Since I had taken so many pictures over the weekend, I was remiss in showing you the delicious breakfast Tony made me on Sunday. This was actually my breakfast and lunch. Last night we were watching t.v. and he was like “why didn’t my breakfast make the blog?”
I put some ingredients out and let Tony do his magic! Eggs, egg whites, corn tortillas, sausage, cheese and my baja fresh salsa.
A few minutes later he brought me this gorgeous plate.
He crisped up the tortillas, mixed sriracha with the scrambled eggs – so delicious. Thanks Tony! You can tell I hated it.
I made another quiche yesterday, this time using canned sliced potatoes. Check those out at your dollar store – they are usually 2 cans for $1.
Potato Zucchini Quiche
- 4 servings: 185 calories, 8.3 fat, 542 sodium (drops down to 213 if you don’t add the 1/2 teaspoon salt), 10 carbs, 1.4 fiber and 15 protein
Ingredients:
- 1 can sliced canned potatoes (1 cup)
- 2 eggs
- 1 cup egg whites
- 1 cup 2% milk
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded zucchini
- 2 ounces cheddar cheese (I used a horseradish cheddar)
Spray a pie plate with Pam. Heat oven to 375. Drain the canned potatoes and lay those on the bottom of the pie plate, overlapping if necessary. Shred a zucchini into a paper towel and squeeze to get all the liquid out. Sprinkle over potatoes. Mix the eggs, egg whites, milk, salt and pepper together and pour over potato/zucchini mixture. Top with cheese and bake for 35-40 minutes, or until the eggs are set.
This was still pretty warm when it was time to leave for work, so I used a pizza box to transport it to work – just laid a kitchen towel on the bottom, put the quiche in the box and closed it shut – it worked great!
And some delicious strawberries and blueberries on the side.
My left knee has been bothering me since Saturday, so I decided to take it easy and swim. I ended up swimming for 40 minutes! While I do like that swimming is an all body workout, it does get kind of boring and I find myself looking at the clock seeing how much longer before I can get out.
And, for lunch I had lasagna soup #34! Except this time I made it with fresh roma tomatoes and I have to say, this made this soup just that much better. I used 8 roma tomatoes and cooked those in a teaspoon of olive oil, then added the chicken broth and once the tomatoes were soft, I pureed that mixture and continued on with the recipe.
So I am sure most of you are like me – you Pin a bunch of recipes, or make mental notes that you want to make some recipe soon. That’s how it was when I saw Nicole’s lamb burgers. Don’t worry, I was giving the red onion the stink eye.
I was going to use tzatziki sauce instead of her cilantro riata sauce. I have to tell you, I was a bit nervous, I’ve never had ground lamb before. When we were at the store, I was at the cheese section when I asked Tony to find me ground lamb.
Um, I didn’t pay attention to the price of this – $9.99 a pound! I ended up mixing 5 ounces of ground sirloin with 5 ounces of the lamb. Then simply seasoned with salt and pepper.
So I light the grill and start to get my other stuff ready. Um, no tzatziki sauce. I could have sworn on a stack of bibles that I had some in there. So the direction of our burgers took a whole new direction. For Tony, I made him a Swiss cheese mushroom lamb burger.
Me? #becauseIlovespicyshit – I made a cheddar hot giardiniera lamb burger.
I have to say, I am not sure that I could actually “taste” the lamb, but this is one of the juiciest burgers I’ve ever made. I will definitely use lamb again to make burgers. Thanks for the inspiration Nicole!
I think I am on day six of the Detox Water and I have to say, drinking 2 liters of water is so easy because the water tastes so good. And I had no snacks after dinner – woop!
I am just about to make my lunch for my boss and I today, except I will be using leftover beef from the roast I made on Sunday – doesn’t this look good – Asian noodle salad.
I still have an hour before I need to leave for work, so much time for activities! It helps that we went to bed at 10:30 last night.

