Tony and I had a great weekend – Monday mornings seem to come too soon, I could really use another day off.
Most of this post will be in pictures – Tony made me a delicious breakfast on Saturday, I ate everything but the bagel because it had started to turn moldy – while it didn’t have any mold on it, it tasted moldy – but the spicy eggs and bacon were amaze balls.
One of my former co-workers who lives by me just got out of the hospital – she and her husband have three boys under the age of six, so I got Bizzy in My Kitchen and cooked up some food for them.
I made about 30 tacos – just made an assembly line and cooked them on my rectangle skillet so I was about to pan fry them 9 at a time.
I also made 18 banana muffins. My MIL taught me the secret to great banana bread or muffins was to let your bananas get almost rotten before you use them.
I used this recipe for the muffins – the only thing I did differently was to add an oat and brown sugar topping.
And then I made a big casserole of macaroni and cheese.
I dropped the food off Sunday and spent an hour catching up with her – it was great to see her, but I miss her at my office.
Tony picked up this tiny speaker, but the sound is not tiny at all. I think it was $20 and we can hook up our phones and listen to Pandora when we sit outside and grill.
We grilled a beef brisket on Saturday night – unfortunately I put too many coals in there so the heat was higher than we wanted and we ended up overcooking it. However, I tried broccolini for the first time and loved it! We also enjoyed a bottle of this – so light and refreshing!
Yesterday afternoon when I got back from my friends house, Tony and I ran some errands and then went out to eat. I put this menu on Facebook with the question, “which one would you get?” I went with the spicy giardinera burger.
It was no shock when I got a lot of comments “you mean you didn’t get the french onion burger?” The food was good – both Tony and I could only eat half of our burger, but the service sucked ass. We saw our server when she took our order and when we asked the bus person to find our server so we could get the check.
Then we came home – I still needed to clean the bathroom and kitchen. But what I really wanted to do was take a nap. In my younger days I was the Queen of the naps – it was always me who took a nap on holiday’s – I would just sneak off and take a nap. It was only for a half hour or so but it was so nice – I typically think I need to keep doing something, so it was nice just to relax.
We redeemed ourselves with a grilled pork roast last night – cooked perfectly. I think I’ll make pulled bbq pork sandwiches for later in the week for dinner. I made a quick horseradish sauce for the pork – it was 1 tablespoon light sour cream, 1 teaspoon Dijon mustard and 1 teaspoon fresh horseradish – yum!
So it’s my weekly WI – while I didn’t exercise as much as I wanted last week, I have good news!
I am down 1.2 from last week! I’ll take a pound a week!
Gotta run and put my food together for the day – I have a new breakfast muffin recipe for you tomorrow, but here is a sneak preview:
What was the highlight of your weekend? Make it a great day!
Sounds like a delicious weekend! I’m so hungry right now… 😉
Congrats on your weight loss!
I’m anxiously waiting for my bananas to get black before I use them. I’m still in banana bread experimenting mode (for the fair in Sept) and for the last two batches, I have been impatient and used just kinda freckled ones. The flavor doesn’t compare! Biz you are so sweet to bring your coworker all that food. You are such a blessing to so many people, I thank God he put you here! I’m privileged to know you.
Aw V – thanks for such a great comment! Hugs! 😀
I love broccolini!! That was so nice of you to take food to your friend. And, a nap and great food and weight loss all in one is awesome. I can’t take naps unless I’m sick. My husband naps whenever he can! My weekend highlight was the whole weekend since we were in Wine Country!
Yep – I am definitely jealous of your wine trip! 😀
Good job on losing weight, do it now while you can, for when you get older it won’t come off too well. Have to try you horseradish sauce, it’s on my list. I like horseradish sauce with beef though, will have to try it with pork.
I made a whole turkey breast with dilled red potatoes and corn on the cob on my grill this weekend……that was my highlight of the weekend. See my blog http://www.cards4ubylouise.blogspot.com I talk about how it was done.
I love your blog by the way, get so many good ideas, check you out everyday.
Caprese Hamburger here.
Thanks for the link – I’ll have to check that out!
oh my gosh what a delicious looking weekend! YUMMMM! and that muffin teaser looks amazing! 🙂
I am happy to report that each breakfast muffin comes in at only 95 calories!! 😀 I’ll post the recipe tomorrow.
Major drool to the breakfast muffin! YUM! Glad you had such a nice weekend. Naps are amazing
I definitely would have tried the the horseradish burger, that is one of my favorite flavors. I need to get some Prosecco for our hot summer days! Have a great week and good job feeding your coworker’s family.
The horseradish one was my second choice! 😀
Nice weigh in!!
The highlight of my weekend was being out on my friend’s boat yesterday and trying to ski. It was so fun!
Congrats on the loss!
I would have gone for the bleu cheese burger. Yum!
I went on a couple of dates this weekend (with the same guy, haha), so those were fun!
And I celebrated my birthday & my friend’s birthday Saturday night by going out for sushi and homemade ice cream, and quite a few adult beverages!
Eek! So excited for you Errign – after your relationship with “B” you deserve happiness!
That’s so nice of you to take your friend all that food, it’s look so good too! Your burger from the restaurant looks great, too bad about the service though. I love naps, absolutely love them. Good job on the weight loss 🙂 And that breakfast looks yummy, look forward to the recipe.
Very sweet of you to do all that cooking for your coworker!
Nice going with the WL – a pound a week will add up by the end of summer!
I think that is so nice what you did for your colleague. I’m sure she appreciated it.
I hope your server didn’t get a great tip. As a former waitress I am very generous with tips except when the service is horrendous like that.
Good for you for taking a nap. My family calls my sleep before work at night a nap. So I think there are people out there who think I nap everyday when in reality it’s all the sleep I get in a day. So the highlight of my weekend was going to bed at 7:30 last night and sleeping until morning. I’m positive that’s more sleep than I got total since Thursday.
Oh congratulations on the weight loss this week. Always nice to see! Have a great Monday Biz!!
You are a saint for taking all that food to your friend! She must love you so much right now. I need a little speaker like that for the kids, the girls love to take our big ol’ docking station outside and make up dances. I need to get with 2012 and get a small one.
Sorry about the bad service. You should always nicely speak up to a manager. I waited tables for 7 years and as busy as it can be, that service is ridiculous.
We weren’t in a hurry, so it wasn’t that big of a deal – I’ve worked in restaurants on and off for about 15 years of my life – I don’t mind bad service if I see the server is “in the weeds” but when you don’t see them at all – it kinda sucks.
I love that you made meals for you friend! I try to make a few meals for my friends when they have babies, definitely makes life a bit easier!
Great job on the loss this week 🙂
Prosecco is such a nice summertime drink! 🙂 Great job on the weight loss!
Have a great week!
My highlight was surviving the two birthday parties and my company’s anniversary party without finding myself totally exhausted!
I think it’s so awesome that you cooked up meals for your friend. I know she’ll appreciate it. People brought food to our family when my mom passed away in December (I don’t think my step dad, sister, or brother had to cook for 2 weeks).
