I don’t even know where Tony heard of this recipe, but this one is a winner.  And it was nice to just sit back and have breakfast made for me. šŸ˜€  And these are perfect if you are following a gluten free diet.

Popcorn Flour Pancakes (haven’t figured out the points yet!)

  • 4 tablespoons butter
  • 2 teaspoons baking powder
  • 3 cups popcorn flour
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1.5 cups milk
  • 3 eggs
  • 1/4 tsp. cinnamon

Melt butter in a bowl and let cool slightly,  Mix the dry ingredients in a bowl, in a nother bowl, add remaining wet ingredients to butter.  Add wet ingredients to dry ingredients and mix well.  Using a 1/3 cup measure, pour batter into a non-stick pan and cook about 3-4 minutes per side.

So I am sure by now you are wondering, how the hell do you get popcorn flour?  We had popcorn the other night and I made way more than we would eat.  Tony at first thought to just put the popcorn in the food processor, but it didn’t make a fine enough flour – so Tony went to Plan B. and used our coffee grinder to get the right consistency.

While these didn’t fluff up as high as my normal pancakes, these were delicious – you could really taste the popcorn in the pancakes!

So how is the Holiday Challenge going?  I started the week out with a bang, working out at least 90 minutes each day until Thursday when Tony and I had to run errands at lunch and when I took Friday off, I didn’t work out.  I had plenty of opportunity to do something yesterday, but didn’t, so I need to get that exercise mojo back – stat!

Did you have a tough week?  Did you run or do any fun races you want to share?  Let’s all make it a great week – okay? šŸ˜€
