Afternoon! Right now its sunny and 40 and I am on the deck grilling tomatoes to make baja fresh salsa for our March birthday Taco Fiesta tomorrow at my Mom’s house (and for blog reader Kris who won my birthday giveaway!). Yep, in my bare feet – 40 is balmy people!
Not sure I’ve ever mentioned it on the blog before, but my right foot is a size 8 and my left foot is a 6 1/2. I blame my twin sister for sitting on the left one in utero, so that it stunted the growth. I almost always buy slip on shoes because then they both fit.
While that grilled tomato screams summer, this is what my windshield looked like yesterday morning.
I am going to pretend too that I didn’t hear that we may have snow in our forecast – positive thoughts, right?!
So you know Tony won’t eat leftovers. Even filet mignon leftovers! We each only ate half of our steaks at my birthday dinner, so I decided to make a filet mignon, spinach, egg, and brie breakfast panini on my rosemary artisan bread. Um, you don’t have to guess, this was amazeballs.
This breakfast sandwich came in at 393 calories – not bad! I ended up running errands at lunch so no workout. I didn’t make Souper Friday for the office either. Hardly anyone was in, so I ended up heating up my Cincinnati chili for me and my one boss that was in.
We both agreed that this chili is “company worthy” because its not too spicy, but I diced up jalapenos on top and that was just the added spicy kick this chili needed.
I met with our accountant last night to get our taxes done. I was worried because this was the first year that I wasn’t claiming Hannah. My only goal and my mantra as I was driving there was “please don’t let us owe anything.” Well, good news – we don’t owe anything and are still getting $$ back! #winning!
That meant Tony was in charge for dinner. He bought shrimp and made red beans in rice in the rice maker. He cooked the shrimp separately – of course made mine spicy (and it was delicious!) and it was practically ready when I walked in the door. Thanks Tony!
We actually got an early start this morning after lounging in bed for a while. Love Saturday mornings for that! We left the house around 10:15 to go to the grocery store and then we were going out to lunch. We ended up going to the same place that my boss took me for my birthday lunch that had the amazing turkey sandwich.
But then I thought “they have Reuben egg rolls!” But in the end, the Butchers Board pizza won out.
Sweet fennel sausage, pepperoni, proscuitto, Parmesan and mozzarella with an herbed tomato and basil sauce.
They have a wood burning stove so it was a light, cracker crust, with just a hint of chew and the pizza toppings were so flavorful. I was able to eat three slices and brought the rest home.
Tony? The man loves a good BLT. Check it out – is that the most bacon you’ve ever seen on a BLT before or what??!!
You could almost use the leftover bacon for two breakfasts!! So in the time it took me to write this post, my tomatoes, tomatillos and jalapenos are perfectly grilled. The black parts are what make the salsa amazeballs.
Off to get busy in my kitchen! So excited for tomorrow – not only for our March birthday fiesta at my Mom’s, but I am having breakfast at Jacky’s house! I went to high school with Jacky and her older sister Jody. Jody was a senior when I was a freshman and I looked up to her as a mentor. Jody is in town for the weekend, so my sister and I are headed there tomorrow to catch up – I’ll be sure to take lots of pictures. I plan on bringing lemon poppy seed scones with a meyer lemon glaze. If they turn out, I’ll post the recipe on Monday.

Those are crazy feet up there. Living in Milwaukee, I know exactly what your Chicago weather is like. Sure it was nice enough to want to be outside, but are you and your feet ever eager for spring!
OMG that BLT looks awesome and it’s making me hungry, even though I’m sitting here eating breakfast. lol You know, I wouldn’t have even noticed about your feet if you hadn’t told me. I actually had to go back and look at the picture before I believed you. Obviously I’m super observant 😉
That BLT sandwhich is crazy loaded with bacon!!!! And the foot thing, that is strange, but your feet remind me of mine. They don’t go in a slant from my big toe to small, just kind of straight across like they’ve been chopped off 🙂
After seeing that BLT on instagram even I was craving bacon so we made some BLT nachos 🙂 Now I think I need some pizza and it is only 9:30am!

This is a lot of info in one post! Lovin’ the bacon, the shrimp looks great and those feet-well, I have one thumb that is a lot shorter than the other. But my mom still considered me perfect. And the pizza, and the salsa…that’s a lot for one day!
Between the picture of the feet and me as your mentor I am pretty much speechless.

Hey biz! Got to 53 here today and I felt hot! Lol…we are expected to get 5-8 inches tomorrow! Blech! Over it!!! Yum to all of the delicious foods…especially the pizza. Amazing that I work at a pizza place yet I’m never sick of it! Haven’t had the pizza here at work since I started WW, because although it is thin the points are astronomical!!!!

Okay–I seriously want to try some of your salsa. Salsa is one of my very favorite foods ever–actually just finished having some as an appetizer tonight. But I always buy jarred salsa. I know, I know . . . I should really make it from scratch, but I haven’t gotten around to it yet.

That BLT looks highly “caloric” to me…but men can handle it!!! I posted a recipe for you on my blog…..”Red Lobster’s Cheese Biscuit recipe done in a loaf pan” Was on Facebook today and I grabbed it right away. I am going to make it this week-end. Also making Gyros made with chicken.
One of these days I have to try your salsa….those tomatoes and peppers look great. Tony’s meal with shrimp looks great! I would be alergic to shrimp though…..boooooo! Panini’s looking delicious too! Actually just about everything you make looks delicious!!!

I made a quinoa-kale salad today and am going to bake up some chicken thighs with lemon and garlic. It’s spring break!! I have to work Monday, but have the rest of the week off, so I don’t have to cook like crazy this weekend for the week. Yay!
40??? I was basically frost bitten at 55 degrees this morning 🙂 Those tomatoes look amazingggggg. mm mmm. That is a ridiculous amount of bacon :). I can’t believe that about your feet. Finding shoes must be super difficult.
