This weekend was a perfect balance of relaxing and productivity. I have a hard time not trying to fill up every hour of every weekend doing stuff. So when Tony suggested we go out to eat and grab a beer Saturday afternoon, I was in.
We spent a couple hours hanging out, watching baseball. I had a couple beers and some pizza bread. This was our breakfast and lunch. The bartender was super nice – (hey Stephanie!) but I blame Tony for the blurry picture of her.
Have you had Goose Island Matilda beer? So good – if you can find it on tap, I highly recommend it.
We came home and were productive. Tony mowed the lawn and I made salsa for my May giveaway (it will be on its way soon Peggy!).
I love how the lawn looks when he’s done with it. I think in 13 years, I’ve only mowed the lawn like five times – I guess I don’t follow a pattern when I mow!
Then we just sat outside, our neighbors came over and hung out with us for an hour and a half. We listened to music on 8 track and grilled up a brisket for dinner.

Sunday morning Tony made me one of his famous breakfasts. This was also breakfast and lunch.
I was busy in my kitchen yesterday. I had to my my SIL’s lunches for the week – my nephew picked them up yesterday afternoon. For later in the week I made cauliflower mac n cheese, I made a Thai beef soup for lunch today with the leftover brisket, I made lemon poppy seed muffins and I made lemon poppy seed granola.
I am a bit obsessed with poppy seeds lately. I decided to try and make a lemon poppy seed granola with lemon zest.
Lemon Poppy Seed Granola Clusters
Ingredients:
- 3 cups of oats
- 1/2 cup of flour
- 1/2 a cup of brown sugar
- 1 teaspoon salt
- 2 teaspoons lemon zest (from 1 large lemon)
- 3 tablespoons poppy seeds
- 3/4 cup mixed nuts (I had almonds, sunflower and pumpkin seeds)
- 1/2 cup butter, melted
- 1/2 cup agave nectar
- 1/2 cup applesauce
- 2 tablespoons honey
- 1/3 cup craisins
- 1/3 cup chocolate chips
Mix the oats, flour, brown sugar, salt, zest, poppy seeds and nuts together. In a large bowl (I used my 4 cup Pyrex measuring cup) add the butter, agave, applesauce and honey and microwave for 1 minute. Mix to make sure the butter is melted, then combine with the dry ingredients, making sure to coat well.
Heat oven to 350. Press the granola down with your hands. Bake for 25-30 minutes, without stirring. Let cool completely and break into clusters. Now, this didn’t have an overly lemony flavor, I think next time I’ll add lemon juice to the wet mixture. So I decided to add the craisins and the chocolate chips at the end.
All I can say is this granola is like crack. Good thing I am giving it to my boss otherwise I’d eat the whole bag.
And we grilled again last night – check out this bone in chicken breast – its one breast but we split it because it was so big. We used Rudy’s BBQ sauce on it, and we had corn and twice baked potatoes on the side, which I never photographed. Super easy delicious summer meal.
I face talked with Hannah last night for 40 minutes. She’s been so busy with work (Panera) lately that we haven’t talked more than a few minutes each day for the last week. She’s been promoted at work so she’s now training people on the food line, and she has a set schedule now for the summer – she’s working nearly 40 hours!
I love that face talk though – technology is so crazy. I remember it being a big deal that my sister and I got a phone extension in our room when we were 17!
Alright, back to reality and time to get ready for work. I plan on swimming at lunch today and tonight is Day 8 of Insanity – cardio power and resistance! And back to no alcohol during the week – just water and tea.

What a great weekend. We never do something so spontaneous as going out for lunch on a Saturday. Usually R. is in the garage that day to work on his motorcycles.
And all the food looks so delicious.
I tend to try to fill all my time as well. It’s so hard to relax! My highlight was probably our breakfast ride on Sunday. You can beat a good bike ride and a bagel 😀
Granola is like crack to me as well. John likes to have it around, but it has to go up on the high cupboard or I face plant 😀

I’m with you on enjoying the Facetime app – yesterday I got to help decide where to place furniture in my kid’s new apartment via Facetime. Too cool to think that I used to dream of doing that as a kid (seeing someone’s face while you talk to them, not decorating long distance, haha) is possible and readily accessable.
I’d love to mow the lawn if we had a riding lawnmower. First I’d mow my initials, then a heart, and then random zigzags. I can feel Tony shuddering from here, lol!
That would drive me nuts! I would have to re-mow it immediately!

I have mowed the lawn twice here and now John does it because I “run over things” and ruin belts…lol! Fine by me 😉 I didn’t weed the garden good enough for him, so now he does that too…follow my pattern…ha ha ha!! That chicken looks so good! I used my grill this weekend and had a yard sale 🙂

I wish I had gotten on and read your blog before I went to the grocery and bough granola. I even have poppy seeds here I’ve been looking to use. Oh well, next time, I guess. Also, I didn’t get to comment on Saturday so I’m behind, but great job on the 3.8 lb loss! You’re awesome 🙂
Highlights of my weekend? Went to the store, bought some flowers, and had a cousins BLT sub, Went home and planted the flowers, pulled weeds (those never stop growing) and got all bit up by mosquitos. You could put 10 people and me in a room with 1 mosquito and it would find me!!! Uge, I itched for the whole weekend!!
Wish Saturday was 48 hours long….lol!

Sounds like a great weekend! We got home yesterday and grilled up some bone-in chicken breasts too. Cooked to perfection, good stuff! If you ever see Matilda in the store, look for the different years. Pick up a few different years, it makes for a fun tasting. It can be aged for a few years like wine. Swam some laps on vacation, thought of you. Loved it, wish I had access to a pool on a regular basis. 🙂
Different years? I am going to have to check that out. Sophie is my other favorite, but at $8 a bottle, that’s for special occasions. 😀 The outdoor pool at my gym was open, but it was a tad too cold for me today!

Isn’t technology amazing? I remember my sisters and I fighting over using the cordless phone when we were growing up. The freedom to walk into different rooms while talking on the phone with a friend was a BIG deal. lol.
I am a BIG fan of home made granola. I just made some yesterday as I am going out of town and Glenn requested some before I left. I also made granola bars last week, haven’t done that in forever. I keep them in the freezer for maximum freshness, they are so good! You should buy the oat groats and try rolling them yourself. I have a roller but they are pretty soft, I wonder if you were just doing a small amount if you could use a rolling pin? Anyway, fresh oats are so delicious and chewy and hearty.
When I go running sometimes I pass a man on an early walk smoking a cigar. I can smell that thing from a mile away 🙂

Your granola looks and sounds amazing. I love lemon. In my dreams things like granola and peanut butter are calorie free. It would be a real challenge to keep that granola in my house for any length of time.
The highlight of my weekend was working every single night. Just kidding. Actually I ran a pretty awesome race yesterday. I will hopefully get a blog post up soon before my blog collects cobwebs.

Mmmm, I love lemon. Granola really isn’t too difficult to make, but I’m always so lazy. This recipe sounds great though! This weekend we spent time working in the yard – the weather was perfect and it was nice to just be outdoors. Have a great day! 🙂
So many recipes called for stirring every 10 minutes, I much prefer the granola in clusters and you just set it and forget it. Glad you enjoyed your outdoor time Christine!
