I forgot to tell my MIL before she left how much I enjoyed the grapefruit she brought me from Florida – she also brought me oranges too. š
Work is so crazy busy, but I love it like that. Although it was so busy I wasn’t able to check out the gym next door – but I did spend a total of about 30 minutes of my day moving boxes, so I am going to give myself full credit for working out a full 60 minutes.
My freezer came to my rescue for lunch today – it was leftover Tuscan Chicken soup with pesto – and some carrots and celery on the side that was dipped in leftover horseradish dip – lunch was only 6 points. I actually submitted this recipe to Dana – she’s this weeks BSI host and she chose broth. Remember, you don’t have to submit a new recipe – check back in your archieves!
We have so much leftover food, I am going to try to use it all up before grocery shopping. I sliced up the leftover beef roast from Easter really thin. I got my cast iron skillet super hot, and just “fried” the beef just until warmed through. I decided to make a blue cheese sauce on the side – I figured out the points after I made it – 1/8 cup of sauce is only 1 point!
Blue Cheese Sauce (would be good over cooked broccoli too!)
- 1 tablespoon butter
- 1 tablespoon flour
- 1 cup skim milk
- 2 ounces crumbled blue cheese
Melt butter. Add flour and cook for 1 minute. Slowly add milk and keep stirring until all the milk is incorporated and the sauce is thick. Remove from heat and stir in blue cheese crumbles.
My dinner: 4 ounces beef, 1/8 cup blue cheese sauce, 4 ounces cooked white rice and leftover greenbeans my MIL made – dinner comes in at 11 points.
Stats for Monday:
- 32 points (okay, I had some wine!)
- 30 minutes of 30 day shred, level 1
- 30 minutes of moving boxes at work
- average blood sugar 140 (better!)
Biggest Loser is on tonight – who is still watching and who do you want to win?
Have a great Tuesday š It’s still rainy and cloudy in Chicago – maybe by May we’ll get some sun?
I am off to the gym to swim š
I’m still watching TBL. I think I’d like to see one of the sisters on the purple team win.
Oh, Biz, you had me until “blue cheese sauce.” š Blue cheese to me is like onions to you. your egg & ham breakkie looked great, though-I had my leftover ham in a cheddar-tomato omelette.
Blue cheese kicks butt!! I’d love that sauce on hot wings, don’t you agree? š
Yep – it would be perfect with hot wings š
Broiling grapefruit?!?! Genius! I love grapefruit…I’m going to try this!
Your breakfast looks delicious! I love goat cheese and eggs together š
That blue cheese sauce sounds incredible.
I love that grapefruit trick! Broling it seems like such a great idea!
Very creative with the leftovers and that cheese sauce. How cute that your MIL marked the grapefruit for you!
I was visiting relatives in England years ago and they served broiled grapefruit as an appetizer before we had a ham dinner. It was delicious! Thanks for the reminder.
I just “found” a wedge of bleu cheese in my fridge that I forgot I bought. This sauce sounds SO yummy to start digging into it!!
I’m still watching! I’m rooting for one of the sisters to win — they both look PHENOMENAL!
The broiled grapefruit with honey sounds INCREDIBLE! I adore grapefruit š
One point blue cheese sauce!? Be still my heart!!! Have a great swim Biz, glad life is settling down a bit for you!!!
mmmmm…I am a big blue cheese fan…sadly, no one else in this house is…that roast beef looks so good with the sauce!
I know what you mean about the rain….I am ready to build an ark……so sad. lol
I’ve always heard good things about broiled grapefruit though I’ve never tried it myself and 1-point cheese sauce, that is just awesome.
definitely making the soup!!
The thin beef with the bleu cheese sauce looks so good! I’d put it in a submarine roll and make it even more decadent. š
Hope you had a good swim!
Oh that blue cheese sauce looks so yummy!
Blue cheese sauce sounds awesome. I bet it would be good on a baked potato!
I’m still watching the BL – right now I’m pulling for the sisters!
Me too – go Hannah and Olivia! š
i love broiled grapefruit – it’s such a fun and different way to serve it.
The blue cheese sauce sounds great!
I didn’t do any “real” workouts while I was gone and only walked a lot, and my stamina has surely suffered A LOT…
Hope you had a great swim!
Food looks delicious. I like your breakfast idea of microwaving the egg. That’s something I could prepare the night before and stick it in the microwave in the morning. I’m usually in a rush in the morning and love high protein, super quick breakfast ideas. I am watching Biggest Loser, but I watch it later on Hulu. I usually don’t watch the whole thing, but I really wanted Courtney to win and was sad when she left. I’m not sure who I want to win now.
I have never heard of broiled grapefruit. Learn something new everyday.
I am a fiend for grapefruit. Glad my family isn’t to excited about it because it is the one thing Momma doesn’t like to share. š
The beef looks delicious! That sauce is awesome.
How’s Tony doing? Please say hi for me!
Tony’s doing great! Every day is better and better, his appetite is getting better too – he still won’t try my Chicken Tikka Masala though – what gives?! š
The Angels sang when I opened up my e-mail & saw “1 Point Blue Cheese Sauce!”
Rainy here too, yuck.
Biggest loser, I was rooting for Courtney but now Irene.
Mmmm, bleu cheese sauce sounds amazing!
I loveeeeee grapefruit.
Your labeled grapefruits remind me of the time we stayed at my grandparents’ house in Florida. My grandfather has a few citrus trees, and my stepmother loves grapefruit. One morning she cut one up for breakfast and ate the whole thing, even though it tasted sour to her. When my grandfather woke up and looked at the fruit basked he wondered outloud where the last lemon went. My stepmom realized that what she ate was actually a big lemon, and she choked down the whole thing because she didn’t want to offend him! We still tease her for that LOL
that 30 day shred kicks my butt. I’ve only ever tried level 1.
mmm broiled grapefruit- so good! I need to pick up a few grapefruit. Glad to hear work is going well. I’m so much happier when I’m busy vs. bored!! I bet you’re the same way. And what a fancy looking dinner. Tony is a lucky man to be married to you š How is he feeling btw? Hopefully still getting better and better each day
I love the idea of a blue cheese sauce! I’ve been craving blue cheese and burgers – bet your sauce would be a great condiment for a burger!
Have a great swim, Biz!
That is a great idea Marisa to put it over a burger! š
