Hallalujah – after three months, we finally have health insurance!! I am so relieved. I don’t even want to think how much $$ we spent on prescriptions these last months, although Tony got really creative with Canadian pharmacies and Sam’s Club Pharmacy. Thanks Tony! š
Did you know you don’t have to have a Sam’s Club membership to use their pharmacy? They have $4 a month prescriptions on generic drugs – a while back Tony checked to see if his prescriptions were on the $4 list, they weren’t. Well, fast forward a year or two and they are now on the list – its cheaper than even using insurance – so if you are on any maintenance drugs, you should check out Sam’s Club.
We had our meeting with the insurance guy first thing – I brought in muffins and ate half a lemon poppy seed muffin – no picture, but it was delicious and I am guessing 1/2 was 5 points. Picture courtesy of google images š
Since I was without power I couldn’t do my normal grill at my office, so we chipped in and got pizza and salad – it was pretty good, although I prefer a thin crispy crust. This one was spinach and feta – love that combo and want to recreate it the next time I grill pizza.
Tony went grocery shopping to get the basics after we threw out all our food – milk, eggs, etc. I noticed he added some things to the shopping list!
He picked up a whole chicken to grill – other than fried chicken, I think this is one of Tony’s favorite chicken dishes.
We learned long ago to butterfly the chicken by cutting out the back of the chicken. It cooks more evenly and faster – this chicken cooked in about 45 minutes over a hot grill.
All I did was mix a dry rub together (I actually made a whole jelly jar of rub mix – this last batch has lasted me a couple months!)
- 1 tablespoon dry mustard
- 1 tablespoon paprika
- 1 tablespoon dark brown sugar
- 1.5 teaspoons garlic powder
- 1.5 teaspoons celery salt
- 1 teaspoon cayenne pepper
Just mix and store in a jelly jar – I just leave it in my spice cabinet with a lid on it. š
This picture is for Veronica. (um, you need to click on her name to see her recipe for a Margarita cake that looks amazing!) She and I were emailing back and forth about our dogs – we were both surprised that our dogs act very similar with stuffed animals. Ed treats a new stuffed animal like a best friend – sometimes for hours, sometimes for weeks, and then all of a sudden we’ll wake up and he’ll have pulled off the eyes and the stuffing is all over the place.
He currently has two best friends that he’s had for months and they are still in tact. He keeps all of his carcasses in and around his cage, and will go in there and just start pulling them out one by one. I usually buy the stuffed animals at garage sales – and if they make noise, all the better!
I overslept and didn’t make it to my yoga class. I went to the 10:00 meeting, and was thrilled to see this:
Can you believe I got another -.6! I think its like the 8th time that’s happened! Although, with the crazy week we had, I am happy the number is still going down.
I am going back to basics this week – going to look back at the Healthy Guidelines for this weeks menus. Although I am going to make pretzel bagels – doesn’t a pretzel bagel egg sammie sound delicious?!
I’ll be seeing my Mom later today and Hannah, my SIL, Mom and I are going to Bar Louie in Oak Park. I like that they have small plates – I plan on tracking every point this weekend too! š
Enjoy your Saturday – come back tomorrow to see how our 101 Days of Summer participants are doing so far. š
Ed is adorable!
No power and a weight loss?! Wow! So impressive!! That’s fabulous!
I loved reading about Ed and the stuffed animals – that’s too cute. That’s what I love about dogs – they all have such cute, quirky personalities š
P.S. The chicken looks awesome… love the idea of butterflying the whole chicken for an even grill job!
Congrats on the weight loss and health insurance! Big weight off your shoulders (no pun intended) for sure!
The grilled chicken looks insane!! š
Yay for insurance! I was considered uninsurable so for several years was in a “high risk pool” run by my state. I was thrilled this past year to finally qualify for other coverage and had my surgery right after so they might be a tad suspicious but I really didn’t know I needed it when I applied. Interesting how important insurance becomes when we can’t get it.
Bwahahahaha! Tony just cracks me up!
Great job this week, Biz!
Lemon poppy seed muffins are the best! Congrats on your loss š
This whole post made me smile, and lol, and drool š
I’m totally keeping this post for that rub recipe. Roasted chicken has been a favorite in our house lately!!
That shopping list cracked me up. Love it.
Love all the carcasses – Paco does the same thing with stuffed animals, but his only last a few minutes before he tears the stuffing out of them.
Good for you, hitting a loss after your crazy eating week! š
As long as the number keeps going down, that’s good. Even if it goes down slowly. You are doing great and that chicken looks sooooo good.
Pretzel bagels? YUM.
Spinach and Feta pizza is my absolute favorite! š
I am so glad to hear you have health insurance again! I know that’s a huge burden off your mind. And a great weigh-m to boot – what a great end to your powerless week!
Great job on the loss! Pets are hilarious. Pixie loves rolled up paper balls more than regular cat toys. She likes to put them in my shoes. She also stuffs them places. When we moved our couch last fall when we got new windows, there were probably 30 little paper balls under there LOL!
Thank heavens you have insurance… scary times i am sure.
Something odd about a spread eagle chicken, but always tastes good. Great series of photos. You are really doing terrific food photography
And .6 is terrific… better when you multiply by 8! Keep it up!.
Your dogs name is Ed? That is so awesome! I love people names for dogs….hilarious! Hooray for the loss! I think -.6 must be your magic number. Poppy seed muffins are awesome. I don’t know what makes them sooooo good, but I enjoy them more than most other muffins. Hope you have a fun night
Shopping list= hilarious :). Congrats on your -0.6!
That pic of Ed make me LOL! Toooo too funny. We have carcasses scattered in our yard, which is where Jessie likes to play with hers. You can def tell it’s a dog yard with all the holes and shredded toys. LOL! I’m so glad you have insurance again! I’m sure that is a great relief!