Oh how I love a good lamb burger. But you are right, it is a pricey meat! Worth it to splurge from time to time though 🙂

Tony’s breakfast for you looks incredible! You know, I don’t know that I’ve ever had lamb! I certainly haven’t prepared it myself. Hmmmm, I’m curious now…..about what it’s like and if I would enjoy it.
Your quiche looks so good! Love canned potatoes and will be trying this quiche recipe-my ‘real’ potatoes tend to get pushed to back of fridge and grow legs, plus canned are cheap. Have never tried canned sweet potatoes, not sure what to do with those. Good luck with your swimming 🙂

I know what you mean about swimming…I like it, but it can get boring without any music to keep me motivated. I’ve looked into earphones/mp3 players you can use in the water, but none seem to get great reviews, and they’re so expensive! 🙁

That breakfast does sound good Biz! I was eating scrambled eggs the other day and had them with mayo mixed with sriracha, I thought of you 🙂 The quiche looks so good. Canned potatoes was a good and cheap idea! I use those all the time. Oh heck you won’t get me out of the pool. My pool cover fell in last year so it is looking mighty scary (like a pond…complete with bugs!) I’m going to have to start working on it earlier than usual. But, if this weather stays nice it will all work out. At least that’s what I keep telling myself! 😉

Use caution when purchasing food products @ the dollar store. Check the country of origin, if made outside of the USA, food standards may not be as stringent as ours. I think I may be making your quiche in the very near future! 😉

Yummy pictures, Biz. I have often thought to make something with lamb but, price stops me. Years ago, someone made me lamb stew, oh my gosh, was it ever good, never got the recipe, could kick myself now. My mom used to make a leg of lamb on Easter with mint jelly. Soooooo good.
If my husband cooked breakfast for me???? I would get oatmeal or toast and not very picture-worthy. Tony is a keeper!!!
Yep, Tony is a keeper for sure! And Tony’s Mom made lamb on Easter – bloody rare that’s how they like it!
With Glenn in the academy we’re all in bed by 9. I woke up this morning so refreshed and was out the door running by 6 am, it started pouring soon after I got home 🙂
I’ve been having too many late nights these past couple of years so I am so glad to be on an earlier schedule. I do better, as does my arthritis.
About the job situation, it seems most people aren’t happy with their jobs, and you know what, working for a paycheck or insurance (or both) isn’t such a bad thing, it’s life.

That quiche is going on my menu this week!! It looks delicious!
On swimming, go online and find a few good swim workouts. These are mixed laps–butterfly, breast stroke, back stroke and freestyle–which you should be mixing in anyhow so you don’t wind up with an injury. The workouts are at all levels and since you have to constantly think about what you’re doing, you don’t get bored and time goes by pretty quickly. Also, they sell waterproof ipod covers and headphones that are truly awesome. There is nothing like banging out a pool workout with Led Zepplin banging away in your head.
I love lamb burgers. Harissa and feta is killer on a lamb burger.

ohmygosh! I adore Asian noodle salad- its so darn good! Go Tony! Another great meal. I love that he noticed that you didn’t blog about his meal ;). I haven’t gone swimming in a while. Totally a great full body workout.

I’m not a huge fan of lamb…but ground lamb made into greek burgers is really awesome! good call mixing them, because lamb can be kind of fatty…sometimes they disclose the fat content, sometimes not. Canned potatoes. Good idea. 🙂 Sometimes I buy the refrigerated ones when I need to use them in dishes like this, but they are much more expensive than the canned ones.

Now I am not sure I’ll jump into leg of lamb, but ground lamb was good – probably high in fat, which is why it tasted so good?!

I totally know what you mean about swimming. It’s such a great workout, but I get mega bored. I have read that you can do intervals (1 lap fast, 1 slow, or something), but I’m not really a strong enough swimmer. It ends up being 1 lap slow and 1 lap really, really slow 😛
Well, my 1st lap is really, really slow and my 2nd lap is really, really, really slow! I am moving, so that’s what counts, right?
All the food looks so amazing as usual.
I have the same with the swimming, I get bored very easily during a swim. If I remember correct Shelley had some great things she did/use to make the swimming less boring when she was injured. Perhaps she has tips for you?
