I don’t know why I never thought to make a breakfast panini.  I scrambled 2/3 cup of egg whites with baby spinach, and then used two slices of deli ham and American cheese on Turano bread.  Luckily I weighed the bread – the package said 2 slices for 150 calories, or 2 ounces.  Um, turns out one slice is 2 ounces!

So we try every Friday in our office to grill out and eat lunch together.  One of our named partners is Greek, so I went with a Greek themed menu – marinated chicken breasts, Greek cucumber salad with jalapeno hummus (I added two tablespoons of jalapeno hummus and mixed well) and Greek orzo salad.

I didn’t realize I didn’t take any pictures of the chicken until I downloaded the pictures!  I grilled the chicken, then sliced it thin and had warmed pita bread and tzatziki sauce, diced tomatoes and red onions.

One of our attorneys has an aversion to dairy, so I served the feta on the side.  Another attorney has a nut allergy, so I left off the pine nuts.

We have a nice deck off of our office space – nice and quiet and peaceful!

It was a big hit!  I charge everyone $4 a plate, and because I am such a great shopper, I cleared $19 after my expenses.  So on my way home from work I got my eyebrows threaded at Wal-Mart with my earnings.  Winning!

So Tony did see the subliminal message I left on a post earlier this week!  I think it was around 9:00 that night I posted the picture that he said “I saw the message about Party Pizza Friday – like I have a choice?!”

I made the dough before work:  2 cups flour, 1 teaspoon salt, 1 package yeast and 1 cup tap water.  Mixed it together and put in a bowl on my stove with plastic wrap over the top.  Before grilling I added about 1/2 cup of flour to get it the right consistency.

While at Wal-Mart I picked up this sausage – it’s so good, it doesn’t taste low fat at all.  I grilled the sausage first, then put it on my top rack while my unglazed quarry tiles (.99 cents each at Menard’s) got smoking hot.  I think my grill was at about 500 degrees.

The left side is smoking hot – the right side is stone cold.  You want to grill our dough only about 2-3 minutes a side, then finish it on the cold side.  The residual heat will melt the cheese.  Note taken that my grill is probably way overdue for a deep clean! Open-mouthed smile

I brought the dough outside and rolled it out right next to the grill.  Then much like a pie crust, I rolled the dough on my roller to transfer it to the grill – careful – its hot!

Love the bubbled up dough!  Then I sliced the sausage on the same cutting board the dough was on – we had sausage, pepperoni and Tony had half mushroom.

This was delicious.  The dough was crispy with a bit of chew.  I literally could have this every night and never get sick of it.  Helen, of Mr. Helen is ever in my neighborhood, I’d be happy to make this for him!

It’s going to be a hot one – my boob sweat has already begun!  Yep, your welcome for that visual. Open-mouthed smile  Tony and I are headed out to lunch, a stop at Fresh Market and the grocery store.  Bing cherries are 1.99 a pound so I may have to make my grilled cherry salsa today!
