Wowza. Who knew yesterday’s post about KERF was going to be such a touchy subject! I am still happy I wrote it. While some thought I was bashing KERF, when anyone puts themselves out there in blogland, you have to take the good with the bad.
In the nearly four years I’ve had my blog, I’ve gotten emails that I am fat and diabetic because I eat too many carbs. I am too upbeat. I use too many exclamation points!!! But it’s my blog, and I’ll say what I want. If you don’t like it, there are a million other blogs to read. Right?

Shall we move on? It was Wednesday, so it was bagel day! This time half a Thomas bagel, with 1 egg, baby spinach, rosemary ham, 3/4 ounce of cheese with some cantaloupe on the side. Breakfast comes in at 400 calories, 15 fat, 42 carbs, 7.5 fiber and 31 protein.
My boss has a Lean Cuisine pretty much every day. Until she forgets to stop by the store on the way to work when she runs out. As luck would have it, that was what happened yesterday. She offered to buy lunch if I went to pick it up. Free food? Yes please!
OMG, this fuji apple salad from Panera was amaze balls. It came with a white balsamic apple dressing (that I am going to have to try to recreate!)
All-natural, antibiotic-free chicken, mixed field greens, romaine lettuce, vine-ripened tomatoes, red onions, pecans, Gorgonzola, apple chips & white balsamic apple vinaigrette.
I left out the onions (obviously!) and the tomatoes.
With a small broccoli cheddar soup on the side – it’s the “You Pick Two” option. I love that they have the nutritional info on their website. Together, lunch comes in at 480 calories, 29 fat, 32 carbs 9 fiber and 24 protein.
If you like that broccoli cheddar soup, I have a copycat recipe that tastes just like it.
I came home to see that Tony set up another fly trap – the flies were coming back with a vengeance! This time though, he tied it to our wood pile rack, near the garbage cans, so hopefully they won’t both us when we are sitting in under our gazebo.
I had flank steak that I needed to cook up, and decided to make a Mexican fiesta. Seriously, I could have this meal every night and never get sick of it. Although I did overcook the flank steak a bit.
I had this tostada, times two. Both were 503 calories, 31 fat, 33 carbs, 4.2 fiber and 22 protein.
So thanks for all the comments, good or bad yesterday. Turns out I do have a thick skin, so it’s all good.
I had to share this picture – I was looking for a recipe for crock pot beef stew that I thought I had on the blog, and saw this picture. Looks appetizing doesn’t it?
I think my photography has gotten a tad better over the years!
Alright, I have to put my crock pot beef stew together and my breakfast and lunch together – all in 30 minutes before I have to leave for work and I am still in my pajamas! Wish me luck!
Tony is hilarious, I am pretty sure he and my husband would get along wonderfully 🙂 We don’t have panera out here in AZ but that salad looks so good. I hope you have a wonderful weekend.

I read your last post and I agree, KERF is a bit much. I don’t read her blog for that reason anymore. I felt super inadequate cause I couldn’t take on the world 100% all the time.
