It’s been interesting making breakfast for my one boss. I know she likes a sweet breakfast over a savory one, not to say that she doesn’t like my potato crusted quiche, but I need to make her sauteed apples on the side for a sweet note.
But I have to keep the point value relatively low – she likes to have more points during the day. As luck would have it, blueberries were on sale for $1.88 a pint – still not a great price, but I’ll take it.
This recipe sort of developed along the way, and we both ended up loving the results.
Blueberry Granola Pancakes
- makes 6 pancakes – 126 calories, 3 fat, 20 carbs, 1.1 fiber and 3.2 protein per pancake
Ingredients:
- 1/2 cup unsweetened almond milk
- 1 tablespoon melted butter
- 1 tablespoon honey
- 1 tablespoon flax seeds
- 3 teaspoons raw sugar (or regular sugar)
- 1 egg
- 1 ounce granola (about 1/4 cup)
- 1/2 cup blueberries
- 3/4 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
Mix the almond milk, butter, honey, flax seed and egg together. Add in the flour, baking soda and baking powder and stir just until combined. Let batter sit 15 minutes.
I used a 1/4 cup measuring cup to get six pancakes. Once I poured the pancake, I sprinkled the top of the pancake with 1/2 teaspoon of the raw sugar, 1 teaspoon of granola and about 10 blueberries.
The reason I liked this was because the pancakes weren’t too sweet – the sauteed apples on the side and the sugar free pancake syrup was enough – and my boss loved the crunch factor of the granola. She said “if I could lick this plate I would!”
I had no formal workout yesterday, but I did move at work. I did a Sam’s Club run to restock our beverage refrigerator. I carried 12 cases of pop and orange juice from my car to the office. Then I moved about 50 bankers boxes from one side of the office to the other – taking only one at a time – my arms were spent by the end of the day, but it was a good upper body workout!
Lunch was my zucchini lasagna, but instead of two servings, I made it four, since I wanted a salad on the side with shaved parmesan.
I’ve had Burger King tacos on my brain for a few days, so I decided to make them at home. Tony, while he liked my version, said they didn’t taste anything like Burger King’s – apparently there is a copy cat recipe, and I forgot the chili powder and shredded lettuce. I didn’t care – this cured my taco jones!
The filling is a mixture of lean ground beef and refried beans – each taco got about 2-3 tablespoons of filing, then half a slice of American cheese and some taco sauce. Then I fried them up in just a couple teaspoons of coconut oil. I may have doused this plate with Buffalo Tabasco after this photo was taken.
So I think I mentioned it before that one of my favorite apps on my phone is called 8 track. It’s basically a bunch of peoples mix tapes and you can search what you are looking for – soft music for hanging out in your backyard, Italian music, workout music. The other day I heard a song that I absolutely love – it really kept me going on the stair master when I was on level 16!
It’s only gotten 83 million views on youtube, so you’ve probably never heard it before – ha! If you need an inspirational song to get you through the last part of your workout – this is it!
Alright – off to get my shit together for the day – I spent last night catching up on the first two episodes of Girls – I love that show!
Question of the Day: What is your favorite workout song to get you pumped?
Make it a great day!
For the record, I also like the song you mentioned in the post.
If my workout is just walking, I like “Quantum Mechanic” by Thomas Dolby. It’s the perfect tempo to keep you at a brisk walk. Plus, as an extra bonus, it features Dr. Fiorella Terenzi on vocals. (She was described in Time Magazine as a cross between Carl Sagan and Madonna. Basically an astrophysicist with a music career on the side. And did I say astrophysicist? I meant a hot astrophysicist.)
I love you Charlie! Best comment ever!
Those pancakes look absolutely delicious! I am a huge sucker for blueberries in pancakes.
My favorite workout song would be ‘The New Workout Plan’ by Kanye West. It cracks me up! Now if only I could make it to the gym…
The zucchini lasagna is just amazing! I love your recipe.
Love that song!!! I just downloaded it last night for my workouts 🙂
Blueberries for under $2? Burger King has tacos? America is crazy! 😉
$1.88 a pint!!!!!!!! Where do you live? Love the almond milk in the pancakes. This just warmed me (and it’s frigid here – I need warming). Love the looks of the zucchini lasagne!
We live in the far NW suburbs of Chicago – I guess I got a steal on those blueberries!
