Since I haven’t done a normal grocery shop this week, I refuse to go to the store because I know we have plenty of food to eat. A week ago though I bought a container of plain Chobani – I was going to make chicken tikka masala, but never got around to it.
So the breakfast parfait was back! Sauteed apples and bananas in the middle, plain Greek yogurt and 1/3 cup granola. I actually liked the tartness of the plain yogurt since the fruit and granola layers were so sweet.
One of the other secretaries had a half day, and the other secretary had lunch plans so I never made it out for my walk. Plus it was so cold – weather.com said it was 42 degrees but with the wind felt like 34 and I didn’t have the right clothes for that temperature.
We have a Chinese restaurant across the street from our office and my boss and I ordered in. I called our order in – I ordered beef and broccoli, asked for it spicy, it was one of their “lunch deals” for $7.50 that included an egg roll, fried rice and a pop. I swear it was only like 7 minutes later that our doorbell rang – fastest delivery ever.
I brought my container into our work kitchen, got out my measuring cup and measured out 1/2 cup of the fried rice, and 1 cup of the beef and broccoli mixture. The egg roll? Nasty and greasy so that went into the garbage. I literally have enough left over to have it again for lunch today.
This was really good – the beef was tender, they made it spicy and the broccoli was tender crisp.
On the way home I was thinking of things that I had in the house to make for dinner and texted Tony with these options:
salisbury steak with mashed potatoes, cheeseburgers with fries, cheddar brats with fries
Salisbury steak won! You all have to try this recipe – I rewrote it for two people and reworked the calories (if you are on WW it would be 13 points).
Salisbury Steak for Two
- 518 calories, 20 fat, 43 carbs, 3.4 fiber and 39 protein
Ingredients:
I put the baby spinach on the bottom of my plate. Plated 3/4 cup of mashed potatoes on top of that. Then put my crusty cheese bread on top and placed my Salisbury steak on top of that. I poured half the gravy over the top, and finished it off with some more shaved Parm. Tony got all the mushrooms – wish I liked them!

I love the crust that the Salisbury steak gets. This is seriously a company worthy dinner. But the best part? With leftover mashed potatoes, this dish is seriously ready in 15 minutes. Winning!
The only exercise I got yesterday was my 30 minutes of stretch. I kinda lost my mojo but I plan to get at least an hour of exercise in today. It’s another chilly day but I have packed warmer clothes to walk today at lunch.
Day 10 of 30 Operation Bad Ass
- 1382 calories, 42 fat, 169 carbs, 18 fiber and 85 protein
- 49% of calories from fat, 28% from fat and 23% protein
- 30 minutes stretch
I didn’t talk to my brother at all yesterday, but I know that he starts his chemo therapy today. My Mom is flying there today – the benefits of being retired she just booked an open ended ticket and doesn’t even know how long she’ll stay, but I know she’ll be a great support for not only my brother but for my SIL and their kids.
I have a confession though – the urge to overeat is still alive and well, although I am glad I’ve not given in. But let’s just say I did look up the calories for a small deep dish pepperoni and sausage pizza, but made the better lunch choice after I saw that 1 slice of a small deep dish (let’s face it, I would have eaten the whole thing!) was 390 calories and 23 grams of fat – so it would have been 1560 calories and 92 grams of fat.
I’ll claim that as a non-scale victory.
Off to do my stretch before work. Thanks again for all your continued good thoughts and prayers for my brother.

I love beef and broccoli, that is one of the first things I tried when our little town in PA first got a Chinese restaurant.

The beef and broccoli looks delicious. We don’t order Chinese food often, maybe 2 or 3 times a year. It has a lot of sodium in it and I don’t like it enough to eat it more often.

Your yogurt parfait looks AWESOME! I am addicted to them plain yogurt with fruit then microwaved gronola. Love making it. Just take a serving of old fashioned oats, toss with a little Sugar Free Cinnamon Vanilla Torino Syrup (the kind coffee house use) and/or a little truvia mixed with water. Spread on a plate and microwave for a minute or two, just watch it it will burn. So tasty and low in calories.

