And for the fourth week in a row, I lost another .6 – for a total loss of 17.4 since March 1. š
I was only bummed that my regular leader wasn’t there today – oh well!
Yesterday was bagel Friday – I realized I missed my weekly bagel on Wednesday!
It was week two of grilling with Biz at my office yesterday. On the menu?
- marinated skirt steak fajitas
- homemade Spanish rice
- homemade black bean refried beans
- salsa š
And, because I am nice, I did grill up some onions – thank God I don’t have the lingering smell of onions at home š
The meat is already marinated – my store had it on sale for only $3.99 a pound – I charged my co-workers $4 a plate. š The skirt steak is really thin so it cooked up really fast.
My Spanish rice recipe is really easy – not sure how authentic it is though!
Easy Spanish Rice
- makes 8 servings of 3/4 cup at 4 PointsPlus
Ingredients:
- 1.5 cups uncooked brown rice
- 3 cups water
- 8 ounces salsa de tomato (or regular tomato sauce)
- 1 teaspoon ground cumin
- 1 tablespoon Taco seasoning
- zest of lime
- juice of one lime
- 1 cup canned corn
- 1/4 cup chopped cilantro
- salt and pepper
Cook the brown rice according to package directions. I just used my rice maker. Once it was cooked, I threw it in a bowl and mixed in the rest of the ingredients. I loved the zest of the lime.

I think it was a success – everyone had seconds! I think next week I am going to try to grill pizza – I am going to buy some unglazed ceramic tiles and try it out this weekend.

Yay! Yay! Yay! Congrats, Biz!!! I have been away from WW for a few weeks (coupons from work ran out) and we’re going out of town for quite awhile, so I didn’t want to start a new “term” (have to attend 11 of 13 weeks to get reimbursed, and well, I’m cheap!). I’m already anxious to get back at it mid-July, though! Now, to maintain!!!

I think it’s only appropriate that you finally hit 10% with a .6 loss – that is your magic number, and obviously enough .6’s add up after a while – CONGRATULATIONS!!!

As long as your grill is preheated & then sprayed with a little cooking spray, you just put the pizza dough right on the the grates – works great!

Congrats Biz!!! Even though I’m no longer with WW, I still have my 10% charm on my keychain. It’s a great reminder of how far I’ve come!
CONGRATSSSSSSSSSSSSS!!!! Yayyy š And what a fantastic lunch. That is a steal for your coworkers! You can actually do the pizza right on the grill. Just spray both sides of the dough with non stick spray. Cook on one side for a few minutes, flip, top and cook just until cheese is melted. Have a great weekend!
