I forget what a good idea making quiche is. On Thursday’s I feed one boss breakfast and the other one lunch. I made a broccoli quiche with leftover Easter ham. My boss and I had it for breakfast and I gave my other boss a slice for lunch with a Caesar salad on the side. #winning!
Broccoli Ham Quiche
- 4 servings: 209 calories, 8.4 carbs, 23 protein, 9.5 fat and 1.2 fiber
Ingredients:
- 1 garlic clove, minced
- 4 ounces broccoli, chopped
- 1 1/4 cup unsweetened almond milk
- 4 ounces cheddar cheese
- 2 teaspoons Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 cup liquid egg whites
- 2 eggs
- 2 ounces chopped cooked ham
I cook my broccoli on the “vegetable” setting on my microwave. Let cool slightly. Chop broccoli. Add everything to a large bowl and mix well. Pour into a prepared pie pan sprayed with Pam and cook at 400 for 30 minutes.
Here is my blurry breakfast – I had it with some grapes and some leftover potatoes.
I decided to run another 5k at lunch yesterday. I started out the run at a 4.8 mph race – it takes me a while to get into the groove, but over time I kept bumping up the mph. My last sprint was at a 8:45 minute pace! What??!!
I’d say that’s not a bad time for someone who weighs 170 pounds! I was doing a happy dance!
For my lunch I had leftover taco soup. It had a lot of broth in it, but once I stirred it around, I got to the good stuff – the melted corn tortilla, beans and corn.
It was such a nice day yesterday!! My drive home was gorgeous – 59 degrees and sunny! Tony asked what my thoughts were for dinner and I said that I had defrosted ground beef for burgers. He said he didn’t care as long as we could sit outside and grill. YOLO!
I ended up making blue cheese stuffed burgers. I puffy heart blue cheese. I used 97% lean beef – each patty was 5 ounces raw. I put about an ounce of blue cheese in the middle of each burger.
With Tony’s favorite crinkle cut fries on the side. This was so filling, I wasn’t even tempted to eat anything else last night.
So last night after dinner I started putting stuff together for our Souper Friday lunch today. Except guess what – no soup for you! I decided to switch things up and I am doing a taco fiesta. Ground beef tacos with the fixings, this cilantro corn confetti, and cilantro rice.
Hannah is actually in the suburbs today and her and her friend Mel will be joining me for lunch today! I decided to make a batch of granola for them. So you can imagine the smells going on in my kitchen:
- taco meat
- cilantro
- rice cooking
- cinnamon
- honey
At one point Tony yelled from the living room.
It’s smells like dogs balls. I hope that’s the smell you were going for!
Guess what? I registered for a race! Well, kind of. Cabot Cheese is putting together a blogger team to run a race called Beach to Beacon in Maine in August. Have any of you ever heard of that race? It must be really popular, because they said it sold out in about 5 minutes!
I threw my hat into the ring – nothing ventured, nothing gained! But I was given a sign yesterday! When I went to the store to pick up a couple things for my taco fiesta today, guess what was in the cheese discount bin?
So I am pretty sure they’ll pick my application!
Alight – I have so much stuff to put together for work you would think I was going away for a long weekend!

Do you have a Bed Bath & Beyond up by you? It’s a Wilton brand 9 inch deep pie pan. I love it. It’s non-stick and I use it for all sorts of things, including quiche!

I love that you’ve signed up for a 10K sponsored by a cheese company! You know, the best part of the races is that afterward they always have these food booths set up and the runners get to nosh on all kinds of good things; I bet they have a cheese table.
