I can’t be the only one who keeps the ends of loaves of bread in the pantry.  You take a cursory look at them every once in a while to make sure they aren’t starting to mold.  Or the next thing you know you see this green moldy mass of bread that you somehow forgot to use up.

Tony?  He’s a freezer bread guy, and I am slowly trying to jump on that bandwagon.  Although wen I was cleaning out the pantry I found some really stale bread, and knew I wanted to make a mini breakfast casserole for one.

Breakfast Casserole for One

  • 354 calories, 11 fat, 27 crbs, 1.4 fiber and 36 protein


  • 1 once of cup of day old bread
  • 1 ounces of deli ham, chopped
  • 3/4 cup baby spinach chopped
  • 1/2 cup egg whites
  • 1/2 cup skim milk
  • salt and pepper
  • could dashes of crushed red pepper
  • 1 ounce of sliced swiss cheese (or any shredded cheese)

Heat oven to 400.  Put everything in a bowl except the cheese and mix well so that all the bread gets soaked by the egg/milk mixture.  Put in a small baking dish or ramekin.  Top with the two slices of Swiss cheese and bake for 30 minutes.

That’s my oven mitt to the side so you can see how generous a serving this is.  I just took this as is to work and heated it up for a minute once I got there.

One of my co-workers joined the same gym as me.  He read on their website that if two people lived at the same address (we get resident discounts because our office is in the city) that we could get a discount that would have saved me about $15 dollars a month, and I would get a $50 gift certificate if I referred someone.

Turns out that we had to be married to each other for the discount, and since we are already paying the reduced corporate rate, the bonus wasn’t available to me – oh well, it was worth a try!

I ended up doing the elliptical on hill climb – my highest hill was at level 20, it was like walking through mud!  I never actually got a picture at the end, after my cool down, it was 45 minutes and 3 miles.


Lunch was 1.5 ounces of the leftover steak from our tacos with my Mom, so I made steak and spinach tacos.  On the side was 3/4 cup cooked white rice with shredded zucchini and cherry peppers, tossed in a little salsa with tangerines on the side, which were so good, but I wish they didn’t have seeds in them.  Lunch comes in at 466 calories, 10 fat, 76 carbs, 8.1 fiber and 20 protein.

I shopped at a different grocery this weekend because the meat prices were better.  I saw this bulk item section I hadn’t noticed before.  Check out my rice score – 4.5 pounds for $2.21!


I told my co-worker about it, and she suggested that I put the rice in the freezer, I guess just in case it has bugs in it?  I have never heard of that before, but its not a bad idea!  I made 2 cups of rice and had them in the refrigerator and Tony was the chef of the night!

Every time I watch him make the fried rice I think “that’s too much soy sauce!” but it turns out excellent every time.   He starts out with 2 eggs, and because he knows I like the spicy shit, did his normal version and kicked mine up a notch with some crushed red pepper oil he makes for me that’s in our cupboard – when he makes my weekend eggs he uses the same spicy oil – so good!

I ended up eating about 2/3 of this bowl.  I have no idea how to figure out the calories exactly, but I just entered P.F.Chang’s chicken fried rice and a serving of that is 465 calories, 9 fat, 77 carbs, 2.2 fiber and 21 protein.  Does that sound about right?  Thanks for making dinner Tony!

  • 1480 calories (not shown was my snack of 10 ritz and cheese after dinner), 37 fat, 191 carbs (holy carbs day!), 13 fiber and 83 protein
  • 3 mile total elliptical hill climb
  • 128.35 miles left in my 170 mile challenge
  • average blood sugar 152

Since the wok was still on the stove, I made more chicken stir-fry for lunch, although I measured everything out – it will be interesting to see how close I am to the actual calories!

Just about every day I come across a food blog that’s well established and I wonder how I’ve never stumbled upon it before!

This girl, Feed Me, Seymour, has a ton of great recipes, but one of the things that caught my eye was her vanilla bean syrup.  I thought it would make a great gift for my coffee drinking co-workers.  But check out her recipe index – lots of good stuff!