That’s great your Mom is coming to help out. Your salisbury steak looks and sounds wonderful, I want to “pin” this but, have no idea how. Veronica just got me on pinterest…lol! Oh, well I bookmarked it 🙂 I cook with mushrooms but, I don’t eat them either. A guy used to bring me morels all the time, (I had said I don’t like mushrooms) when he was gone I would feed them to my ducks…ha ha ha! 😉

I love mushrooms but haven’t had salisbury steak in such a long time. This looks delicious. The gravy especially. I need to make some gluten-free gravy and make that. I bet Andy would like it too.

I’ve done that too – look up calories on a comfort/splurge food, and decide against eating it…and not only do I feel like I saved me from myself, but by also NOT eating those calories, I should be skinnier, instantly. Like if I didn’t follow through with my intention, then there should be fantastic results. LOL
Hang in there…as with Tony, you know that comfort eating won’t help the treatment. I know the first few days of diagnosis are unbelievable stressful, but just hang on…it (and Charlie) will get better!

Ya know, I can’t say that I’ve ever had Salisbury steak. But I know my husband would be all over it. And in your photos- it looks fantastic. It’s also hard for me to pass up a meal that would take 15 minutes to make.. I spend WAY too freaking long making dinner each night.

Did you see Biggest Loser yet this week? One of the contestants got under huge stress and gave in to the binge monster. Let’s just say the outcome was what she expected but not good. Eating extra or drinking wine won’t make Charlie better, it just won’t. You take good care of yourself – it’s important!

Beef and broccoli and chicken chow mein are the two take out standards in our house [white rice for both] – but I can’t remember the last time we ordered it. I LOVE IT. So I make it for us. Honestly not quite as good [don’t have your mad skillz] but at least I can eat it and won’t eat 3,000 mg of sodium in a serving. hee
Salisbury Steak is also a big hit here – we call it Mystery Meat because it always looks akin to that amazing “WTH is IT?” meat patty and gravy we were served in public school. Ours tastes better – and yours is just wowie! I love the stackable meal. I noticed this being done a few years ago in our local restaurants and I was like, “Hey, we have been doing that for years!” It just makes everything meld, although I would never had thought of the spinach for this meal. We usually use peas or corn. Spinach is definitely on my radar now tho’.
I didn’t have to go shopping this week either [yah! save money] but I did have to run to the store last night for bottled water and fresh fruit for Wallene’s lunch, plus I picked up a bottle of conditioner, a small can of coffee and a lemon cake mix with a can of icing [ALL of this stuff was on sale, including the big bag of clementines] and it still cost me $26!!! I was miffed. What is going on with prices? The coffee was the best deal at $4, I suppose. Sigh. Ahhh, not really worried about it. I have plenty of stuff in the house now and the farmer’s market opens in two weeks. WootWoot!
I managed my walk yesterday, under great protest from the dog, but it was COLD. Not 34 degrees with windchill cold – but around 40 with a wind that will whip your butt if you aren’t used to it. [Raising hand!] Pooldad was shocked to see me coming up the hill when he pulled in the drive way from work. Skippy don’t do the cold weather. heehee I wouldn’t worry about a day here or a day there, especially with the weather as it is. It will warm up soon – and you didn’t get the pizza, so that is pat on the back worthy – you should be very proud of yourself.
I know you are worried about your brother and you may be surprised just how many calories you burn just from the “keeping busy” mode we all seem to go into – I think you are doing fantastic. And try not to worry. He is in our prayers and your Mom will be there too. Give him our best, please.

I can only assume that Chinese take out would be a sodium bomb for you Skip! Well, like any good food blogger, I give my husband his plate first (with mushrooms!) and then take my plate of food outside for pics with better light. He’s used to being 10 minutes ahead of me eating dinner!

Great job choosing a better lunch than the pizza. It would have been tasty, but so not worth it! I’m one of those weirdos who doesn’t really like meat from Chinese places, so I order Beef and Broccoli—minus the beef. haha It’s super yummy though.

Biz I will keep Charlie in my prayers. I read his post about his daughter going to college- Oh my word, you didn’t warm me that I would have tears in my eyes. I have three years left! I posted his post on my BRK FB page to share with my readers, I loved it so much! Looks like you are eating well! We went to Ma’s at SML for Easter and we ate Paleo until her Easter Pie- yum! But now back to healthy. So good that your mom can fly out and be with your brother and his family. Go moms! They are the best!
