to go away the next day – gah.
hahahha- the squirrels crack me up! My uncle hat a pet squirrel when he was little- I can’t imagine doing that now. What a fantastic looking breakfast. Hope it warms up!
I am okay with it – Tony thinks that squirrels still have rabies – I have no idea, but a co-worker of mine said her grandpa had squirrels trained that they would sit on his shoulder and take nuts out of his hands!
I need Lyle in my life. Think I could borrow him? Not sure how Toulouse would feel about me “cheating” on her…but seriously…I LOVE squirrels. Always have. Always will. No squirrels in my neighborhood 🙁
Really, no squirrels in your neighborhood? I actually don’t remember them in Oak Park, but that was a busy town – lots of traffic. Now that we live out in the “sticks” I guess I just notice them more!
