I don’t know why I never thought to make a breakfast panini. I scrambled 2/3 cup of egg whites with baby spinach, and then used two slices of deli ham and American cheese on Turano bread. Luckily I weighed the bread – the package said 2 slices for 150 calories, or 2 ounces. Um, turns out one slice is 2 ounces!
The only thing that would have made this better? Hot giariniera!
So we try every Friday in our office to grill out and eat lunch together. One of our named partners is Greek, so I went with a Greek themed menu – marinated chicken breasts, Greek cucumber salad with jalapeno hummus (I added two tablespoons of jalapeno hummus and mixed well) and Greek orzo salad.
I didn’t realize I didn’t take any pictures of the chicken until I downloaded the pictures! I grilled the chicken, then sliced it thin and had warmed pita bread and tzatziki sauce, diced tomatoes and red onions.
One of our attorneys has an aversion to dairy, so I served the feta on the side. Another attorney has a nut allergy, so I left off the pine nuts.
We have a nice deck off of our office space – nice and quiet and peaceful!
It was a big hit! I charge everyone $4 a plate, and because I am such a great shopper, I cleared $19 after my expenses. So on my way home from work I got my eyebrows threaded at Wal-Mart with my earnings. Winning!
So Tony did see the subliminal message I left on a post earlier this week! I think it was around 9:00 that night I posted the picture that he said “I saw the message about Party Pizza Friday – like I have a choice?!”
I made the dough before work: 2 cups flour, 1 teaspoon salt, 1 package yeast and 1 cup tap water. Mixed it together and put in a bowl on my stove with plastic wrap over the top. Before grilling I added about 1/2 cup of flour to get it the right consistency.
While at Wal-Mart I picked up this sausage – it’s so good, it doesn’t taste low fat at all. I grilled the sausage first, then put it on my top rack while my unglazed quarry tiles (.99 cents each at Menard’s) got smoking hot. I think my grill was at about 500 degrees.
The left side is smoking hot – the right side is stone cold. You want to grill our dough only about 2-3 minutes a side, then finish it on the cold side. The residual heat will melt the cheese. Note taken that my grill is probably way overdue for a deep clean!
I brought the dough outside and rolled it out right next to the grill. Then much like a pie crust, I rolled the dough on my roller to transfer it to the grill – careful – its hot!
Love the bubbled up dough! Then I sliced the sausage on the same cutting board the dough was on – we had sausage, pepperoni and Tony had half mushroom.
This was delicious. The dough was crispy with a bit of chew. I literally could have this every night and never get sick of it. Helen, of Mr. Helen is ever in my neighborhood, I’d be happy to make this for him!
It’s going to be a hot one – my boob sweat has already begun! Yep, your welcome for that visual. Tony and I are headed out to lunch, a stop at Fresh Market and the grocery store. Bing cherries are 1.99 a pound so I may have to make my grilled cherry salsa today!
Probably won’t blog until Monday – so everyone have a great weekend! What are you up to?
i’m with you on the grilled pizza. i could eat it daily!
That pizza looks amazing! Hope you had a good weekend!
That pizza looks amazing! What a great trick for melting the cheese!
I love your Greek feast at work. I wish I worked in your office. 🙂
YUMMM. I want to go make those greek salads N O W!!!
I SOOO envy the camaraderie and setting in your office. I will be sending my resume shortly! 🙂 Laughing at boob sweat. Well, not the sweat itself, but the way your wrote about it. May you and your boobs be less sweaty today, and that you have a great day.
Very cool about charging folks for lunch, where can you get an awesome lunch for $4?! I have no idea what getting eyebrows threaded means, so I get to google that now 🙂 The pizza looks delicious.
Indian women use thread to shape your eyebrows – it hurst like a bitch, but it only takes about 60 seconds – I can’t wax my eyebrows because my skin is so sensative my forehead swells up for days! And its only $7!
I bet your co-workers just love you! I think that’s so cool that you cook for them, and even cooler you made a little profit! 🙂
I’m drooling over that breakfast panini. I have never thought of that either. And grilled pizza is one of my favorites!
You had me at boob sweat! LOL
I’d love to have grilled pizza every night!!!
Put bunk beds in Hannah’s old room, I’m sure lots of people will want to stay over for a meal! Grilled pizza sounds good right now, I’ve gotta make it!
Yum, grilled pizza sounds amazing! Love it – definitely making me hungry. 🙂
OMG Biz, can I move into Hannah’s old room? Everything you cook looks so freaking delicious! Coming to your blog and looking at the pictures is like a daily Christmas present. The pizza looks so tasty and I can imagine what it would be like warm. Yum!
You are too sweet – thanks Tammy! 😀
I wish I could come to your grilling and pizza parties! Everything looks so so good. especially that orzo salad. Boob sweat haha.
I’m jealous of the price of your cherries, ours are $2.99/lb at the commissary right now, can’t wait for the them to go on sale.
It’s going to be a hot weekend here, luckily no boob sweat yet though 🙂 Have a great weekend, Biz!
I laughed too Biz! I don’t have boob sweat too badly (although it’s not zero)–they aren’t big enough, ha! The pizza looks amazing we have never grilled pizza. One of my goals is to learn to grill. My husband is Mr BBQ so I’ve been lazy about it but I really want to! Hope today is another great day!
ugh boob sweat. The worst! hahaha I laughed when I read that.
Have a great weekend!
Your office mates are a lucky bunch! Lunch looked incredible Biz.
Are you kidding me $1.99/pound?! They are coming down a bit in price here but still $4.99-$6.99/pound.
Enjoy the rest of your weekend. I’m working all weekend and running a race tomorrow at one of my favorite local lakes. The weather is looking good for tomorrow so far.