I usually don’t like sweet breakfasts, but the pancakes sound good, especially with the added crunch! And your dinner tacos sound also good! I have been thinking of various taco dinner options lately…
I don’t usually listen to music when working out. When I am at the gym, I watch t.v., and on my daily walks I don’t listen to music.
I’m really liking Macklemore’s ‘Thrift Shop.’ Cracks me up when ganstas rap about good thrift shop deals. 🙂
Granola in pancakes are awesome!!!!
I love that you love that long too Jenn!
I love ‘Gangham Style’ and ‘Locked out of Heaven’ for good dance/workout music. I do like the song you have on the video too, I’ve never actually heard it or at least that I know of…lol!
Tom would eat about 20 of those tacos you made, somehow refried beans are ok if hidden with meat in a taco 🙂 My favorite motivating song is Common’s song Universal Mind Control.
Hey Biz, you check out Aldi’ this week! I think blackberries are a dollar and the blues are 1. 49! As well as their canteloupe which almost always delish even though on the smaller side!
I didn’t click on your lasagna recipe, but have you ever tried this one? http://peasandthankyou.com/recipage/?recipe_id=6000567
I LOVED IT!!! I really enjoy quinoa and love adding it in where I can.
Okay, totally getting that app, I love when songs are all mixed together. I love listening to popular dance music, upbeat music that gives me energy. And pancakes with blueberries and granola sound GREAT to me. Have a fab day Biz!
I love listening to Queen – I always start to dance and sing when I hear it (much to John’s chagrin )
I hope you are getting paid well for bringing in breakfast for your boss! All your food looks yummy.
I just play some old favorites on shuffle and sing along! Good thing I exercise alone. 🙂
That song was actually barely on my radar! I think I heard it a couple times. Got a good beat–I love a good song I can dance to. Your pancakes look crazy good and WHAT your Burger King still has tacos? Ours had them years ago and by the time I was brave enough to try them, they stopped selling them. Does the meat have that signature grilled flavor? I just can’t imagine that being good-lol.
I am not sure what type of “meat” is in the tacos – they are deep fried, so no “grilled” flavor 😀
I think it’s so cool that you make breakfast for your boss. I’d totally make lunches for my coworkers, if they were interested . . . but I don’t feel like they’d like the same food as I do.
Yay for functional fitness, right?!? I always feel pretty stoked when I can carry huge boxes and move super-heavy things around. Makes me feel extra buff. 🙂
All sorts of stuff in this post I could comment on but all I keep thinking is, “I didn’t even know Burger King had tacos!”
They actually started out being Jack in the Box tacos – then Burger King started selling them and they reminded Tony of the Jack in the Box ones – they are so bad for you, but oh so tasty!
I actually just heard that song for the first time the other day! I had absolutely no idea that Burger King added tacos to their menu – maybe I’ve been living under a rock? Haha. The song that really gets me moving when working out is Jay Z – Show Me What You Got. No judging 😉
Love the granola-topped pancakes idea! Hmmm, I could even do that at home for a carb-loading “brinner”!
You sure got some great functional fitness in yesterday! The gym will probably feel easy today after that. 🙂
I hadn’t heard that song before…not bad but no rush to hear again. I’m glad I didn’t know about BK tacos…don’t need another addiction. 23 days in and no fast food food for me so far 🙂
You are going strong John – keep it up! 😀
The pancakes sound awesome!
Granola in pancakes? Brilliant!! And you know im a huge fan of that lasagna. Sometimes informal workouts can work you harder than the gym
I heard “Cinderella Man” by Eminem at my gym yesterday and fell in love with it all over again. Forgot how much I love it!!
Will.I.Am is a favorite of mine, too. He’s the jam. 🙂
I don’t know the name of it, but my daughters blast One Direction at me, night and day, like I am a p.o.w. and they are trying to get me to crack and denounce my citizenship.
So it gets in my head and makes me move. That’s all I can say.
haha, this made me laugh…I think I hear One Direction in my sleep! My girls are 10 & 11…and they are ‘in love’ with 1D!
Yep, I think my cousins daughter ONLY listens to One Direction!
When I worked, I never had anyone bring me food not did I provide any. What a delicious idea!!
Best,
Bonnie
I did not know BK had tacos! Now I’m interested in finding out more about this! lol I picked up some blueberries yesterday too…but you got a much better price! Have a great day!
